Healthy Pesto Pasta With Vegetables image

Pesto pasta with vegetables is a simple, healthy side or main dish made with pasta, pesto, spinach, green beans and tomatoes. Packed with flavor and ready in 20 minutes.

Number Of Ingredients 9

1 cup orzo
large handful green beans, trimmed and cut into 1 inch pieces
3 cup baby spinach or kale, roughly chopped
10 cherry or grape tomatoes, cut in half
3 tablespoon pesto, bought or homemade ((Note 1))
1 tablespoon olive oil ((or 2 tbsp))
salt and pepper to taste
Optional: splash of lemon or lime juice
Garnish: goat cheese and/or Parmesan cheese

Steps:

  • BOIL ORZO AND GREEN BEANS: In a medium pot, bring water with a tablespoon of salt to a boil. Add orzo and boil for 5 minutes. Add green beans. Continue boiling for about 5 more minutes until orzo is soft and beans are tender, but both should still have a bit of 'bite' (al dente). Drain well, then add back to pot.
  • FINISH THE DISH: Add chopped spinach to orzo in pot and toss well until slightly wilted. Add tomatoes, pesto and enough oil to achieve the consistency you like. Season with salt and pepper to taste. And mix in a squeeze of lemon or lime juice if you like. Transfer to a serving bowl. Garnish with goat cheese and/or Parmesan cheese. Serve immediately or at room temperature.

Quick and easy to make this Orzo Pasta Salad is a summer favourite. This tasty pasta salad combines creamy feta, juicy cherry tomatoes and salty kalamata olives with orzo and a very quick lemon, pesto dressing.

180 g uncooked orzo (1 US cup + 1 tbsp)
1 1/2 tbsp extra virgin olive oil
3 tbsp toasted pine nuts (+ more for serving (optional))
1 small red onion (80g or 3/4 US firmly packed cup) (finely chopped)
12 kalamata olives (pitted and sliced)
100 g feta (1 US cup) (cut into small cubes)
150 g cherry tomatoes (5.5oz or 1 US cup) (cut into quarters)
The juice of half a lemon
2 1/2 heaped tbsp vegetarian green pesto
Black pepper and sea salt to season
A small handful of fresh basil (chopped)

Steps:

  • Cook 180g or 1 US cup of orzo according to the packet. Once cooked, drain in a colander then rinse under the cold tap. Stir in half a tablespoon of the extra virgin olive oil and leave the pasta to cool fully.Transfer to a large bowl or serving dish.
  • Add 2 tablespoons of pesto to a small bowl, pour in 2 tablespoons of extra virgin olive oil and the juice of half a large lemon, stir well.
  • Once the pasta has cooled add the chopped onion, cherry tomatoes, feta and the kalamata olives to the pasta.Pour the pesto dressing into the bowl then add the basil and pine nuts and toss carefully.
  • Season with cracked black pepper and sea salt to taste. The serve immediately.

Orzo with Summer Squash and Pesto image

There's still plenty of summer squash in the market. I like to dice it small for this dish, cook it with a little garlic and marjoram or mint and toss it with orzo, a pasta that looks like rice but tastes and feels like pasta. I love the textures of the two, and the pesto completes the dish. Make sure to dice the squash small so the pieces aren't much bigger than the grains of orzo.

1 tablespoon extra-virgin olive oil
1 garlic clove, minced
1 1/2 pounds zucchini or other summer squash, cut in 1/4-inch dice (about 4 cups)
2 teaspoons chopped fresh marjoram or mint
Salt and freshly ground pepper to taste
10 ounces (1 1/3 cups) orzo
1/3 cup basil or basil-mint pesto (1/2 batch)
Additional grated Parmesan or pecorino for serving

Steps:

  • Bring a large pot of water to a boil for the orzo and salt generously. Meanwhile, heat a large, heavy skillet over medium heat and add olive oil and garlic. Cook, stirring, until garlic is fragrant, about 30 seconds, and add summer squash. Turn heat up to medium high and cook, stirring often, until squash is tender and translucent, 8 to 10 minutes. Stir in marjoram or mint and season to taste with salt and pepper. Turn off heat.
  • When water in pot comes to a boil, salt generously and add orzo. Cook 9 minutes, until al dente. Stir 3 to 4 tablespoons of the cooking water into the pesto, then drain orzo and toss with squash. Heat through, add pesto, toss again and serve, passing more Parmesan or pecorino in a bowl.

Great summer salad, good for potlucks and picnics, size can be easily doubled or halved. Also adaptable to extra ingredients. I'm a purist but you could add garlic, olives, artichokes, sun dried tomatoes, chicken, anything you like. Salt heavily, it brings out the flavor of the mozzarella.

1 lb pasta
1 lb cherry tomatoes, quartered
8 ounces fresh milk mozzarella cheese (I used the little balls, but you can dice up a large ball)
1/2 cup thinly sliced basil
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
sea salt
fresh black pepper

Steps:

  • Boil pasta to box directions in liberally salted water. Drain well.
  • Quarter tomatoes, (and cheese if necessary) Slice basil very thin.
  • Combine tomatoes, cheese, and basil. Salt and pepper heavily.
  • Toss together with pasta, oil and vinegar.
  • Let rest an hour at least to combine flavors.
