My husband used to claim this entree as his specialty until I made it and discovered how quick and easy it is. Our two sons love the juicy chicken while my husband and I enjoy the twist that brown sugar and mustard give the picante sauce.

4 boneless skinless chicken breast halves (4 ounces each)
1 jar (16 ounces) picante sauce
3 tablespoons brown sugar
1 tablespoon prepared mustard
Hot cooked rice, optional

Steps:

  • Place chicken in a greased shallow 2-qt. baking dish. In a small bowl, combine the picante sauce, brown sugar and mustard; pour over chicken. , Bake, uncovered, at 400° for 30-35 minutes or a thermometer reads 170°. Serve with rice if desired.

1/4 cup honey
1/2 teaspoon ground ginger
12 chicken wings (tips removed) or 24 chicken drumettes

Steps:

  • Stir the picante sauce, honey and ginger in a large bowl.
  • Cut the wings in half at the joints to make 24 pieces. Toss the wings with the picante sauce mixture. Place them in a foil-lined shallow baking pan.
  • Bake at 400 degrees F for 55 minutes or until they're glazed and cooked through, turning and brushing often with the sauce during the last 30 minutes of baking time. Discard any remaining sauce.

This is an easy recipe that I use when ingredients in my house are limited. The picante sauce and Dijon mustard complement each other. Serve over cooked rice if desired.

½ cup picante sauce
¼ cup Dijon-style prepared mustard
2 tablespoons lemon juice
6 skinless, boneless chicken breast halves

  • In a large glass bowl combine the picante sauce, mustard and lemon juice. Add chicken and toss to coat. Cover and marinate in the refrigerator for 30 minutes.
  • Heat olive oil in a large skillet. Remove chicken from marinade and saute in hot oil until well browned on both sides. 12 chicken wings, disjointed (freeze tips for soup, about 1 pound)
3/4 cup hot picante sauce
1/3 cup catsup
1/4 cup honey
1/2 teaspoon ground cumin
1/4 cup hot picante sauce
2/3 cup sour cream

Steps:

  • Preheat oven to 375°F.
  • Combine 3/4 cup picante sauce with catsup, honey and cumin.
  • Pour over wings, cover and marinate in refrigerator 1 hour or more, turning at least once.
  • Place wings on a foil lined broiler pan, reserving marinade.
  • Bake 30 minutes.
  • Baste with marinade, bake 15 minutes, brush with marinade and bake another 15 minutes.
  • Turn heat up to broil, place pan 6 inches from broiler, cook 2 minutes per side.
  • Combine 1/4 cup picante sauce with sour cream and serve with wings.

1/2 cup medium salsa
1/4 cup Dijon mustard
1 lime, juice of
6 boneless chicken breasts
2 tablespoons butter

Steps:

  • Mix the salsa, mustard and lime juice in a large bowl or ziploc bag.
  • Add the chicken, turning to coat with the marinade. Let it marinate in refrigerator at least 30 minutes.
  • Melt butter in a large skillet over medium heat until foamy.
  • Drain chicken saving the marinade. Add chicken to skillet in a single layer. Cook 10-15 minutes till the chicken is a light brown on both sides. Add the reserved marinade to skillet and cook 5-10 minutes or until chicken is done.
  • Remove chicken to a serving platter; keep warm. Boil marinade in skillet over high heat 1 minutes; pour over chicken. Top with sour cream and chopped green onions.

2 tablespoons fresh lemon juice
1 teaspoon fresh ground black pepper
1 teaspoon garlic salt
1/2 teaspoon kosher salt
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
4 tablespoons butter, melted

Steps:

  • Preheat the oven to 500°.
  • Line a large rimmed baking sheet with Release aluminum foil, then spray with non-stick spray.
  • In a large mixing bowl, combine the wings and the lemon juice and mix thoroughly.
  • Mix together pepper, garlic salt, kosher salt and thyme and add to wings.
  • Mix again.
  • Add the cayenne pepper to the melted butter and add to wings.
  • Mix thoroughly a final time.
  • Then transfer the wings to the prepared baking sheet, and arrange them in one layer.
  • Roast in the oven for 10 minutes.
  • Drain juice from pan and return to oven and roast for 10 minutes longer.
  • Turn wings over and cook for 10 more minutes or until nicely browned.
  • Serve the wings as they are or with your favorite dipping sauce.

It's so easy to create quick and tasty dishes with chicken. I created this one night when I had peppers that needed to be used up. I needed something quick, and to please the family there had to be some heat. We use medium or hot picante sauce, but you could use mild.

4 boneless skinless chicken breast halves
1 teaspoon seasoning salt, to taste (I use SeasonAll)
2 tablespoons butter
1 onion
1 clove garlic, minced
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
1 cup picante sauce (your favorite - home made or store bought like Pace - the heat of this sauce determines the heat of)

Steps:

  • Pound the chicken breast halves with a meat mallet until uniformly about 1/4" thick.
  • Sprinkle them with a generous coating of seasoned salt on one side.
  • Melt butter in a skillet and saute the chicken breast halves until golden brown, about 3- 5 minutes per side.
  • Slice onion into 1/4" thick slices and quarter the slices.
  • Cut all peppers into strips about 1/4" wide.
  • Add onion, garlic and peppers to the sauteed chicken breasts and saute for a few minutes.
  • Add the picante sauce over the top of the chicken and vegetables.
  • Cover and simmer for about 5- 10 minutes, until vegetables are tender.
  • Serve over hot cooked rice.
