A tasty family favorite cooked in the Instant Pot®, combining beef chuck, red potatoes, carrots, and herbs.

1 teaspoon salt
1 teaspoon dried marjoram
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground black pepper
½ teaspoon paprika
1 tablespoon vegetable oil
1 (3 pound) beef chuck roast, or more to taste
1 pound baby red potatoes
4 large carrots, chopped into large chunks
1 large yellow onion, sliced
4 cups beef broth
2 tablespoons Worcestershire sauce

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.
  • Combine salt, marjoram, rosemary, garlic powder, onion powder, black pepper, and paprika in a small bowl. Rub mixture all over roast to coat all sides.
  • Drizzle oil into the preheated pot. Wait 30 seconds, then place roast into the pot; do not move the meat, allowing it to sear for 3 or 4 minutes. Turn the roast and sear again, 3 to 4 minutes. Repeat until all sides are browned, about 15 minutes total.
  • Add potatoes, carrots, and onion to the pot. Pour in broth and Worcestershire sauce. Close and lock the lid; set vent to sealing. Select high pressure according to manufacturer's instructions; set timer for 60 minutes for a 3-pound roast or 80 minutes for a 5-pound roast. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Transfer roast, potatoes, carrots, and onions to a platter for serving.

A Drummond family favorite, this pot roast cooks in half the time and pairs well with a side of creamy mashed potatoes.

1 whole beef chuck roast, 3 to 4 pounds
Kosher salt
Black pepper
2 tbsp. olive oil
2 whole large yellow onions, peeled and quartered
6 whole carrots, washed, scrubbed, and cut into large pieces
1 c. red wine
2 c. beef stock
3 sprigs fresh rosemary
3 sprigs fresh thyme

Steps:

  • Set the Instant to "Saute" and allow to warm.
  • Season roast generously with salt and pepper. When Instant Pot says "Hot," add in olive oil and sear roast until browned on all sides. Remove to a clean plate.
  • Add in onions and carrots and cook for an additional 3-4 minutes, stirring occasionally. Deglaze with red wine, scraping the bottom of the pot to get all of the delicious bits. Add in the beef stock, rosemary, thyme and the beef.
  • Lock the lid into place, place vent to sealing, push "Manual," and set time to 1 hour 20 minutes. The Instant Pot will release some steam as it comes up to pressure, then it will seal automatically.
  • When the cooking time is done, allow the Instant Pot to naturally vent for at least 10 minutes, 20 is better. Using a wooden spoon, carefully push the valve open to release the rest of the pressure. Remove lid.
  • Skim a much fat off the top of the liquid as you can before disturbing the roast. Remove the roast to a cutting board and with two forks shred roast. Serve alongside carrots and onions, topped with the pan juices. Serve with mashed potatoes.

1 (2-pound) blade cut chuck roast
2 teaspoons kosher salt
2 teaspoons cumin
Vegetable oil
1 medium onion, chopped
5 to 6 cloves garlic, smashed
1 cup tomato juice
1/3 cup balsamic vinegar
1 cup cocktail olives, drained and broken
1/2 cup dark raisins

Steps:

  • Preheat the oven to 190-200 degrees F. Place a wide, heavy skillet or fry pan over high heat for 2 minutes. Meanwhile, rub both sides of meat with the salt and cumin. When the pan is hot (really hot) brown meat on both sides and remove from pan. Add just enough vegetable oil to cover the bottom of the pan then add the onion and garlic. Stir constantly until onion is softened. Add the tomato juice, vinegar, olives, and raisins. Bring to a boil and reduce the liquid by half. Create a pouch with wide, heavy duty aluminum foil. Place half the reduced liquid/chunk mixture on the foil, add the roast, and then top with the remaining mixture. Close the pouch, and wrap tightly in another complete layer of foil. Cook for 3 to 3 1/2 hours or until a fork pushes easily into the meat. Remove from oven and rest (still wrapped) for at least 1/2 hour. Snip off 1 corner of the foil pouch and drain the liquid into a bowl or measuring cup. Add some of the "chunkies" and puree with an immersion blender. Slice meat thinly, or pull apart with a fork. Serve with sauce.

5 -6 lbs boneless chuck roast (Pikes Peak roast) or 5 -6 lbs round roast (Pikes Peak roast)
1 (12 ounce) can Coca-Cola (must be real Coke for the acid content)
5 ounces A.1. Original Sauce
5 ounces Worcestershire sauce
2 -3 whole cloves (optional)
18 ounces barbecue sauce, mild
2 teaspoons beef bouillon concentrate, she used B-V (optional)
water (she never specified, but I just use about 1/2 to 1 cup)
rye bread
1 1/2 cups mayonnaise
1 tablespoon dry mustard
1 teaspoon horseradish
half-and-half cream

Steps:

  • Put all ingregients except bread and sauce ingredients into a large roasting pan and cover with lid or foil.
  • Bake at 300 degrees for 6 to 7 hours.
  • Meat juices can be cooked down, if desired. (You may baste every hour for the last few hours for extra yumminess).
  • To prepare sauce, mix the mayo, mustard and horseradish together well.
  • Add enough half & half to thin sauce to a pouring consistency.
  • To serve, place sliced beef on rye bread. (I just use a fork and pull the meat apart and have a shredded beef sandwich)
  • Pour juice over open faced sandwich and put 1 to 2 tablespoons sauce over the sandwich.

This recipe comes from my longtime friend, Dawn. It's a great cool weather meal, great for football games, prepare it and keep it warm in the crockpot.Start this the morning of when you plan to serve it. I'm sure it can be adapted to cooking in the crockpot, maybe 8-10 hours on low. It smells heavenly while it's simmering!This also freezes well.

1 pike's peak roast or 1 rolled rump roast, trimmed of fat
1 bay leaf
1 tablespoon pepper
1 tablespoon salt
1 tablespoon dried oregano
1 tablespoon dried rosemary, crumbled
1 tablespoon summer savory
1 tablespoon garlic powder
1 beef bouillon cube

Steps:

  • Put roast in a heavy pot with a tight fitting lid.
  • Add water halfway up meat- don't submerge meat in water.
  • Add spices, cover, and bring to a boil.
  • Reduce heat as low as possible and simmer all day, 8-10 hours.
  • Check occasionally; do not add additional water unless absolutely necessary.
  • When the meat is so tender it is falling apart, and there is only a small amount of liquid left in the pan, it is ready.
  • Take two big forks and shred meat into juices in bottom of pot so that the meat will soak up the juices.
  • Serve on toasted buns ( rye, pumpernickle, or onion rolls are good!) and top with your favorite mustard or horseradish sauce.

The flavor of this pot roast is wonderful. The pressure cooker seems to force the seasoning right into the meat and vegetables. Sunday dinner after church in the south was fried chicken, but in the MidWestern U.S. region, it was potroast. YUM.

3 lbs chuck roast
1 tablespoon Season-All salt
1 tablespoon olive oil
1 cup peeled baby carrots
1 cup chopped celery
1 cup sliced onion
1 3/4 cups water
1/4 cup Worcestershire sauce
5 medium potatoes, peeled and cut in half lengthwise
1/2 teaspoon pepper
2 teaspoons beef bouillon powder or 2 teaspoons beef base
2 bay leaves

Steps:

  • Coat roast with SeasonAll.
  • In a non-stick pan (I use my pressure cooker base for this), brown meat in olive oil, on high, on all sides to sear in juices.
  • Add carrots, celery and onions when meat is nearly browned.
  • Add water and Worcestershire sauce.
  • Place potato halves on top of roast and add pepper, beef bouillon powder and bay leaves.
  • Lock pressure cooker lid in place and bring to pressure over medium-high heat.
  • Adjust heat to stabilize pressure at about medium pressure.
  • Cook for one hour.
  • Release pressure naturally - don't use quick release.
  • As all pressure cookers are different, test meat and fork the potatoes to make sure they are done.
  • If not, add water, if necessary, and return to pressure.
  • When done, release pressure and serve.
