PIGEON PIES WITH BRAMBLE GRAVY



Pigeon pies with bramble gravy image

These puff pastry parcels are packed with rare cooked game, Savoy cabbage and pancetta. Serve with a blackberry gravy

8 Savoy cabbage leaves, stalks removed
2 tbsp olive oil , plus extra for greasing
small knob of butter
8 skinless pigeon breasts
8 pancetta slices or thin streaky bacon
plain flour , for dusting
375g pack puff pastry
1 egg , beaten
1 shallot , finely chopped
1 tbsp plain flour
2 handfuls blackberries
1 tbsp Crème de Cassis (optional)
1 tbsp port
small glass of red wine
250ml game or beef stock

Steps:

  • Bring a pan of water to the boil, cook the cabbage leaves for 1 min, then drain and place in cold water. Once cool, drain and pat dry with kitchen paper.
  • Heat the oil and butter in a large frying pan. Sear the pigeon for about 30 secs on each side until browned, then transfer to a plate and set aside the pan as is. Heat oven to 220C/200C fan/gas 7.
  • When the pigeon has rested, make 4 parcels by sandwiching 2 breasts together, wrapping them tightly in the cabbage leaves, then criss-crossing 2 slices of pancetta over the parcel to secure. Set aside.
  • On a lightly floured surface, roll out the pastry until it's the thickness of a £1 coin. Cut out 4 x 12cm circles and place on a greased baking tray. Sit a cabbage parcel in the middle of each circle. Roll the pastry trimmings out again and cut out 4 more circles about 16cm in diameter. Brush the edges of the pastry on the tray with the beaten egg, then drape over the larger circles and pat them round to make a large 'ravioli', trying to expel any air. With a fork, push the sides together. Brush the pies generously with egg, poke a small airhole in the top of each, then sprinkle with salt flakes, if you like. Bake the pies for 20 mins until the pastry is dark golden. Remove and leave to rest for 10 mins.
  • Meanwhile, make your gravy. Put the pan with the pigeon cooking juices back on the heat and sizzle the shallot until golden. Stir in the flour and cook for a few mins until sandy. Add the blackberries and cassis (if using), Port and wine, then bubble down. Add the stock and simmer for a few mins until you have a gravy. Set aside and reheat when the pies are ready. To serve, carefully carve each pie in half so you see the cross section of breast, and serve with a little of the sauce poured around.

10 pigeons, breasts
1 onion
1 celery rib
1 leek
1 carrot
4 tablespoons olive oil
4 ounces chicken livers
7 ounces pancetta lardons
7 ounces button mushrooms
7 ounces shallots, finely chopped
1 tablespoon tomato paste
2 1/2 cups game stock or 2 1/2 cups chicken stock
10 black peppercorns
1 sprig rosemary
10 sage leaves
1 pinch thyme
1 lb shortcrust pastry

Steps:

  • Cut the pigeon breasts into small pieces. Finely dice the onion, celery, leek and carrot.
  • Heat one tablespoon of olive oil in a frying pan over a moderate heat and fry the pigeon, chicken livers and pancetta in olive oil until lightly browned. Put into a pie dish.
  • Add a further tablespoon of the oil to the frying pan and fry the onion, celery, leek and carrot until golden, and then add this to the pie dish.
  • Fry the button mushrooms and shallots in the remaining oil and add to the pie dish.
  • Spoon tomato paste into the pan and cook for 1 minute. Deglaze the pan with the stock. Add the peppercorns, rosemary, sage and thyme to the stock, and bring to the boil.
  • Set the oven to 375°F Pour the stock over the meat in the pie dish.
  • Roll the pastry out to cover the pie and bake for 45 minutes. Serve immediately.

  • Put the pigeons, their offal, aromatics, a few sprigs of thyme and white wine into a stock pot, add water barely to cover, then cover the pot, bring to a simmer and cook on low for 2.5 hours or until the legs move easily from the pigeons. Meanwhile, toast the porcini in an oven until lightly browned and toasted, about 10 minutes at 350, then cool and reserve.
  • Remove the pigeons from the pot, and add the porcini to the stock. Cool the pigeons until you can handle them, then remove the skin and pick the meat, leaving the breasts whole. Reserve all the meat and offal. Meanwhile, begin reducing the braising liquid with the mushrooms until 2 cups remain. Remove the mushrooms then strain the stock and reserve both separately.
  • Render the bacon over medium-high heat until the fat starts to render, then add the leeks and cook until soft, stirring occasionally, about 10 minutes. Deglaze the pan with the cognac, cook for a few minutes more to remove the alcohol, and reserve.
  • Melt the drippings or lard in a pan, then add the flour when hot and cook until thick, whisking constantly. Gradually add the pigeon liquid until you get a very thick gravy, season to taste with salt and pepper. The sauce should look more like a binding agent for the filling as opposed to a sauce.

  • Remove the breasts from the pigeons by following the natural line of the bone. Remove the skin and discard. Refrigerate the breasts for later and reserve any hearts for the farce. Remove the legs and wings from the pigeons (no need to be too neat here) and add them to a saucepan with the stock, porcini and thyme. Bring to the boil then turn down to a very low simmer and reduce for 1 hour 45 minutes, skimming off any scum and fat occasionally.
  • While the gravy is cooking, make the pastry. Put the flour and butter in a food processor and pulse to combine. Combine the milk, sugar and salt in a small saucepan and heat just until the sugar and salt are dissolved. Add the milk to the food processor and combine until you have a dough. Wrap in clingfilm and chill in the fridge for at least half an hour while you make the other elements.
  • Once the gravy has cooked, strain and set aside. Add the red wine to a hot saucepan and let it bubble up until reduced by half. Add the strained stock and cook slowly, skimming if necessary, for 45 minutes.
  • Make the pork farce by combining any chopped offal with the pork mince. Place in the freezer, covered, for 10 minutes. Place the bread in a small bowl and saturate with the cream.
