Late September is a great time to enjoy the harvest from local apple orchards. Our city hosts the annual Applejack Festival, which draws thousand to try various apple specialties. These apple cinnamon muffins are one of my favorites. -Judi Klee, Nebraska City, Nebraska

Number Of Ingredients 17

1-1/2 cups all-purpose flour
1/2 cup sugar
1-3/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 egg
1/2 cup milk
3 tablespoons vegetable oil
3 tablespoons applesauce
1 medium tart apple, peeled and grated
TOPPING:
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
2 tablespoons cold butter
1/2 cup old-fashioned oats
1/4 cup finely chopped nuts

Steps:

  • In a bowl, combine the first six ingredients. In another bowl, combine the egg, milk, oil and applesauce. Stir into dry ingredients just until moistened. Fold in apple. Fill greased or paper-lined muffin cups two-thirds full. For topping, combine brown sugar and flour. cut in butter until crumbly. Stir in oats and nuts. Sprinkle over muffins. Bake at 400° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
⅓ cup vegetable oil
1 egg
⅓ cup milk
2 apples - peeled, cored and chopped
½ cup white sugar
⅓ cup all-purpose flour
½ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

350 grams (2 and 1/2 cups) plain flour or all purpose flour
3 level teaspoons baking powder
200 grams (1 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
2 small red apples (approximately 2 cups), roughly chopped
120 ml (1/2 cup) vegetable oil
1 teaspoon vanilla extract
2 large eggs
240 ml (1 cup) buttermilk*
1 tablespoon butter, melted
1 teaspoon cinnamon
1 and 1/2 tablespoons caster sugar or granulated sugar

Steps:

  • Preheat the oven to 200 C (390 F) standard / 180 C (350 F) fan-forced. Grease a 12-hole muffin pan well with butter or olive oil spray or line with cupcake liners.
  • In a large mixing bowl, add flour, baking powder, sugar and cinnamon and whisk briefly. Add chopped apples. Stir just to cover the apple pieces in the flour mixture.
  • To a small bowl, add oil, vanilla and eggs whisk briefly just to break up the egg yolks. Make a well in the middle of your dry ingredients, add the wet ingredients, along with the buttermilk.
  • Very gently fold until the mixture is just combined - be careful not to over mix or your muffins will be tough.
  • Spoon out the mixture into your prepared tin. Depending on how much apple you added, you might be able to squeeze 14 muffins out of this batch.
  • Bake for 5 minutes before turning down the heat to 180 C (350 F) standard / 160 C (320 F) fan-forced and bake for a further 13-15 minutes or golden brown on top and a skewer inserted into the middle comes out clean.

1 (18 1/4 ounce) box yellow cake mix (make sure it has pudding in the mix)
1 teaspoon baking powder

2 apples, peeled, cored and chopped (type doesn't matter)
2 tablespoons butter, melted (after muffins have cooled)

  • Preheat oven to 375.
  • Grease muffin cups generously or line with paper liners.

Steps:

  • In a small mixing bowl, whisk together the flour, brown sugar, cane sugar, and cinnamon until combined.
  • Stir in the melted butter until incorporated, then use your fingers to form thick crumbs. Set aside.
  • Preheat the oven to 425℉. Line a 12-cup muffin tin with paper liners or lightly grease with butter or nonstick baking spray. Set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  • Using a stand up mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes.
  • Turn the mixer down to low, and add the eggs, one at a time, followed by the vanilla, mixing well after each addition. Scrape down the sides of the bowl with a spatula as needed.
  • Add the flour mixture to the mixer along with the chopped apples, and switch to a spatula to mix until just combined. Be careful not to over mix. The batter will be very thick.
  • Use a medium cookie scoop to divide the batter between the prepared muffin cups. Top with the streusel, pressing the crumbs gently into the tops of the muffin batter.
  • Bake at 425℉ for 5 minutes, then turn the oven temperature down to 350℉, and continue baking for another 12-15 minutes, until the muffin tops are golden and a cake tester inserted into the center comes out clean.
  • Remove from the oven, and allow the muffins to cool for a few minutes in the muffin tin, before transferring to a baking rack to cool completely.
  • In a small mixing bowl, whisk together the confectioners sugar, milk, and vanilla until smooth. Drizzle over the warm muffins. Enjoy!!

  • 1. Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases.
  • 2. In a small sauce pan place sultanas and apple table spoon of water, cinnamon/ginger and 1 table spoon of soft brown sugar bring to a simmer about 5 min then leave to cool
