You can use any kind of pie filling you prefer in this coffee cake. My mom always uses cherry, I use strawberry or apple. Please don't substitute other ingredients (i.e. wheat flour for white flour, etc.) because it will affect the taste. If you want to substitute please try it the way it is written first. Recipe originally from my mom. Number of servings is a guess.

2 cups white flour
1 cup white sugar
1/2 cup butter, melted
2 teaspoons baking powder
1 egg
milk
1 (21 ounce) can pie filling
1 cup flour
1 cup sugar
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°F.
  • Combine 2 cups flour, 1 cup sugar, 1/2 cup butter, 2 teaspoons baking powder.
  • Place egg into measuring cup and add enough milk to measure 1 cup.
  • Add to other ingredients and mix until combined.
  • Pour into 9x13-inch pan.
  • Spread pie filling over top of batter.
  • Combine remaining 1 cup flour, 1 cup sugar, and 1/2 cup melted butter until crumbly.
  • Sprinkle over coffee cake.
  • Bake at 350°F for 40-50 minutes.
  • This is best eaten the day it is made.
  • Refrigerate leftovers.

2 large eggs
1/2 cup warm milk

1 (19 ounce) can blueberry pie filling
1/3 cup flour
1 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 cup sugar
4 tablespoons butter

Steps:

  • Set oven to 350 degrees.
  • Grease a 10-inch sprinform pan (or use an 11x7 or a 13x9-inch baking dish, the pan will be full for the 11x7-inch pan).
  • In a large bowl cream butter with sugar until fluffy.
  • Add in eggs and vanilla; beat until well combined.
  • In a small bowl mix together flour, baking powder, salt and cinnamon; add to the creamed mixture alternatley with warm milk.
  • Spread 2/3 of batter into the pan, then dollup tablespoonfuls of the pie filling all over top of the batter.
  • Dollup the remaining batter on top of the pie filling (it will look very uneven, that's fine!).
  • In a small bowl mix together the topping ingredients with your fingers, then sprinkle on top of cake.
  • Bake for about 45-50 minutes (for the springform pan) or until the cake tests done.
  • *Note* adjust baking times for the 13x9 or the 11x7-inch baking dish, also for the 11x7-inch place a baking sheet underneath to catch any spills.

2 cups peeled, cored, and thinly sliced firm tart apples (about 1 1/2 pounds)
1 tablespoon turbinado (raw) sugar, for sprinkling on top

Steps:

  • Preheat the oven to 375 degrees F (350 degrees if using a Pyrex or dark-finish pie plate). Grease a 10-inch pie plate.
  • In a medium bowl, combine the eggs, oil, vanilla, and sugar, beating with a wooden spoon until thick, about 1 minute. Add the flour, baking powder, cinnamon, allspice, and nutmeg, and salt. Beat vigorously until the batter has a crumbly consistency, about 1 minute. Fold in the apples and mix until the apples are evenly coated and the batter becomes moist and smooth. There will be lots of apples, held together by a relatively stiff batter.
  • Scrape the batter into the prepared pan and smooth into an even layer with a metal spatula. Sprinkle the top evenly with the sugar. Bake on the center rack of the oven 30 to 35 minutes, until the center is firm when gently pressed.   • For the crumb topping: In a medium bowl, mix the flour, brown sugar, cinnamon, instant coffee powder and salt. Add the melted butter and mix until crumbs form that you can clump together in your hand. Set aside.
  • For the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt and cardamom. In a smaller bowl, whisk together the coffee and sour cream until smooth.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing until each is well combined. Then add the vanilla extract and beat until the mixture is light and fluffy.
  • Starting and ending with the dry ingredients, alternate adding the flour mixture and the coffee mixture to the stand mixer; mix each addition well, scraping the bowl each additions.
  • Pour the batter into the prepared baking pan and top with crumb topping, spreading it evenly. Bake for 45 minutes or until a toothpick comes out clean.
  • Remove the cake from the oven and allow to cool for 20 to 30 minutes before cutting and serving.

I have since taken it in to meetings at work several times, with different variations on the fruit filling (I've even split the coffee cake by using two different flavors, such as apple on one side & cherry on the other). No matter what, this coffee cake ALWAYS disappears!

1 3/4 cups sugar
4 eggs
3 cups flour

  • Beat together butter (or margarine) and sugar.
  • Add eggs, one at a time, beating well after each addition.
  • Add other ingredients (except pie filling)& combine thoroughly.
  • Spread about 1/2 the batter in a 10x15x1" cookie sheet that has been lightly sprayed with cooking spray (pan must have at least 1" sides).
  • Place pie filling on top of batter; top the pie filling with remaining 1/2 of batter, spreading it out so that most of the fruit is covered.

I THINK this is from an early edition of Light&Tasty -but my copied page is faded. There are many possible variations, made the same way - such as yellow cake mix and peach pie filling, or chocolate cake mix with cherry pie filling - which I have not tried, since I LOVE the apple/spice. In preparing the bundt pan, I always use Baker's Joy spray (with flour) or Pam For Baking, and never have a problem with release. It is very easy, and packable in lunches.

1-1/4 cup whole milk
1/3 cup plus 1 teaspoon sugar, divided
1/4 cup butter, cubed
1 tablespoon salt

5-1/2 to 6 cups all-purpose flour, divided
STREUSEL TOPPING:

  • In a small saucepan, heat the milk, 1/3 cup sugar, butter and salt; stir until sugar is dissolved. Set aside. In a small bowl, combine the yeast, warm water and remaining sugar; let stand for 5 minutes., In a large bowl, combine the milk and yeast mixtures, eggs and 3 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn out onto a lightly floured surface and knead until smooth, about 6-8 minutes. Place dough in a greased bowl, turning once to grease top. Easy Apple Coffee Cake image

This layered coffee cake comes together easily with canned pie filling and other pantry staples. "I enjoy making it for my family or even to celebrate co-workers' birthdays," writes Joan Kuderer from Sparta, Wisconsin.

Number Of Ingredients 18

1/2 cup butter, softened
1 cup sugar
3 large eggs
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1-1/2 cups whole milk
1 can (21 ounces) apple pie filling
2 teaspoons ground cinnamon
TOPPING:
1/2 cup chopped walnuts
1/4 cup packed brown sugar
2 tablespoons butter, melted
GLAZE:
3/4 cup confectioners' sugar
1 tablespoon butter, softened
3/4 teaspoon vanilla extract
2 to 3 teaspoons water

Steps:

  • In a large bowl, cream butter and sugar. Beat in eggs. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Pour half into a greased 13x9-in. baking dish. Combine pie filling and cinnamon; spoon over batter. Drop remaining batter over filling; spread gently., Combine topping ingredients; sprinkle over batter. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Combine glaze ingredients; drizzle over warm or cooled coffee cake.
