MRS. FIELDS SUGAR COOKIES
Just like Mrs. Field's sugar cookies.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl combine the flour and salt with a wire whisk. In a large mixing bowl cream the butter and sugar with an electric mixer on medium speed. Add the egg and vanilla, and beat until well blended. Scrape down sides of bowl, then add the flour mixture. Blend on low speed just until combined. Do not overmix.
- Gather dough into a ball. Flatten the ball into a disk and wrap tightly in plastic wrap or a plastic bag. Refrigerate one hour until firm.
- On a floured surface, roll out dough to a 1/4 inch thickness. With cookie cutters, cut dough into desired shapes and place on ungreased cookie sheets. Decorate with colored sugars or sprinkles. Bake for 13-15 minutes, being careful not to brown. Immediately transfer cookies with a spatula to a cool, flat surface.

CLASSIC SUGAR COOKIES
These are the familiar cookies, with crispy edges and a slightly soft middle. Superfine sugar gives them their crunchiness. The small amount of baking powder ensures that they puff just a little without spreading too much and losing their shape.

- For the cookies: Whisk together the flour, baking powder and salt in a small bowl.
- Beat the superfine sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes; beat in the egg, then the vanilla. Add the flour mixture and mix on medium-low speed until completely incorporated. Divide the dough in half, pat into 2 discs about 1/4 inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour.
- Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
- Let the dough sit at room temperature for a few minutes to make rolling easier. Roll out 1 disc of dough at a time between 2 pieces of parchment paper until 1/8 inch thick. Cut out shapes with cookie cutters and arrange about 2 inches apart on the prepared baking sheets.
- Bake until the cookies are golden brown on the bottom, 10 to 12 minutes. Let the cookies cool on the baking sheets until firm enough to transfer to a wire rack; let cool completely.
- Gently gather any scraps of dough into a ball and press into a disc; wrap in plastic wrap and refrigerate the disc until firm enough to roll, about 1 hour. Cut out as many cookies as possible and bake.
- For the royal icing: Beat the confectioners' sugar, meringue powder and 1/3 cup water with an electric mixer on medium-high speed in a large bowl until stiff peaks form. Beat in the food coloring if using. (The icing can be stored in an airtight container at room temperature for up to 2 days.)
- Decorate the cookies with the icing; top with decorating sugar and sprinkles if using.

- Preheat oven to 300 degrees.
- In a small bowl, combine sugar and cinnamon for topping. Set aside.
- In a medium bowl combine flour, soda and salt. Mix well with a whire whisk and set aside.
- In a large bowl, blend sugars with an electric mixer set at medium speed. Add the butter and mix to form a grainy paste. Scrape sides of bowl, then add the eggs and vanilla extract. Mix at medium speed until light and fluffy.
- Add the flour mixture and blend at low speed just until combined. Do not overmix.
- Shape dough into 1-inch balls and roll each ball in cinnamon-sugar topping.
- Place onto ungreased cookie sheets, 2 inches apart. Bake for 18-20 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.

- In a large bowl, cream together the butter and confectioners' sugar until smooth. Beat in the egg and stir in the vanilla and almond extract. Combine the flour, baking soda and cream of tartar; blend into the creamed mixture. Cover and chill for at least two hours.
- Preheat the oven to 375 degrees F (190 degrees C). Divide the dough into two parts. On a lightly floured surface, roll each piece of the dough out to 3/16 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto greased cookie sheets. Sprinkle cookies with plain or colored granulated sugar.
- Bake for 8 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

My step mother gave me this recipe it was in the newspaper years ago and it's our family's favorite sugar cookie recipe. It can be used for cut out or drop cookies.

- Combine first 5 ingredients beating until creamy. Sift together dry ingredients and gradually add to creamed mixture. Form into balls the size of walnuts, place on cookie sheet and dip glass in sugar and mash balls flat.
- Rolled Cookies, divide dough into three balls wrap in plastic wrap and chill over night. Heavily flour surface and roll out dough cut out with cutters and bake for 6-8 minutes at 375 degrees.

MRS. ROBY'S SUGAR COOKIES
This recipe came from my grandmother from her friend, Mrs. Roby. They were a part every year of our Christmas cookie selection. We used nuts, raisins, and colored sprinkles. Since being married, we have merged our traditions by adding the painting of these cookies. Rolling them thin is an art. I'm still trying Mom!

- Preheat oven to 375.
- Cream butter and sugar together. Add egg and mix well.
- Sift together flour, baking powder, and salt and add to mixture beating well.
- Add milk and flavorings.
- Chill overnight.
- Roll thin and cut with your favorite cookie cutters.
- Place on ungreased cookie sheet and sprinkle with cinnamon sugar.
