PICKLED DILL CARROTS

7 medium carrots (about 1 1/4 pounds), sliced 1/4 inch thick
4 sprigs dill
3/4 cup white wine vinegar
1/3 cup sugar
Kosher salt
1 teaspoon dill seeds
1/2 teaspoon caraway seeds
Coarsely ground pepper

Steps:

  • Bring a medium pot of water to a boil. Add the carrots and cook until crisp-tender, about 1 minute. Drain and rinse under cold water until cool. Pack the carrots and dill sprigs into a 1-quart jar.
  • Make the brine: Combine the vinegar, 3/4 cup water, the sugar, 2 1/2 teaspoons salt, the dill seeds, caraway seeds and 1/4 teaspoon pepper in a medium saucepan and bring to a boil.
  • Pour the hot brine into the jar and let cool completely. Cover and refrigerate overnight or up to 1 week.

1/4 cup kosher salt
10 black peppercorns
10 coriander seeds
1 head of garlic, unpeeled, cut in half crosswise
3 quarts (about 2 pounds) small baby carrots, any stems trimmed to 1/2 inch
5 small fennel bulbs, trimmed, fronds reserved, sliced lengthwise inch thick
5 sprigs fresh dill
3 fresh New Mexico (Anaheim) chiles, sliced, seeds left intact

Steps:

  • In a small saucepan over high heat, bring 2 cups water to a boil. Remove from the heat and add the salt, peppercorns, coriander, and garlic. Let cool and then add the mixture to 2 quarts cold water.
  • Layer the carrots, fennel, dill, and chiles in a crock or a large glass jar. Pour the brine over the vegetables, covering them completely. Put a small plate on top so that it keeps everything submerged. Store in a cool (65° to 70°F is ideal), dark room for about a week, checking every day or so and skimming off any mold or foam that rises to the top. The pickles are done when they are pleasantly sour and tangy but still firm. Refrigerate for up to 3 weeks.

  • Prepare carrots by peeling, then slicing into a shape of your choice. I'd suggest 1/4 inch circular slices, 1/4 inch sticks, or grated carrots.
  • Place spices into the bottom of a jar and pack carrots in on top of the spices, leaving 1-inch headspace. (See note for Mexican Pickled Carrots.)
  • Prepare a brine by bringing the vinegar, water, salt, and sugar to a boil on the stove. Pour the boiling brine over the carrots in the jars, maintaining a 1-inch headspace. Seal and store in the refrigerator. They'll be ready to eat in 24 to 48 hours and should keep for 3-4 weeks in the refrigerator.
  • Prepare a water bath canner before beginning and bring it up to a simmer (around 180 degrees F) for hot pack canning.

  • Peel and cut the carrots into thin sticks, about 1/4-inch thick (if you prefer, you can slice them into rounds instead). Fill the jar with the sticks.
  • Peel the garlic cloves and slice them in quarters. In a small saucepan, combine the garlic, vinegar, water, sugar, kosher salt, peppercorns and bay leaf. Once boiling, remove from the heat and pour the brine into the jar. Tap the jar on the counter to release any air bubbles. Discard any remaining brine.
  • Screw on the lid tightly and allow to cool to room temperature, about 1 hour. Refrigerate 24 hours, then enjoy. You may want to remove the garlic after 24 hours, as the flavor intensifies over time (or leave it if you’re a garlic lover). Keeps up to 1 month refrigerated.
