WATERMELON PICO DE GALLO
Steps:
- In a food processor, place the watermelon, cilantro, pineapple, cucumber, jalapeno, lime juice, tomato, sea salt, cayenne and black pepper. Pulse to the desire salsa consistency, then transfer to a bowl. Stir in the pine nuts. Adjust the salt and pepper to taste. Chill for 30 minutes. Serve cold.

Most normal people would call it Watermelon Salsa. And technically, that would be correct. Salsa, after all, is technically a garnish or sauce made with uncooked vegetables or fruit. But salsa, to me, is...well, salsa. Pureed. Liquidy. Saucy. The soupy stuff you dip your chips in. Now, Pico de Gallo, on the other hand, is chunky. Colorful. Lovely, gorgeous, and fresh." Steps:
- Chop or dice all watermelon, cilantro, onions and peppers. Seed and take out the membranes of the jalapenos and finely dice. Measure salt. Squeeze the lime juice into the large bowl.
- Throw the jalapenos, cilantro, bell peppers, red onions and watermelon into a large bowl with lime juice and toss together. Add the salt, taste with a chip and adjust as needed.
