1 1/2 cups flour (I use the kind labeled "Better For Bread")
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
2 eggs
3/4 cup sugar
1/2 cup vegetable oil
2 teaspoons vanilla
1 1/2 cups shredded yellow squash (I shred it in the Food Processor)

Steps:

  • Combine the Flour, Baking Powder, Baking Soda, Salt and Cinnamon in a Medium bowl.
  • Combine the Eggs, Sugar, Oil and Vanilla in a separate LARGE bowl.
  • Beat well. ( I use a hand mixer).
  • Stir in the Shredded Yellow Summer Squash.
  • Add the dry ingredients to the Squash mixture.
  • Stir until moistened.
  • Pour or spoon into a greased and floured loaf pan.
  • Bake at 350 degrees F for 50 minutes or until a knife inserted in the center comes out clean.
  • Cool for about 10 to 15 minutes and remove from pan.

10 cups shredded yellow summer squash (about 4 pounds)
2 large onions, chopped
1 large green pepper, chopped
6 tablespoons canning salt
4 cups sugar
3 cups cider vinegar
1 tablespoon each celery seed, ground mustard and ground turmeric
1/2 teaspoon ground nutmeg
1/2 teaspoon pepper

Steps:

  • In a large container, combine squash, onions, green pepper and salt. Cover and refrigerate overnight. Drain; rinse and drain again., In a Dutch oven, combine sugar, vinegar and seasonings; bring to a boil. Add squash mixture; return to a boil. Reduce heat; simmer 15 minutes. Remove from heat., Carefully ladle hot mixture into 6 hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool. Refrigerate remaining relish for up to 1 week.

2 cups grated yellow squash
1 cup vegetable oil
1 (8 ounce) can crushed pineapple, drained
1 cup chopped nuts
3 eggs, beaten
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt

1/2 cup of yellow squash (grated)
1/2 cup of zucchini (grated)
1/2 cup of brown sugar
1/2 cup of white granulated sugar
1 1/2 cups of all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of allspice
1 teaspoon of cinnamon
1/2 cup of butter (melted)
2 teaspoons of vanilla
2 eggs
1/2 cup of nuts

Steps:

  • Preheat oven to 350 degrees.
  • Combine yellow squash, zucchini, butter, eggs, brown sugar, white sugar and vanilla in bowl and mix well.
  • Add in remaining ingredients and combine until mixture is mixed and all ingredients are wet. Fold in nuts.
  • Pour into greased 9X5 loaf pan and top with extra nuts (can sprinkle with cinnamon and sugar for added flavor). Bake for 45-50 minutes.
  • Let cool 10 minutes and remove from pan.

¼ cup chopped Vidalia® onion
2 tablespoons white sugar

1 cup water, or as needed to cover

Steps:

  • Cut bacon into 1/4-inch thick strips (lardons). Slice squash and set aside.
  • Cook bacon lardons in a saucepan over medium heat until crispy, 5 to 7 minutes.
  • Add squash, onion, sugar, salt, and pepper to the bacon and bacon grease. Add enough water to cover and cook over medium-low heat for 45 minutes. Much of the water will evaporate; add more if needed.

Squash coming out your ears? Try these yummy bread and butter type pickles made with yellow crookneck squash rather than cucumbers! You could use zucchini but the yellow squash looks so much prettier. A great way to use up that garden bounty and savor the taste of summer all year long! Can use all red or all green bell peppers if you prefer.

8 cups summer squash, sliced
2 cups sweet onions, sliced
1 tablespoon kosher salt (any non-iodized works)
1 cup red bell pepper, diced
1/2 cup green bell pepper, diced
2 cups cider vinegar
3 1/2 cups sugar
1 teaspoon celery seed
1 teaspoon mustard seeds

Steps:

  • Combine squash and onion slices in a large enamel pot. If you want to make it extra pretty use a mandoline to slice them. Sprinkle with the salt. Stir to mix. Let stand 1 hour.
  • Add water to a water bath canner and allow it to come to a boil while you complete the next steps. Also, get a small pan of water boiling on the stove and toss your jar lids in to sterilize them.
  • Add the bell pepper, vinegar, sugar, celery seeds and mustard seeds to the squash and stir to mix. Bring to a boil and then fill sterilized pint jars with squash mixture. Remove any air bubbles, wipe jar rims. Remove lid from hot water and place on jar. Screw on the ring just until tight. You don't want to use Herculean strength here. Just like you would place the top back on the mayo jar.
  • Place hot filled jars in rack and into the boiling water. NEVER add cold jars to hot water. They will explode and shatter.
  • When water returns to a boil with jars in it, process for 5 minutes, or 10 minutes for altitudes of 1,001 feet to 6,000 feet. Over 6,000 feet, process for 15 minutes.
  • When time is up remove jars with a jar lifter and place on counter to cool and finish sealing. Refrigerate any jars that do not seal.

I started this bread because I needed to bake something to bring as a gift to someone's house and quickly found that my ingredients were limited to a few summertime fruits and veggies and not much else. As such, I improvised and changed a few things around from a zucchini bread recipe and created this healthy, hearty, summertime bread. It has a slightly different flavor than zucchini bread but the same moist consistency and sweet, summery taste and smell. Note: it is not very sweet and does taste 'healthy', so it's probably not a big hit for kids unless chocolate chips are added.
