8 sage leaves (optional)
4 pheasant breasts (2 birds)
1/4 cup all-purpose flour
1 tbsp. butter
8 oz. mushrooms, chopped
1 medium shallot, sliced
1/4 cup white wine
1 cup chicken stock
1/2 cup heavy cream
Pinch of nutmeg
Salt and pepper
Cooking oil

Steps:

  • Spread the flour across a plate. Season the pheasant with salt and pepper on both sides, then dredge in flour. Shake away the excess flour and set aside.
  • Heat a large sauté pan over medium-high heat. Add 1-2 tbsp. of oil, or enough to coat the bottom of the pan in a thin layer. Use tongs to lay each sage leaf into the oil. Fry leaves for 15-30 seconds per side and remove to a paper towel.
  • In the same pan, lay down each pheasant breast to sear. Allow them to cook undisturbed until golden brown, about 2 minutes per side. Remove and set aside.
  • Reduce the heat to medium and add 1 tbsp. of butter to the hot pan. When it has melted and begins to foam, add the mushrooms and shallot. Sauté the mushrooms until they are golden brown.
  • Deglaze the pan with white wine and chicken stock. Increase the heat and bring to a soft boil. Reduce these liquids in half.
  • Pour in the cream and reduce the sauce for another 2-3 minutes. Taste and season with a pinch of nutmeg, salt, and pepper.
  • Return the pheasant breasts back to the pan and reduce the heat to low. Cook for an additional minute or until the pheasant is cooked through and is warm. Serve over wild rice with the mushroom-cream sauce and fried sage.

The original of this is in The Encyclopedia of Creative Cooking edited Charlotte Turgeon. I only had one chance to try cooking pheasant, and this is the recipe I used. While the original recipe calls for clear stock, and that's what I have written in my "family cookbook" I think I may have used chicken broth instead. I have to admit that I'm not sure, as it was so long ago. I served the pheasant with peas and pearl onions, mashed potatoes, and we had baked Alaska for dessert.

4 tablespoons butter or 4 tablespoons margarine
1 pheasant
2 tablespoons flour
1/2 cup clear stock
1/2 cup white wine
seasoning

Steps:

  • Melt butter or margarine in a heat-proof Dutch oven.
  • When hot, sauté the pheasant gently all over until it's golden brown.
  • Remove the bird.
  • Add flour, stock and wine, blend smoothly.
  • Bring to a boil and add seasoning.
  • Return bird to the Dutch oven and cover.
  • Cook in preheated 350 degree oven, turning bird while cooking, for 35 to 40 minutes, or until bird is tender.

My grandfather was a dentist. He traveled up the Missouri River by keel boat to Fort Benton, bringing the first tooth xray to Montana before Montana became a state. I never knew him,but cousins have discovered his old recipes cooked for the Gentlemen Dinners for him and other professional members of community. I have made this for four servings.

4 pheasants, drawn
1/2 cup vinegar
4 slices lean bacon
4 small yellow onions, peeled & quartered
1 cup red wine or 1 cup rhubarb wine
1/2 cup butter
salt & pepper
1 dash sugar

Steps:

  • In a crockery bowl, add vinegar.
  • Add one pheasant at a time, and coat inside and outside with vinegar. Set on a plate to drain.
  • Rub pheasants with butter inside and out.
  • Place yellow onion quarters in each pheasant.
  • Place 4 slices of bacon in the bottom of a cast iron dutch oven.
  • Stoke the oven on medium to high heat.
  • Regular oven about 380*.
  • Salt and Pepper pheasants.
  • Place them on top of the bacon in dutch oven.
  • Roast uncovered for 30 minutes.
  • Taste the wine. If it is not sweet enough, add the dash of sugar and stir.
  • Baste the wine on the birds after they
  • have cooked for 20 minutes. Move them apart so that each side gets browned. Baste again.
  • in ten minutes.Use all the wine.
  • Check in 40 minutes with a fork, if juices run clear, pheasants are done. Throw away the bacon, or crush for another day and put in the larder. Wipe out dutch oven and hang.
  • Serve pheasants with roasted potatoes and poached apples.

This recipe uses wild pheasant. It came from my grandmother to my mother to me. We traditionally served this recipe at Thanksgiving (during pheasant season). During cooking, it forms a sauce or gravy that thickens best if stirred just a little when the sherry is added.

1 pheasant, cleaned and cut up
1 1/2 cups water
1 clove garlic
1 medium-size onion, sliced and separated into rings
1 (4 ounce) can mushroom pieces (can also use buttons)
6 pieces rosemary
1/4 teaspoon dry parsley flakes
2 ounces cooking sherry

Steps:

  • Roll cut-up bird pieces in flour and brown in hot oil.
  • Place browned pieces in baking dish and add remaining ingredients, except sherry, in order listed.
  • Simmer in 300 degree oven for 2 to 2 1/2 hours or until tender.
  • Pour cooking sherry over bird about the last hour of cooking.
