1/2 cup seasoned dry bread crumbs

Steps:

  • Heat oven to 350°F.
  • Place chicken, top sides down, on work surface; spread with mustard. Top with ham and cheese. Roll up tightly, starting at one short end of each.
  • Dip chicken in egg product, then roll in bread crumbs until evenly coated on all sides. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray.
  • Bake 40 to 45 min. or until chicken is done (165°F), covering after 25 min.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

4 slices of cheese, preferably Swiss
1 egg, beaten
1/4 cup all purpose flour
1 cup italian breadcrumbs or ordinary plain crumbs
salt and pepper
3-4 tablespoons butter
1 tsp white onion, minced
3 tablespoon flour
1 cup milk
1/4 cup Parmesan cheese and/or Gruyere and/or Cheddar
1 teaspoon chopped parsley
1/2 tsp Dijon mustard
1/4 tsp nutmeg
salt and pepper

Steps:

  • Chicken: * Pound the chicken fillet with a wooden meat tenderizer or you may put inside a wax paper or a plastic bag, then use a rolling pin to flatten the fillet into 1/4 inch thick. * Lay out the chicken then season with some salt and pepper. Layer some ham or bacon and cheese on top of the fillet, then roll the chicken tightly. Use toothpicks to secure the ends. * Dredge the chicken roll in flour, coating all sides then shake off the excess. Dunk in the beaten egg, then in the breadcrumbs. * Place the chicken roll on a greased pan. Top with butter. Then bake in 350 deg F or 177 deg C for 35 minutes. Mornay Sauce: * Melt the butter in the saucepan, then stir in the flour, until well blended. Gradually add some milk and keep stirring until the misture becomes well blended and even, and until the sauce thickens. * Add in the cheese, mustard, salt, and pepper. Remove from heat, when the cheese melts and the sauce comes to boil. Assemble in your plate. Slice the chicken roll, and drizzle our pour in your sauce. Add sauteed vegies on the side... 3 tablespoons flour
1 teaspoon paprika

This classic French chicken dish, adapted from Jane and Michael Stern's book "American Gourmet," more than lives up to its name ("cordon bleu" means "blue ribbon"). It's also far easier to make than you may think. A chicken breast is pounded thin (we've been known to cheat by using pretrimmed cutlets), then wrapped around a slice of smoked ham and a bit of Swiss cheese, and secured with toothpicks. The roulade is coated in egg and bread crumbs, then pan-fried until golden brown, and a simple white wine cream sauce finishes it off.

4 large boneless and skinless chicken breast halves (about 1 1/2 pounds)
4 thin slices smoked ham
2 ounces Swiss cheese, cut into 4 equal "fingers"
1/4 cup flour
1/2 teaspoon salt

3/4 cup fresh bread crumbs
1/4 cup unsalted butter
3/4 cup plus 2 tablespoons chicken stock
3/4 cup white wine, heavy cream or additional chicken stock

  • Lay the chicken breasts between pieces of wax paper and use a mallet to pound them to 1/4 inch to 1/8 inch thick. Take care not to pound holes in the chicken. Layer each breast with the ham, then place a finger of cheese in the center. Roll up to completely enclose the ham and cheese and secure with toothpicks.

1 bay leaf
2 teaspoon mild curry powder
1 teaspoon double-concentrated tomato paste
60 ml red wine
60 ml water
1 tablespoon fresh lemon juice
1/4 teaspoon brown sugar
200 g mayonnaise
125 g creme fraiche (or unsweetened whipped cream)
1 tablespoon dried apricots (finely chopped)
2 large skinless chicken breasts ((600 g or 6 cups) cooked and shredded or cut into chunks)
salt & pepper to taste
3 tablespoon toasted almond flakes ( (optional))

Steps:

  • Heat the extra-virgin olive oil in a large frying pan over medium-low heat.
  • Add in the onion, bay leaf and curry powder and gently cook for 2 minutes.
  • Add in the tomato paste, red wine and water and bring to a gentle boil.
  • Add in the lemon juice and a pinch of sugar, then season with salt and freshly cracked black pepper to taste.
  • Simmer for 2 minutes, until the sauce is slightly reduced, then remove from the heat. Strain the sauce through a fine sieve and allow it to cool.
  • In a large bowl mix together the prepared sauce with the mayonnaise, creme fraiche and finely chopped apricots.

Steps:

  • In a small bowl, stir together the cream cheese, Dijon mustard and mayo (or sour cream) until smooth.
  • For each sandwich: spread sauce on both sides of the bread (I spread a light coating on the outside of the bread and a more generous dollop on the inside of both pieces). Sprinkle the outside of each piece of bread with a bit of salt and pepper or a garlic/herb seasoning blend and place the pieces of bread seasoning side down.

Kosher salt and freshly ground pepper
6 ounces thinly sliced Swiss cheese
6 ounces thinly sliced ham
1/2 cup unbleached all-purpose flour
2 large eggs
1 1/4 cups panko breadcrumbs
1/4 cup safflower or other neutral-flavored oil

Steps:

  • Use a sharp knife to slice a chicken breast horizontally, starting at the thickest part and cutting almost to the other side (do not cut all the way through) until, when opened, breast lies flat. Place between two pieces of plastic wrap. Pound to an even 1/4 inch thick. Remove top layer of plastic; season with salt and pepper. Repeat with remaining chicken. 4 skinless, boneless chicken breasts
60g/2¼oz emmental cheese
4 thin slices smoked ham (roughly 130g/4½oz)
8 tsp cranberry sauce
25g/1oz plain flour
2 medium free-range eggs
200g/7oz golden breadcrumbs
5 tbsp sunflower oil
flaked sea salt and freshly ground black pepper

Steps:

  • Put the chicken breasts on a board. Using a sharp knife, remove the mini-fillet and reserve to one side. Carefully cut horizontally through each breast from the straighter side almost all the way through to the other side and open out like a book. Cut the cheese into four rectangles, each around 1.5cm/½in wide and roughly half the size of a small matchbox.
  • Take one of the opened breasts and its mini fillet and place between two sheets of cling film. Flatten both by bashing with a rolling pin until around 5mm thick all over. Remove the top layer of cling film and cover the flattened fillet with one slice of ham. Place a chunk of Emmental in the middle of the ham slice and top with two teaspoons of the cranberry sauce.
  • Use the flattened mini-fillet of chicken to cover the fillings and then carefully wrap the chicken breast up by bringing the pointy end of the chicken breast up over the cheese to insure it's tucked neatly inside and, using the bottom layer of cling film, roll the breast up tightly and neatly insuring the cling film remains on the outside of the chicken to create a parcel.
  • Repeat the same method with the remaining three chicken breasts and put to one side.
  • Sprinkle the flour onto a large plate and season with a couple of pinches of salt and lots of freshly ground black pepper. Whisk the eggs together in a shallow bowl. Scatter 50g/1¾oz of the breadcrumbs onto a large plate.
  • Dust one of the stuffed chicken breasts thoroughly in the seasoned flour and pat lightly to remove any excess. Roll the floured chicken in the egg and give it a light shake.
  • Place the chicken on the plate with the breadcrumbs and turn a couple of times, pressing with the breadcrumbs until well coated. Dip back in the egg and then coat in the breadcrumbs once more. This will make sure your crust is really crisp. Put the chicken on a baking tray and leave to stand.
  • Flour, egg and coat the remaining chicken breasts in exactly the same way. You'll need to add 50g/1¾oz of the breadcrumbs to the plate for each breast, throwing away the remaining crumbs from the previous batch as they will be very sticky. (The chicken breasts can now be covered and popped in the fridge until you are ready to cook them.)
  • Preheat the oven to 220C/425F/Gas 7. Heat the sunflower oil in a large non-stick frying pan. Fry the chicken breasts over a medium high heat for 1-2 minutes on all four sides, or until golden-brown.
  • Transfer the chicken to a baking tray and finish cooking in the oven for 25 minutes, or until the chicken is hot and thoroughly cooked - there should be no pinkness remaining. Serve immediately so that the cheese oozes out as it is cut.

  • Place a rack in middle of oven; preheat to 375°. Trim any fat around edges of chicken. Working one at a time, place chicken between sheets of parchment paper and pound with a mallet or rolling pin until about ¼" thick. Season chicken all over with salt and pepper.
