PASTA SALAD WITH HAM AND PEAS



Pasta Salad With Ham And Peas image

This pasta salad with ham and peas makes for an easy make-ahead summer dinner or side at a picnic or cookout.

Number Of Ingredients 14

1 lb box ditalini pasta (or other shape such as macaroni)
salt for cooking pasta
1 cup frozen peas
4 eggs, hard-boiled, peeled, and chopped finely
1 cup mayonnaise
1/4 cup apple cider vinegar (can use white if you don't have apple cider)
1/4 cup white granulated sugar (or to taste)
3 tablespoons Dijon mustard
salt to taste (~1 1/2 teaspoons)
ground black pepper to taste (~1/2 teaspoon)
2 bell peppers, trimmed and seeded and chopped finely (I use 1 red and 1 yellow)
2 cups cooked ham chopped into small cubes (I used a ham I made with my brown sugar glaze)
1/2 cup finely chopped red onion (I used dried minced onion since I don't tolerate raw onion well)
Optional: 2 stalks celery finely chopped

Steps:

  • Boil pasta in salted water as directed on packaging until al dente.
  • While pasta cooks, mix together mayo, mustard, vinegar, sugar, salt, and pepper in a large bowl until thoroughly combined into a dressing.
  • Stir in the peppers, ham, onion and celery until everything is covered with the dressing. Set aside.
  • Once the pasta is cooked, drain and stir in frozen peas. Rinse with cold water to stop cooking and drain thoroughly. Gently fold the pasta and peas into the dressing mix.
  • Taste for seasoning and then cover and refrigerate until serving, preferably at least a couple hours if not overnight.

1/3 cup mayonnaise
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
2 tablespoons finely chopped fresh chives
1 1/2 tablespoons fresh lemon juice
1 cup bite-sized broccoli florets
8 ounces dried fusilli pasta
1/2 cup frozen peas, thawed
1/2 cup diced ham
1/2 cup diced provolone
1/4 cup sliced pitted black olives
1/4 cup finely chopped red onion
1/4 cup diced salami

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, parsley, sour cream, chives, lemon juice, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Cook the broccoli in the boiling water until crisp-tender, 3 to 4 minutes. Remove from the water with a slotted spoon and transfer to a colander. Run under cold water to stop the cooking process. Add the broccoli to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Three minutes before the pasta is done, add the peas to the pot. Drain and rinse under cold water to cool. Add to the bowl.
  • Add the ham, provolone, olives, onion and salami to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

1 pint grape tomatoes, halved
1 bunch green onions, chopped
1 6-oz. jar green olives, drained and halved
1 1/3 cups Italian salad dressing (I use Kraft's Zesty Italian)
Salt to taste

Steps:

  • Cook pasta per manufacturer's instructions for al dente preparation in liberally salted water. Drain pasta and rinse in cold water until pasta is cool to the touch. Drain well.
  • Combine pasta with remaining ingredients then stir to combine. Refrigerate until ready to serve.

½ cup buttermilk (if needed, sub with 2 tbsp of milk and enough plain yogurt to equal ½ cup)
¼ cup mayo
1 tbsp white vinegar
1 garlic clove

1 lb frozen green beans, cut in 1-inch pieces
4 -6 hard-cooked eggs, chopped
12 ounces marinated artichoke hearts, drained and chopped
1/4 cup cider vinegar
1/4 cup olive oil or 1/4 cup canola oil
1/4-1/2 cup mayonnaise
1/2 teaspoon italian seasoning

  • Mix all salad ingredients together in a large bowl.
  • Whisk dressing ingredients together until smooth and well-blended.
  • Toss salad ingredients with dressing until well-blended.
  • Let sit, refrigerated, at least 4-6 hours, preferably overnight.
  • Note: Additional vegetables can be added substituted if desired. Frozen broccoli florets or chopped cucumber are particularly good. But if you add a lot of extra veggies you might need an extra half batch of dressing.

1 1/2 cups of chopped tomatoes
1 cup of chopped ham
1/4 cup of chopped onions

3 tablespoons of fresh dill
1 cup of buttermilk

1 tablespoon of distilled white vinegar

Steps:

  • The first thing you will need to do is boil 3 cups of Rotini pasta according to the package directions.
  • Drain the pasta and let it cool. Now set the pasta to the side and chop up the 1 1/2 cups of tomatoes, then chop the 1 cup of ham, and chop 1/4 of a cup of onions.
  • Mix the tomatoes, ham, onions, and 1 cup of frozen peas in with the pasta. Then chop 3 tablespoons of fresh dill and set it to the side.
  • Now whisk the dressing together. Take 1 cup of buttermilk and whisk it in a 1/2 cup of mayonnaise. Then whisk in the chopped dill, 1/2 teaspoon of garlic salt and 1 tablespoon of distilled white vinegar.
  • Now mix the dressing into the pasta and vegetable mixture.
  • Now refrigerate until ready to serve. You can always lighten the recipe up by using low-fat mayonnaise.

This is a perfect quick pasta salad recipe - whether you take it on a picnic or in your lunchbox.

Number Of Ingredients 9

300g/10½oz pasta shapes such as penne or macaroni
250g/9oz cherry tomatoes, halved
sea salt
100g/3½oz black olives, stoned, halved
200g/7oz feta cheese, crumbled
225g/7oz baby spinach
3 tbsp lemon-infused olive oil
2 tbsp pine nuts, toasted
large handful torn basil

Steps:

  • Cook the pasta in a large pan of salted boiling water until al dente. Drain the pasta, rinse in cold water and tip into a large bowl.
  • Add the halved tomatoes to the pasta and sprinkle with sea salt. Add the olives, feta and spinach and drizzle with the lemon olive oil. Add the pine nuts and basil and toss gently before serving.
