This is a very yummy rich blueberry pie--nice presentation when you have guests. My daughter-in-law gave me the recipe years ago.

1 1/2 cups flour
1/2 teaspoon salt
1 1/2 tablespoons sugar
1/2 cup oil
2 tablespoons cold milk
1 (8 ounce) package cream cheese
1 cup powdered sugar, sifted
1 teaspoon vanilla
1 cup whipping cream, whipped
1 (21 ounce) can blueberry pie filling (you can use canned wild blueberries instead of pie filling)

Steps:

  • Preheat oven 400 degrees.
  • Pie Crust: Sift flour, salt, sugar into 9-inch pie pan.
  • Combine oil and milk in a cup.
  • Pour onto flour mixture; mix and form pie crust.
  • Poke crust with fork (holes).
  • Bake 12 to 15 minutes.
  • Pie Filling: Stir cream cheese to soften.
  • Add powdered sugar and vanilla; beat until smooth.
  • Fold whipped cream into cream cheese mixture.
  • Spoon filling into baked pastry shell.
  • Top with blueberry pie filling or blueberries.
  • Chill to set--enjoy.

1/2 teaspoon salt
1 (15 ounce) can sweetened blueberries, drained

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, cream together the butter and brown sugar.
  • Stir in flour, salt and oats.
  • Mix until well combined.
  • Pat 2/3 of the mixture into an ungreased 9 inch pie pan to form the bottom crust.
  • Spread blueberries evenly into crust.
  • Pat the remaining oat mixture onto top of blueberries.
  • Bake in preheated oven for 40 to 50 minutes.

5 cups fresh blueberries
1 tablespoon lemon juice
1 (15 ounce) package refrigerated pie crusts
1 cup sugar
1/2 cup all-purpose flour

2 tablespoons butter or 2 tablespoons margarine
1 large egg, lightly beaten
1 teaspoon sugar

Steps:

  • SPRINKLE berries with lemon juice; set aside.
  • FIT half of pastry in a 9-inch pieplate according to package directions.
  • COMBINE 1 cup sugar and next 3 ingredients; add to berries, stirring well.
  • Pour into pastry shell, and dot with butter.
  • UNFOLD remaining pastry on a lightly floured surface; roll gently with rolling pin to remove creases in pastry.
  • Place pastry over filling; seal and crimp edges.
  • Cut slits in top of crust to allow steam to escape.
  • Brush top of pastry with beaten egg, and sprinkle with 1 teaspoon sugar BAKE at 400° for 35 minutes or until golden.
  • Cover edges with aluminum foil to prevent overbrowning, if necessary.
  • Serve with vanilla ice cream, if desired.

4 cups (20 ounces) fresh blueberries, washed and dried
1/2 cup sugar, plus extra for sprinkling
1/2 cup all-purpose flour
1 teaspoon grated lemon zest
1/4 cup freshly squeezed lemon juice (2 lemons)
1 tablespoon Cassis liqueur
Perfect Pie Crusts
1 egg beaten with 1 tablespoon milk or cream, for egg wash
12 tablespoons (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 tablespoon sugar
1 teaspoon kosher salt
1/3 cup very cold vegetable shortening, such as Crisco, diced
1/2 cup ice water

Steps:

  • Preheat the oven to 400˚ F. Line a sheet pan with parchment paper.
  • Mix the blueberries, 1/2 cup of sugar, the flour, lemon zest, lemon juice and Cassis in a large bowl. Carefully ease one pie crust into a 9-inch pie plate, making sure not to stretch the dough or it will shrink as the pie bakes. With a sharp knife, cut the excess dough off at the edge of the pie plate. Spoon the blueberry mixture into the pie shell, scraping the bowl with a rubber spatula to be sure you include all the juices.
  • Brush the edge of the crust with the egg wash. Carefully lay the second crust on top, again easing - not stretching - it onto the pie. Cut the excess dough off at the edge of the pie plate. Press the edges together with a dinner fork or crimp with your fingers. Brush the top crust with the egg wash, cut three slits for steam to escape and sprinkle with sugar.
  • Place the pie on the prepared sheet pan and bake in the middle of the oven for 45 to 50 minutes, until the filling is very bubbly and the crust is nicely browned. Allow to cool and serve warm or at room temperature.
  • Cut the butter in 1/2-inch dice and return it to the refrigerator while you prepare the flour mixture. Place the flour, sugar and salt in the bowl of a food processor fitted with the steel blade and pulse a few times to mix. Add the butter and shortening and pulse 10 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump the dough out on a floured board and turn it into a ball. Wrap it in plastic wrap and refrigerate for 30 minutes.
  • Cut the dough in half. Roll each piece out on a well-floured board into a 12- to 13-inch circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board.

5 tablespoons all-purpose flour
1 cup sugar
1 lemon

  • Preheat the oven to 350 degrees F. Unfold one of the pie crusts and press into a 9-inch pie dish.
  • Combine the berries with the flour in a large bowl and toss to coat. Add the sugar, a squeeze of lemon and a dash of salt. Toss to combine. Pour the berries into the prepared pie dish.
  • Cut the remaining pie crust into 1-inch-wide strips. Arrange the strips on top of the pie in a criss-cross pattern to form a lattice. Bake until the filling is bubbly, 45 to 60 minutes. Serve.

This particular blueberry pie is a classic rendition. I like to keep such nostalgic dishes fairly straight forward. The only artist license I took was with the crust. I tweaked my favorite pie crust recipe by incorporating ground almonds and amaretto! The almonds create a slightly more brittle, but exquisitely flaky crust and the amaretto deepens the sweet, nutty flavor. It was a superb crust, if I do say so myself!

1/2 cup ground raw almonds
2 1/4 all-purpose flour
1 teaspoon salt
2 tablespoons sugar
12 tablespoons unsalted butter, chilled and cut into cubes
7 tablespoons shortening, chilled and cut into cubes
2 tablespoons Amaretto
2 -3 tablespoons cold milk
6 cups blueberries
1/2 cup flour
1/2 teaspoon cinnamon
3/4 cup sugar
1 orange, zest of
1 tablespoon orange juice
2 tablespoons butter, cut into cubes
1 egg

Steps:

  • Ground the almonds in the food processor until fine.
  • Add the flour, salt, and sugar. Pulse a few times to mix. Add the COLD butter and shortening cubes and pulse until the mixture resembles peas.
  • Add the amaretto and 1 tablespoon of cold milk. Pulse again until the dough comes together. Add another 1-2 tablespoons of milk if needed. Dump the dough out onto a sheet of plastic wrap.
  • Separate into two equal pieces and flatten into two disks. Wrap each disk in plastic and refrigerate for at least 30 minutes.
  • Meanwhile, mix the blueberries with the following 5 ingredients and set aside.
  • Preheat the oven to 425 degrees F. Move to racks to a lower and middle position.
  • Flour a work surface and roll out one disk of dough in a 12 inch circle. Fold the dough over the rolling pin to transfer it to a 9 inch pie pan. Repair any cracks.
  • Crimp or pinch the edges.
  • Roll out the second disk of dough and cut out shapes with a floured cookie cutter.
  • Pour the berry filling into the pie crust and top with 2 tablespoons of butter cubes. Arrange the dough shapes over the filling. Whisk an egg with 1 tablespoon of water and brush the egg wash over the pie crust.
  • Place the pie on the lower rack and bake for 15 minutes. Lower the heat to 375 degrees F, and move the pie up to the middle rack. Bake another 35-45 minutes-until the crust is golden brown and the blueberry filling in bubbling. If the pie crust browns too quickly, cover it with foil.
  • Once out of the oven, resist the urge to cut into the pie and have a slice. The pie needs to cool to room temperature for the filling to thicken up! It usually takes about 2 hours!

  • Pour hot mixture into large bowl.Cool until warm.
  • Fold in remaining 3 cups of blueberries, lemon rind, cinnamon,nutmeg and butter.
  • Let cool before adding to pie crust.
  • Add top crust and brush with egg wash, sprinkle with sugar.
  • Preheat oven to 400°F but reduce heat to 375°F when you put pie in oven. Bake about 40 minutes. Check pie halfway through baking; cover edges with a strip of foil if edges are getting too brown.
  • This technique works for any delicate fruit such as raspberries or strawberries.
