GARLIC AND HERB BROILED TOMATOES

4 plum tomatoes
1 cup plain bread crumbs
1/3 cup grated Parmigiano-Reggiano
1 teaspoon chopped fresh thyme leaves
1 clove garlic, finely minced
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat broiler to medium high.
  • Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. In a bowl combine the bread crumbs, Parmigiano, thyme, garlic and olive oil. Season mixture with pepper and sprinkle over the tomatoes. Place tomatoes under the broiler for 5 minutes or until golden brown

2 large firm ripe tomatoes, sliced 1/2-inch thick
1/4 cup extra virgin olive oil
salt and pepper, to taste
2 tablespoons fresh oregano
1/2 cup feta cheese, crumbled

Steps:

  • Preheat broiler.
  • Lightly oil baking sheet.
  • Place tomato slices on this.
  • Drizzle slices with olive oil. Season with salt and pepper. Top with oregano and feta.
  • Broil for 3-4 minutes until feta is browned and tomatoes slightly softened.

4 large tomatoes
1 teaspoon sugar
1/2 teaspoon dried basil
1/4 teaspoon salt
1 dash pepper
1 cup soft breadcrumbs
2 tablespoons melted butter
1/4 cup crumbled blue cheese

Steps:

  • Cut stems off tomatoes and cut each tomato into 2 think slices (in half).
  • Put on broiler rack.
  • Combine sugar, basil, salt and pepper and sprinkle little of mixture on each tomato slice.
  • Add bread crumbs to melted butter and toss lightly with a fork.
  • Add blue cheese and toss again lightly.
  • Spoon on tomato slices and slip under broiler until crumbs are nicely browned, about 1 minute.
  • Serve Immediately.

2 large tomatoes, cut into 3/4-inch slices
1 tablespoon olive oil
½ teaspoon dried basil leaves
½ teaspoon dried oregano
1 clove garlic, minced
salt and ground black pepper to taste
⅓ cup soft bread crumbs
⅓ cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 dash balsamic vinegar

Steps:

  • Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
  • Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.
  • Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
  • Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
  • Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.

3/4 teaspoon kosher salt
fresh ground black pepper
1 tablespoon extra virgin olive oil
3 tablespoons chopped fresh herbs, such as thyme, rosemary, oregano or 3 tablespoons marjoram
1 tablespoon freshly grated parmesan cheese

Steps:

  • Season tomatoes with the salt and place seed-side down on a rack or paper towel to drain for about 30 minutes. Blot dry with a paper towel.
  • Position an oven rack in the upper part of the oven and preheat the broiler.
  • Line a broiler pan with foil.

Tomatoes make a lovely side for almost any protein. This easy recipe will work for Roma or Campari tomatoes. A little seasoning and grated Parmesan will complete this quick and easy dish that is on the table in minutes!

4 Roma tomatoes
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
½ teaspoon dried Italian herb seasoning
½ cup freshly grated Parmesan cheese
1 tablespoon fresh parsley

Steps:

  • Preheat a broiler according to manufacturer's recommendations. Line a baking sheet or small sheet pan with aluminum foil.
  • Slice tomatoes in half crossways. Slice thin slices off of the round part of the tomato halves so they will sit straight on the pan.
  • Place tomato halves on the prepared pan and sprinkle with salt, pepper, and Italian seasoning to taste.
  • Place seasoned tomatoes under the broiler and broil about 4 minutes. Be sure to watch carefully, so they won't burn.
  • Sprinkle 1 tablespoon grated Parmesan cheese on each tomato half, and return to the broiler.
  • Broil until Parmesan cheese is melted and bubbly, 45 seconds to 1 minute.
