6 red potatoes, sliced
6 Yukon Gold potatoes, sliced
4 bay leaves
3 ears corn, sliced into small discs
2 large onions, sliced
2 sticks (1 cup) butter
One 14-ounce package kielbasa sausage
One 12-ounce package andouille sausage
2 cups chicken stock
1/4 cup seafood seasoning, such as Old Bay
1 tablespoon red pepper flakes
1 tablespoon salt
1 pound live crawfish or crawfish tails, optional
1 pound shrimp
1 stick (8 tablespoons) butter
2 tablespoons chopped fresh parsley
2 tablespoons seafood seasoning, such as Old Bay
2 teaspoons salt
1/2 teaspoon cayenne pepper

Steps:

  • For the boil: In a large pot, combine the red potatoes, Yukon Gold potatoes, bay leaves, corn, onions, butter, kielbasa, andouille, chicken stock, seafood seasoning, pepper flakes, salt and 6 cups water. Bring to a boil, then reduce the heat and simmer for 20 minutes. Add the crawfish if using and simmer for another 5 minutes. Then add the shrimp; simmer 5 minutes more.
  • For the sauce: Combine the butter, parsley, seafood seasoning, salt and cayenne in a small saucepan over medium heat. Heat until the butter has melted and begun to simmer.
  • Serve the low-country boil with the butter sauce for dipping.

When Kardea Brown was growing up on Wadmalaw Island outside Charleston, SC, she'd often gather with family beneath the Spanish moss-covered tree in her great-grandfather's yard, and they would spill endless buckets of boiled crab, shrimp, sausage, corn and potatoes onto a newspaper-lined table. Like crawfish boils in Louisiana and clambakes in New England, Low Country boils are a regional summer staple - they're super fun. These days Kardea carries on the tradition with her girlfriends, hosting a boil right on the beach whenever they visit. It's the best kind of communal eating, she says. "Instead of breaking bread, we're breaking crab."

3 tablespoons seafood seasoning (such as Old Bay), plus more for sprinkling
3 pounds red-skinned new potatoes, halved if large
2 16-ounce packages kielbasa, cut into 1-inch pieces
8 ears of corn, shucked and cut into halves or thirds
4 pounds frozen crab legs
4 pounds jumbo shrimp (shells on)
2 sticks unsalted butter
5 cloves garlic, minced
Kosher salt and freshly ground pepper

Steps:

  • Heat an extra-large pot of water over medium-high heat (you can do this indoors or outside with a propane burner). Add the seafood seasoning and bring to a boil. Add the potatoes and sausage and cook until the potatoes are fork-tender, about 10 minutes. Add the corn and cook until tender, about 5 more minutes. Add the crab and cook another 5 minutes. Add the shrimp and cook until they turn pink, another 3 or 4 minutes.
  • Meanwhile, melt the butter in a small saucepan; remove from the heat and add the garlic and sprinkle with seafood seasoning. Drain the seafood mixture and transfer to a newspaper-lined table or a large platter. Season with salt and pepper. Serve with the garlic butter.

3 pounds new potatoes
Two 16-ounce packages cooked kielbasa sausage, cut into 1-inch pieces
8 ears fresh corn, shucked and cut into halves or thirds
4 pounds frozen crab legs
4 pounds fresh shrimp, shells on

Steps:

  • Heat a large pot of water over medium-high heat indoors or outside. Add the seafood seasoning to taste and bring to a boil. Add the potatoes and sausage and cook until the potatoes are fork-tender, about 10 minutes. Add the corn and cook until cooked, about 5 more minutes. Add the crab and cook another 5 minutes. Add the shrimp and cook until they turn pink, another 3 or 4 minutes.

A light, crisp batter suitable for frying squash, zucchini, chicken, pork, tilapia, or nearly any other food that might be fried. The flavors are intentionally kept light to enhance rather than cover the natural goodness of the foods being coated, but if you want a more intense flavor you can certainly increase the amounts. Enough to batter 4-6 squash or 1-2 lbs of chicken tenders.

1 cup self-rising flour
1 pinch garlic powder
1/4 teaspoon italian seasoning
1 pinch chili powder (optional)

Steps:

  • Mix dry ingredients together in a deep bowl.
  • Dump in milk all at once and beat with a whisk until smooth.
  • Coat pieces of food to be fried in batter and deep-fat fry as usual.
  • Any leftover batter can be drizzled into the hot fry oil to make batter crispies.
  • Double if necessary but I'd recommend making extra batches after using the first rather than tripling because the fizz from the self-rising flour will be deflate after the batter sits for a while.
  • If you don't have self-rising flour you can use all-purpose flour with a tsp of baking powder and a good pinch of salt per cup.

1/4 cup bleu cheese
2 tablespoons butter, softened
2 tablespoons chives, chopped, reserve 1 tablespoon for garnish
1 tablespoon lemon juice
2 ounces prosciutto, chopped
1/4 cup walnuts, lightly toasted, finely chopped
15 miniature phyllo cups
2 tablespoons walnuts, toasted and chopped, for garnish

Steps:

  • In a medium bowl, mix cream cheese, bleu cheese, butter, 1 Tablespoon chives and lemon juice until blended. Add prosciutto and walnuts and mix lightly.
  • Using a pastry bag, pipe a rounded tablespoon of mix into each phyllo shell. Garnish with walnuts and reserved chives. Served immediately.
