BUBBA'S BEER BISCUITS
Here's Paula Deen's method of making mix biscuits in her own special Southern way. Although titled as "biscuits," these are baked in muffin tins.

Steps:
- Preheat oven to 400 degrees F; butter a muffin tin.
- In a bowl, combine all the ingredients and mix well, adding sugar up to 1/2 cup to your own preference.
- Pour batter into the muffin tin.
- Bake at 400 degrees F for 15 to 20 minutes until golden.
- Serve with honey butter (Paula's "honey butter" recipe can be found at RecipeZaar #1149320).
PIG IN A BISCUIT

- Preheat oven to 425 degrees F.
- Whisk the flour, baking powder, baking soda, salt, and sugar together in bowl. Rub in 2 tablespoons of butter until absorbed, and then rub in the remaining butter until mixture resembles coarse sand. Whisk the milk and sour cream into a liquid measuring cup; stir the sour cream and milk into the dry ingredients.
- Turn the dough out of the bowl and knead very lightly and flatten into a square. Using a rolling pin, roll the dough into a 9 by 12-inch rectangle. Trim dough's rough edges with a pizza cutter or a knife, and then cut it in half lengthwise to make 2 rectangles. Lay 3 sausage links end to end, lengthwise, down the center of each piece of dough. Fold the dough over the sausages into long rolls with overlapping dough on the bottom. Slice each roll crosswise into 8 (1 1/2-inch) pieces.
- Transfer rolls to a baking sheet. Bake until golden, about 20 minutes. Serve warm with honey mustard.

- Large bowl; sift flour, baking powder, salt, and sugar.
- Cut in butter.
- Add beer.
- Mix lightly with fork until ball forms Turn dough onto generously floured surface.
- Knead gently 5-6 times.
- Roll dough out and cut with biscuit cutter. Place biscuits 1 in apart on ungreased baking sheet. Bake until tops are brown (15-18 minutes) at 425°F.

- Preheat the oven to 425 F and line a baking sheet with parchment paper.
- In the bowl of a food processor combine all the dry ingredients and pulse to combine.
- Add the cold, cubed stick of butter and pulse until the butter is broken down into small pieces and the mixture resembles cornmeal.
- Add the beer and pulse about ten times. Stop as soon as the mixture clumps and sticks to the side of the food processor bowl.
- Use a large cookie scoop or two spoons to drop beer biscuit mixture onto the parchment paper lined baking sheet. **
- Bake until the biscuits turn golden (about 15 minutes) in the lower half of the oven. ***

Steps:
- Combine flour sugar and salt in a large bowl.
- Add the shortening or lard and cut into dry ingredients with a fork or your hands.
- Flat beer -- beer that has lost it's fizz -- works best! Otherwise just let the beer get to room temperature; add 1/2 to 3/4 cup to mix.
- Knead the dough just enough to blend -- over mixing will make it tough.
- Flour a flat surface and spread the dough to a one inch thickness.
- Cut your biscuits out.
- Bake at 425°F for about 10 minutes or until brown.
