This is a recipe, untried by me as yet, from a cookbook I received from my swap partner, Lauralie41. It was submitted to "A Taste of Indiana" by Dorothy D. Bisel. Here is what she stated about the recipe: "I collected this recipe many years ago from a friend who secured this recipe from a French chef. This is such a great recipe that I am glad to share it with others." I love waffles and can't wait to try them. I plan to also try making them with lower fat ingredients such as light sour cream (could even use non-fat yogurt) and low fat milk. Note: This doesn't give amount of servings so mine is just a guess right now.

1 tablespoon water
1 teaspoon baking soda
16 ounces sour cream
1/2 cup butter, softened (1 stick)
1 cup flour
3 egg yolks
2 teaspoons baking powder
1/2 cup milk
3 egg whites, stiffly beaten

Steps:

  • Combine baking soda and water, stir to dissolve. Add to next 6 ingredients in a medium bowl; mix until smooth. Fold in beaten egg whites; cook in a preheated waffle iron for 2 to 3 minutes or until done.

2 cups cake flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup sour cream
2 large eggs, separated
3/4 cup milk
1 teaspoon vanilla extract
1 stick unsalted butter, melted, plus more for the waffle iron
1/4 cup vegetable shortening, melted
2 tablespoons packed dark brown sugar
Maple syrup, for topping

Steps:

  • Preheat a waffle iron. Whisk the flour, baking powder, baking soda and salt in a large bowl until combined. Whisk the sour cream, egg yolks, milk and vanilla in a medium bowl until smooth, then whisk in the melted butter and shortening.
  • Beat the egg whites in a separate large bowl with a mixer on medium-high speed until soft peaks form, about 3 minutes. Sprinkle in the brown sugar and continue beating until stiff glossy peaks form, about 4 more minutes.
  • Make a well in the center of the flour mixture, then gradually whisk in the sour cream mixture until just combined. Fold in the beaten egg whites until incorporated.
  • Brush the waffle iron with melted butter. Add 1/4 to 1/2 cup batter and cook according to the manufacturer's instructions. Repeat with the remaining batter, brushing the waffle iron with more butter between batches. Serve with syrup.

CORNMEAL WAFFLES WITH BLACKBERRY SYRUP



Cornmeal Waffles with Blackberry Syrup image

These cornmeal waffles with blackberry syrup are not your typical breakfast waffles. Cornmeal waffles are a little crispier than the standard variety, and the blackberry syrup adds rich, tangy sweetness. The syrup is quite simple to make and is best served warm. Any leftover waffles can be saved in the fridge and reheated in a toaster oven-restoring them to fluffy perfection!

1 cup all-purpose flour (135 grams)
1 cup yellow cornmeal (123 grams)
2 tablespoons light brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1 cup full fat buttermilk (236 milliliters)
1 cup sour cream (227 grams)
4 tablespoons unsalted butter, melted (56.5 grams)
2 large eggs
Cooking spray, for greasing
1 cup fresh blackberries (160 grams)
1/2 cup maple syrup (118 milliliters)
1 tablespoon unsalted butter
1 tablespoon lemon juice

Steps:

  • For the cornmeal waffles: Whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl. Set aside.
  • Combine the buttermilk and sour cream in a 2-cup measuring cup. Make a well in the dry ingredients and add the buttermilk mixture, melted butter and eggs. Mix until well combined, then allow to rest for 10 minutes.
  • Meanwhile, preheat a waffle iron (to medium-high heat if the waffle iron has a heat setting). Grease the waffle iron with cooking spray. Working in batches, add the batter in 1/2 cup increments or the amount recommended by the waffle iron manufacturer and cook according to the manufacturer's instructions. Transfer to a platter or plates.
  • For the blackberry syrup: Put the blackberries and maple syrup in a small saucepan over medium heat and cook until simmering, about 1 minute. Mash the blackberries with a potato masher until broken down and their juices are released. Cook until warmed through, about 1 minute. Stir in the butter and lemon juice and serve warm.
  • Serve the waffles with the warm blackberry syrup.

Steps:

  • Heat a waffle iron according to manufacturer's directions.
  • While the waffle iron is heating, in a large bowl whisk the flour, sugar, baking powder and salt; make a well in the center of the mixture.
  • In a medium bowl, whisk the vegetable oil, milk, sour cream and egg substitute together; pour into the well you made in the dry mixture.
  • Whisk just until smooth; do NOT over mix; then lightly oil the grids or waffles may stick slightly.
  • Check the manufacturer's directions for how much batter to use per waffle; otherwise, spoon about ½ cup of the batter onto the center of the lower grid of the hot waffle iron and close the iron.
  • Cook until the waffle is golden brown, 3-4 minutes or per the manufacturer's instructions; My waffle iron (Fiesta 6 inch round) has a light that turns OFF when the waffle is done.
  • Serve the waffles hot with real maple syrup or your favorite fruit, whipped cream or fruit preserves.
  • NOTE: The cooktime is the time it takes to cook the entire batch.

4 eggs
1 cup milk
10 tablespoons unsalted butter, melted
1 cup sour cream
2 cups all-purpose flour
2 1/4 teaspoons baking powder
3/4 teaspoon baking soda
5 tablespoons granulated sugar
3/4 cup fresh blueberries, plus more for garnish
confectioners' sugar, for dusting
maple syrup, for serving

Steps:

  • Preheat the waffle maker on medium-high heat. Preheat an oven to 200 degrees F (95 degrees C).
  • In a large bowl, whisk the eggs, then whisk in the milk, butter and sour cream. Over a sheet of waxed paper, sift together the flour, baking powder, baking soda and sugar. Add the flour mixture to the egg mixture and whisk until smooth. Stir in the 3/4 cup blueberries.
  • Pour about 1/3 cup of batter into each well of the waffle maker and close the lid. Cook the waffles until golden brown and crisp, about 6 minutes. Transfer the waffles to a wire rack set on a baking sheet and keep warm in the oven. Repeat to cook the remaining batter.
  • Garnish the waffles with blueberries, dust with confectioners' sugar and serve hot with maple syrup.

5 large eggs
1/2 cup sugar
1 cup all-purpose flour
1 teaspoon coarse salt
1/2 teaspoon ground ginger, cinnamon, or cardamom
1 cup sour cream
4 tablespoons (1/2 stick) unsalted butter, melted and cooled
Vegetable oil or extra melted butter, for the waffle iron
1 cup berries, fresh or frozen, heated before serving

Steps:

  • Beat the eggs and sugar together for 5 to 8 minutes. When the beater is lifted, it should trail a ribbon of batter.
  • Whisk together the flour, salt, and spice. With a spoon, alternately fold into the batter half of the flour mixture. the sour cream, and finally the remaining flour mixture. Lightly stir in the melted butter. Let the batter sit for 10 minutes.
  • Heat a nonstick or well-seasoned waffle iron to medium high. Brush lightly with oil or melted butter. Pour in 1 1/4 cups batter and cook until golden, 2 1/2 to 3 minutes per side for a stovetop waffle iron. An electric waffle iron will beep when ready. Serve with fresh berries or berry sauce on top.

3 Tbsp butter or margerine
3/4 c fresh blackberries, washed and dried
4 Tbsp sugar, divided
1 3/4 c all- purpose flour
1 tsp baking powder
1/8 tsp salt
2 eggs
3/4 c milk ( i use 2%)
1 c sour cream
non-stick cooking spray

Steps:

  • 1. Melt butter in the microwave oven. In a small bowl, combine the berries with 2 TBS. sugar.
  • 2. In a medium bowl, combine the flour, baking powder, salt and the remaining 2 TBS. of sugar.
  • 3. In another medium bowl, whisk the eggs lightly and stir in the milk, sour cream and melted butter.
  • 4. Stir the liquid ingredients into the dry ingredients and mix until just blended. Do Not over-blend. Add the berries and stir once or twice.
  • 5. Allow your Waffle Grill to preheat on high. when hot, coat the plates with nonstick cooking spray. Spoon about 1/3-cup of the batter onto waffle plate. cook for about 3 1/2 minutes. Wipe plate clean and repeat with remaining batter. keep in warmed oven or serve immed. with Syrup or Honey.
