4 slices bacon or ham, optional
2 tablespoons oil (olive or vegetable oil)
1 cup fresh or frozen gandules (pigeon peas), drained from the water
3/4 cup tomato sauce
1/2 cup green olives
1/4 cup sofrito, thawed if using store bought frozen sofrito
1 1/2 teaspoons salt
1 teaspoon adobo seasoning
½ packet sazon
½ teaspoon ground black pepper
¼ teaspoon ground cumin powder
3 ½ cups water
3 cups medium white rice, rinsed
cilantro, optional garnish

Steps:

  • 1. Heat a large heavy bottomed pot, or a caldero if you have one, over medium heat. If using ham or bacon, slowly cook the meat until crispy, remove meat from pot and set aside leaving the drippings. If not using meat, add olive oil before continuing with the next step. 2. Then, add the gandules, tomato sauce, green olives, sofrito, salt, adobo seasoning, sazon, ground black pepper and ground cumin. Stir to fully combine. 3. Once the mixture becomes fragrant, pour in the water and bring it to a boil over high heat. Bring the mixture to a boil and then add the rice. Stir until rice is submerged and pigeon peas are distributed evenly. 4. Reduce the heat to medium-low, cover, and cook for about 25 minutes. You can add your ham or bacon back in now if you want, or wait to add it in again before serving. Traditionally the rice would be covered with a banana or plantain leaf. However, a tight fitting pot lid will work just fine! 5. About half way through cooking, remove the lid and stir, making sure to scrape up any rice stuck at the bottom of the pan. This is a very touchy subject - some Puerto Ricans insist that you don't stir the rice while cooking. That the crispy bottom bites are the best part! While others would prefer more evenly cooked rice. Whatever you do, if you do stir the rice, make sure you only do it once or the rice can become sticky. 6. After simmering for 25 minutes, remove the arroz con gandules from the heat and let it sit for an additional 30 minutes before serving. This is called letting the rice "steam". The rice is done once all the liquid is absorbed. 7. After letting the rice rest for about a half hour, remove the lid. Fluff and stir the rice, then serve warm with fresh cilantro, if desired.

1 tablespoon extra-virgin olive oil
6 strips applewood-smoked bacon, finely chopped
1/2 cup finely chopped onion
1/4 cup finely diced green bell pepper
1/4 cup finely diced red bell pepper
2 cups long-grain white rice
1 teaspoon kosher salt
2 tablespoons tomato paste
1 tablespoon chopped fresh oregano
1 teaspoon ground cumin
One 15-ounce can pigeon peas, drained and rinsed
One 14.5-ounce can chopped roasted tomatoes
2 cups low-sodium chicken stock
1/4 cup finely chopped cilantro leaves, for garnish
1/4 cup chopped scallions, for garnish

Steps:

  • Place a large Dutch oven over medium heat and add the oil and bacon. Cook, stirring, until the bacon is crispy and golden and the fat has rendered, 4 to 5 minutes. Add the onions, green peppers, red peppers, rice and salt; cook, stirring, for 5 minutes, until the onion is soft and the rice is lightly toasted. Add the tomato paste and cook for 2 to 3 minutes, stirring. Add the oregano, cumin, pigeon peas, tomatoes, chicken stock and 1 cup water. Bring to a boil, then reduce the heat to a simmer. Cover with a lid and cook until the rice is tender, 25 to 30 minutes.
  • Remove the lid and fluff the rice with a fork. Garnish with cilantro and scallions.

1 cubanelle pepper, seeded and chopped
5 small fresh sweet peppers, halved and seeded
1/2 c chopped onion
2 chopped garlic gloves
1 1/4 c chopped cilantro, coarsely chopped
1 roma tomato, chopped
FOR THE RICE:
1/4 lb diced ham
1/4 c annatto oil
1/3 c pimento-stuffed olives, chopped
1 Tbsp capers, drained
2 c long grain white rice
15 oz pigeon peas, rinsed and drained
3 1/2 c water

Steps:

  • 1. Purée first six sofrito ingredients in a food processor.
  • 2. Cook ham in annatto oil in pot over medium-high heat (be sure that ham is dry before adding it to the oil), stirring occasionally, until starting to crisp up, approximately 4 minutes.
  • 3. Add sofrito ingredients, olives and capers and cook, stirring, until liquid has evaporated - about 5 minutes.
  • 4. Add rice and cook, stirring, until it sizzles - approximately 2 minutes.
  • 5. Stir in the peas, water and 1 1/4 tsp. salt - bring to a simmer. Simmer uncovered over medium-high heat until almost all of the liquid is absorbed - approximately 10 minutes. Reduce heat to medium when water falls below the level of rice. Gently stir from bottom to top, then smooth the top of the rice.
  • 6. Cut a parchment paper large enough to cover the rice. Place parchment directly over rice and cover pot with a tight-fitting lid.
  • 7. Reduce heat to low and cook, undisturbed, for 30 minutes.
  • 8. Remove from heat, then discard parchment paper and gently fluff rice with a fork.

1 pound dried pigeon peas, picked through and rinsed
2 bay leaves
1/4 cup achiote oil, recipe follows
1 medium white onion, diced
2 garlic cloves, minced
1 green bell pepper, cored and diced
1 cubanella or Italian green pepper, cored and diced
1/2 cup chicken broth
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon cayenne
2 cups long-grain rice
1/2 lime, juiced
1 tablespoon salt
1 cup vegetable oil
2 tablespoons achiote/annatto seeds

Steps:

  • Put the pigeon peas and bay leaves in a large pot, cover with 3 quarts of cold water, and place over medium heat. Cover and cook the beans until tender, about 1 1/2 hours. Check the water periodically; add more, f necessary, to keep the peas covered. Drain the pigeon peas and reserve 4 cups of the cooking liquid.
  • Preheat the oven to 350 degrees F.
  • Coat a large Dutch oven or other ovenproof pot with the achiote oil and place over medium heat. When the oil begins to smoke, add the onion, garlic, and peppers. Cook, stirring, for 10 minutes, until the vegetables have softened, without letting them brown. Pour in the chicken broth and continue to cook until the liquid is evaporated. Stir in the cumin, coriander, and cayenne. Mix in the rice and reserved pigeon peas. Pour in the reserved 4 cups of pigeon pea cooking liquid, lime juice, and salt; stir everything together. Cover and bake for 20 to 30 minutes, until the rice is tender and the liquid is absorbed.
  • To make the achiote oil, pour the oil and achiote seeds in a pot or skillet. Cook over medium-low heat for 5 to 10 minutes; the oil will be reddish-orange from the achiote. Strain the oil, discard the achiote seeds and set aside to cool.

1/2 cup Spanish olive oil
1 small piece salt pork
2 tablespoons Sofrito Marinade, recipe follows
1 tablespoon tomato paste
1 cup rice
1 (12-ounce) can goya gandules or pigeon peas
1 teaspoon saffron
Salt and pepper, to taste
2 to 3 cups water or chicken stock
1 green pepper, small dice
1/2 Spanish onion, small dice
4 to 5 cloves garlic, minced
1/2 cup cilantro, chopped

Steps:

  • In a large saucepan, heat oil and salt pork over medium-high heat. Add sofrito and cook 1 minute. Add tomato paste and mix well, cook for 2 minutes. Add rice and cook 2 minutes being careful not to scorch the rice, turning all the time. Add saffron and gandules and stir constantly. Add liquid, stirring constantly. Add salt and pepper to taste and bring everything to a boil. Lower heat and simmer covered for 15 minutes. Do not disturb. After 15 minutes, check the rice. Stir. Recover. Turn off heat and let steam for 5 minutes more. Serve immediately with pernil asado or alone. The rice should be fluffy and separate. The color should be golden.
  • Mix together all ingredients and set aside to let flavors meld together.

1 Cubanelle pepper (Italian frying pepper), seeded and chopped
5 fresh ají dulce (small sweet chiles), halved and seeded
1/2 cup chopped onion
2 garlic cloves, chopped
1/2 cup coarsely chopped cilantro
3 fresh recao leaves (culantro; see cooks' note, below), chopped
1 plum tomato, chopped
For rice:
1 (1/4-pound) piece smoked ham, diced
1/4 cup annatto oil
1/3 cup chopped pimiento-stuffed olives
1 tablespoon drained bottled capers
2 cups long-grain white rice
1 (15-ounce) can pigeon peas, rinsed and drained
3 1/2 cups water

Steps:

  • Make Sofrito:
  • Purée all sofrito ingredients in a food processor.
  • Make rice:
  • Cut out a round of parchment or wax paper slightly larger than diameter of a wide 4- to 5-quart pot.
  • Pat ham dry and cook in annatto oil in pot over medium-high heat, stirring occasionally, until starting to crisp, about 4 minutes. Add sofrito, olives, and capers and cook, stirring, until liquid has evaporated, about 5 minutes. Add rice and cook, stirring, until it sizzles, about 2 minutes.
  • Stir in peas, water, and 1 1/4 teaspoons salt and bring to a simmer. Simmer, uncovered, over medium-high heat until almost all of liquid is absorbed, about 10 minutes, reducing heat to medium once water is below level of rice.
  • Gently stir from bottom to top, then smooth top of rice. Place parchment round directly over rice and cover pot with a tight-fitting lid. Reduce heat to low and cook, undisturbed, 30 minutes.
  • Remove from heat, then discard parchment and gently fluff rice with a fork. Cover with lid and let stand 10 minutes.

Based on a recipe from Heidi Haughy Cusick's book, Soul and Spice, African Cooking in the Americas. This book is chock-filled with Caribbean, Bahia Brazilian, and Louisiana Creole recipes. She says, "This Caribbean mainstay is found on all the islands in a variety of forms. Sometimes it is cooked with pork; other times it is prepared with water, onions, and salt. The peas can also be cooked with coconut milk, and garlic, tomatoes, and green onions can be added. Curry power is another option. And the hot habanero (Scotch Bonnet) chile is optional. Pigeon peas are native to Africa and resemble black-eyed peas. They are pale yellow and have a small "eye". In the West Indies, pigeon peas also go by goongoo, Congo, and gungo peas. The peas' earthy flavor is wonderful; when these legumes are combined with rice the resulting texture is a mouthful to behold. In Cuba red beans and rice are called congri. A dish of black beans and rice on the island is called Moros y Christianos, for Moors and Christians. Cook time doesn't include soaking the peas overnight. When I tried this, I added 2 tablespoons of liquid smoke along with smoked bacon in place of ham hocks (couldn't find) and our guests and we loved it! Nice backdrop to any dish that suggests a rice accompaniment.

Steps:

  • Place pigeon peas in bowl and cover with several inches extra water; soak overnight. Drain.
  • In a large, heavy saucepan, combine drained pigeon peas with water (or water and coconut milk). Bring to the boil and add the ham hocks, onion, 1 clove of the garlic, and the chile. Reduce heat to medium-high and simmer, uncovered, until the peas are tender, about 45 minutes.
  • Stir in the rice; reduce heat to medium, cover, and cook until the rice is tender, another 20-30 minutes. About 5 minutes before the rice is tender, add the last garlic clove to the pot by squeezing it through a garlic press.
  • Adjust seasonings with salt and pepper and red-hot sauce, if using, and serve.

14 1/2 ounces pigeon peas
1/2 cup butter

1 tablespoon olive oil
1/2 cup sofrito sauce
1/2 cup chopped ham (or cooked pork pieces)
2 cups rice
4 cups water
1 1/4 ounces , goya sazon seasoning found in latin markets
1 (15 ounce) can pigeon peas (drained and rinsed)

Steps:

  • 1. Heat olive oil in a 6-quart pot. Saute the sofrito and chopped ham for 1 minute.
  • 2.Add the rice, water, sazon and pigeon peas.
  • 3.Bring to a boil. Let boil for 2 to 3 minutes.
  • 4.Cover, reduce heat to medium low, and cook for 35 to 40 minutes.
  • TIP: Do not use a lid with a vent that allows the steam to escape.
  • Never lift the lid while cooking.
  • 5.When finished cooking, stir the rice before serving. It should be light and fluffy.

There are dals for special occasions, seasoned with charcoal smoke and butter or padded out luxuriously with cream, as well as lighter, leaner dals that can restore you when you're not feeling well.The flavor of this everyday, Gujarati-style dal comes from the pure nuttiness of split pigeon peas, boiled until tender and bolstered with spices bloomed in hot ghee. This fat-tempering technique, called vaghar in Gujarati, has many names and many uses across the country. In this case, the tempering is a great introduction to the resourcefulness and finesse of Indian home cooks: Just a few tablespoons of carefully seasoned fat, tipped in at the very last moment, transform an entire pot.

2 Roma tomatoes, roughly chopped
1/4 teaspoon ground turmeric
1/2 teaspoon kosher salt
1/4 cup raw whole peanuts
1/4 cup/55 grams ghee
1 sprig fresh curry leaves
3 small pieces Indian cinnamon or 1 cinnamon stick
3 red dried chiles, such as chile de árbol
3 cloves
1/4 teaspoon black mustard seeds
Pinch of asafoetida

Steps:

  • Prepare the dal: Soak the pigeon peas in a large bowl of warm water for about 1 hour. (They will have swelled a little.) Thoroughly rinse the soaked pigeon peas with fresh water, then tip the drained pigeon peas into a pot.
  • Add tomatoes, turmeric, salt and 5 cups water, and bring to a boil over high. Reduce the heat to medium and simmer until very tender, 25 to 30 minutes.
  • Use an immersion blender to purée some of the dal, leaving some intact and getting some very smooth, or whisk vigorously to break up some of the soft dal. Stir in the peanuts and continue to simmer, stirring occasionally, until the dal is very tender, about 30 minutes. Taste and adjust with salt. If the dal has become too thick for your liking, stir in a splash of water.
  • Prepare the tempering: In a small saucepan over medium heat, warm the ghee. When hot, carefully add all of the tempering ingredients (the mustard seeds will sputter!) and swirl the pan until you can smell all the toasted spices, about 30 seconds. Pour everything over the hot dal.
