- Place eggs in a single layer in a saucepan and cover with enough water that there's 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
- Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.
- Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

- Peel hard-boiled eggs, cut in half lengthwise, and spoon out the yolks. Place the whites cut-side up on a plate, and place the yolks in a small bowl.
- Mash yolks with a fork. Add mayonnaise, honey mustard, and lemon juice; beat until smooth and fluffy. Using a mini food blender or processor works great for this step, making the filling smooth, creamy, and lump free. Mix in minced tarragon, onion, salt, and pepper.
- Evenly spoon the filling into the egg whites with a teaspoon. Use a piping bag or a small plastic sandwich bag with a corner snipped off if you prefer a more decorative look.
- Garnish deviled eggs with tarragon leaves, and chill in the refrigerator until ready to serve.

- Add wood chips to grill according to manufacturer's directions. Place eggs on grill rack. Grill, covered, over indirect medium heat until golden brown, 7-10 minutes. Steps:
- Boil eggs until hard.
- Allow eggs to cool- check for cracks in the shell. Discard ANY cracked eggs. Bacteria grows under the cracks while the egg is cooling.
- Once cool, peel eggs and slice in half, lengthwise.
- Remove yolk from eggs and place in medium mixing bowl.
- Wipe off egg whites and set aside.
- Add remaining ingredients (except paprika, and onions) to egg yolks.
- Start off with small amounts of mayo and add until you reach your desired consistency.
- Mix until smooth.
- Fill egg whites with the yolk filling.
- Garnish with chopped onions and paprika.
- Cover and chill until time to serve.
