DIED & WENT TO PIMENTO CHEESE HEAVEN (PIMIENTO)
A true Southern delicacy! I didn't know I even liked Pimento Cheese! This stuff is addictive... so addictive I am having a lock installed on my refrigerator (not to keep me out - but in case the neighbors find out!). I have picked at Pimento Cheese spreads at parties and potlucks but never have the desire to make my own... and then I was asked if I would make a batch for a friend...This is a cross between her mom's recipe and my creativity. Great on Celery Sticks, Crackers, Bread... even straight out of the bowl! Even picky four year olds liked it!

Steps:
- Using a hand held mixer, beat cream cheese until soft.
- Add the remaining ingredients and beat until creamy and combined.
- Cover and refrigerate for about an hour.

PIMENTO CHEESE RECIPE
Steps:
- Gently stir together the cheddar cheeses, pimentos, mayonnaise, Worcestershire sauce, garlic, cayenne, salt and pepper in a medium-sized bowl.
- Fold the mixture gently to combine until uniform.
- Taste and adjust for salt and pepper. Add in a dash or two of hot sauce to your preference.
- Refrigerate in a sealed container at least 1 hour before serving to let the flavors develop.

I am 19 weeks pregnant and all I want to eat are sour foods (pickles, tomatoes with balsamic vinegar, grapefruit, Zaxby's sauce, etc.) Well, last night I made a sandwich on toasted whole grain bread with this pimento cheese, sliced tomato, and dill pickles, and it was the BEST THING I've ever put into my mouth! Like my friend Brandi said, "Like manna from heaven"! This recipe is great for those of you who don't like too much mayonnaise in your pimento cheese. Makes 26 4-oz servings. Each serving: 185 cals.

- Combine the cream cheese, mayonnaise, Dijon, adobo and black pepper in the bowl of an electric mixer and mix until totally combined. Add the Cheddar and Monterey Jack and mix gently until combined. Using a rubber spatula, scrape down the sides of the bowl to ensure all the ingredients are mixed together. Stir in the pimentos and dill, then season with salt.
- Refrigerate the pimento cheese for at least 2 hours before serving with crackers and olives.
