PICKLE ROLL UPS WITH HAM (PINWHEELS)
Easy to make and popular with most everyone, pickle roll ups (pinwheels) are a failproof appetizer. Pickle roll ups with ham are perfect for lunchboxes, too.

Steps:
- Spread approximately 1 tablespoon softened cream cheese on each tortilla, going nearly to the edges. Arrange ham on each tortilla. Place pickle spear on one edge. Beginning at the pickle side, roll tortilla up tightly.
- Tightly wrap each roll individually in plastic wrap. Refrigerate at least 2 hours or overnight.
- Slice into 1 -inch pinwheels to serve.

We use simple, no-stranger-to-lunch ingredients for these fun sandwich roll-ups. For little kids: Let them wash and spin-dry the lettuce. For big kids: Let them layer the ingredients and roll up the sandwiches.

- Carefully wash and dry the 4 largest outer romaine leaves, trying not to tear them. Cut the leaves at the base, where they were connected to the root; the leaves should be about 9 inches long. Using a vegetable peeler, shave the center rib so the leaves roll up more easily. Set aside.
- Stir the cream cheese, scallions, mustard, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl to combine.
- Lay 1 of the tortillas on a clean work surface, and place 1 of the romaine leaves neatly on top. Place 2 slices of the ham next to each other to fit neatly on top of the lettuce. Spread 2 tablespoons of the cream cheese mixture over the ham, then line up a quarter of the roasted pepper strips along one edge. Line up 1/4 cup of the shredded carrots on top of the peppers. Roll up the wrap tightly, starting from the edge with the peppers and carrots, so the wrap holds together with the peppers and carrots in the middle. Place the wrap seam-side down. Repeat with the remaining tortillas, peppers, carrots, ham and cream cheese mixture. Cut the wraps into 1-inch pieces, then skewer each piece from the top through the seam side with a toothpick or skewer.

- In a food processor, add the cream cheese, salami and horseradish; cover and process until blended. Spread over ham slices. , Remove stems and ends of okra pickles. Place 2 or 3 okra pickles or 1 dill pickle down the center of each ham slice. Roll up tightly and cover. Refrigerate for at least 2 hours. Cut into 1-in. pieces.

- Lay slices of ham on paper towel, place another towel on top and blot gently,spread cream cheese on ham slices. Take a pickle in a paper towel and squeeze gently to remove most of the juice. Lay on the ham slice and roll up tightly.
- When the pickles are all rolled take a very sharp knife and slice into pinwheels cut the ends off and set aside. Lay the slices on serving platter.
- I can't keep anyone watching to keep from eating as I'm cutting, so I tell them the ends are fair game!
- When I buy my pickles, I look for the ones that are long,straight and slender, it makes rolling them up easier.
QUICK AND EASY PICKLE, HAM & CREAM CHEESE ROLL-UPS
I first tried this recipe when a cousin brought it with her to a family dinner. I now take it with me to potlucks and always get rave reviews. They are very tasty and simple to make. - Spread thin layer of cream cheese on slice of meat.
- Wrap one pickle with cheese covered meat slice.
- Keep spreading the cheese on ham slices and wrapping the pickle spears up in them.
- Place in a plastic container or decorative serving platter and chill for at least 1 hour, then slice rolls into wheels and stick toothpicks in them for serving.

- Heat the oven to 200C/180C fan/gas 6. Mix the cheeses together. Mix through the pickle and English mustard powder. Unravel the pastry on a lightly floured surface, spread the cheese mixture over and tightly roll into a sausage shape from the longest side. Trim off the ends. DILL PICKLE HAM PINWHEELS (HAM ROLLUPS)

- Pat dill pickle dry with paper towel.
- Take 2-3 pieces of meat (depending on size of pickle), and place them on a cutting board overlapping half of each with the next. (If you're lucky, you can find the ham cut in a rectangular shape as opposed to square. In this case, you can use just one slice and it will encase the entire pickle.).
- Spread cream cheese over meat.
- (You can use more cream cheese if you like.) Wrap pickle around in blanket fashion.
- Chill for an hour or two, then slice pickle in~1/2 inch pieces and lay flat on tray.
- (If using dried beef, you can also put meat in blender and pulverize. Spread cream cheese on dried pickle then roll in pulverized beef. Again, allow to refrigerate 1-2 hours and slice as above.).
