1-1/2 pounds small red potatoes, halved
12 ounces uncooked whole grain spiral pasta
3 cups cut fresh or frozen green beans
1 jar (6-1/2 ounces) prepared pesto
1 cup grated Parmigiano-Reggiano cheese

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-10 minutes. Drain; transfer to a large bowl., Meanwhile, cook pasta according to package directions, adding green beans during the last 5 minutes of cooking. Drain, reserving 3/4 cup pasta water; add to potatoes. Toss with pesto, cheese and enough pasta water to moisten.

I've always loved the combination of pesto and warm potatoes. I usually just toss steamed potatoes with the sauce, but this time I sliced up some Yukon golds, tossed them with the pesto and made a gratin.

2 pounds Yukon gold potatoes
1/2 cup pesto or pistou
Salt
freshly ground pepper

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. Oil a 2-quart baking dish or gratin with olive oil. Slice the potatoes about 1/4 inch thick and place in a large bowl. Season to taste with salt and pepper, and add the pesto or pistou. Stir the mixture until the potato slices are evenly coated, then transfer to the baking dish, making sure to scrape all of the pesto out of the bowl.
  • Cover the baking dish with foil or a lid and place in the oven. Bake 30 minutes, then uncover and return to the oven. Bake another 15 to 20 minutes, until the potatoes are thoroughly tender, the olive oil in the dish - now a beautiful green - is sizzling, and the top is beginning to color. Serve hot or warm.

1 shortcrust pastry, - 1 sheet ready rolled with edges folded in to make a border
3 -4 tablespoons pesto sauce
grated parmesan cheese
400 g new potatoes, thinly sliced
1 egg
shredded basil

Steps:

  • Heat oven to 190 degrees celsius.
  • Simmer sliced potatoes for 3 minutes,drain,set aside.
  • Spread pasrty base with pesto.
  • Sprinkle with parmesan - as much or as little as you like.
  • Lay sliced potatoes over top of cheese.
  • season with salt and ground pepper.
  • Glaze pastry borders with beaten egg.
  • Bake 35-40 minutes till pastry is golden and crisp and potatoes are tender.
  • Sprinkle with basil.

800g waxy potatoes , halved if large
1 small red onion , halved and sliced
200g bag spinach leaves
3 tbsp olive oil
2 tbsp pesto
juice 1 lemon

Steps:

  • Boil the potatoes for about 15 mins or until tender. Drain, then return to the pan and roughly crush with a fork.
  • Tip in the onion and spinach leaves. Pour over the olive oil, pesto and lemon juice, season to taste and toss to coat everything in the dressing. Serve warm with sausages, chicken or a steak.

A low-calorie Spanish omelette with potatoes, pesto and cheese to be served in wedges with fresh salad leaves

4 medium potatoes (about 600g/1lb 5oz), thinly sliced
1 garlic clove , finely chopped
8 large eggs , lightly beaten
1 tbsp olive oil
100g pack soft rindless goat's cheese , sliced
3 tbsp pesto
handful rocket leaves
tomato and basil salad, to serve (optional)

Steps:

  • Boil the potatoes in salted water for 5 mins until just tender. Meanwhile, heat oven to 220C/200C fan/gas 7. Mix the garlic and eggs together with some seasoning, then drain the potatoes and stir into the egg.
  • Heat the oil in an ovenproof frying pan, then tip in the egg and potato mixture. Cook over a low heat for 5 mins or until two-thirds of the frittata is set, then cook in the oven for 10-15 mins until cooked through.
  • Arrange the goat's cheese round the edge of the frittata and drizzle with the pesto. Top with rocket and serve with a tomato & basil salad, if you like.

250g spelt flour
125g cold butter , cubed
25g gruyère (or vegetarian alternative), finely grated
1 egg yolk , beaten
2 small sweet potatoes , peeled
2 courgettes (1 green and 1 yellow looks nice)
1 small aubergine
juice 1 small lemon
250g mascarpone
2 eggs
150g rocket pesto (make your own, or use a good shop-bought one)
25g fresh breadcrumbs
100g gruyère (or vegetarian alternative), grated
small bunch thyme , leaves picked
2 tbsp olive oil

Steps:

  • First, make the pastry. Tip the flour into a bowl with 1/ 2 tsp salt. Add the butter and rub in using your fingertips until it resembles breadcrumbs. Stir through the cheese with a cutlery knife. Add the egg yolk, drizzle over 1 tbsp cold water, then use the knife to stir it in until clumps of dough start to form. Tip onto a work surface and bring the dough together with your hands into a smooth ball. Alternatively, you can make the pastry in a food processor. Shape into a disc, wrap in cling film and chill for at least 20 mins.
  • Using a mandolin or a sharp knife, slice the sweet potatoes, courgettes and aubergines lengthways as thinly as possible. Brush the aubergine slices with lemon juice as you go to prevent them from turning brown. Put the sweet potato in a bowl with 2 tsp water, cover with cling film and cook in a microwave on high for 2 mins, then remove and leave to cool. Do the same with the courgettes and aubergines, but cook for just 30 secs, then set aside.
  • Take the pastry out of the fridge and roll out to the thickness of a £1 coin. Line a 23cm fluted tart tin with the pastry. Trim the sides with a pair of kitchen scissors, leaving an overhang of about 1cm. Chill for another 10 mins. Heat oven to 200C/180C fan/gas 6 and put a baking tray on the middle shelf.
  • When the pastry is cold and firm, line with baking parchment (scrunch it up first to make it more pliable), then fill with baking beans. Bake for 15 mins, then remove the beans and parchment and bake for 5 mins more until the pastry is biscuity.
  • Meanwhile, make the filling. Put the mascarpone, eggs, pesto, breadcrumbs and Gruyère in a bowl, season and mix well. Remove the pastry case from the oven, trim the sides with a small sharp knife so they're flush with the top of the tin, then spread the filling over the base.
  • Reduce oven to 180C/160C fan/ gas 4. Drain any liquid from the vegetables, pat dry on kitchen paper, then season them all well. Stack a slice of sweet potato, courgette and aubergine on top of each other then, starting from one end, roll into a spiral. Put in the middle of the tart. Layer up another three vegetable slices, then wrap these around the spiralled veg in the centre. Continue until the tart is full and you have created a rose effect. Sprinkle thyme leaves between the layers and drizzle the tart with oil.
  • Bake in the centre of the oven for 40-45 mins until the vegetables are tender and the filling has set. Remove from the oven and leave to cool in the tin for 15 mins before removing. Serve warm or cold.

375ml pack ready-rolled puff pastry
85g wensleydale cheese (or other crumbly, sharp cheese)
handful pitted olives
250g punnet cherry tomatoes , halved
2 tbsp pesto , try using fresh from the chiller cabinet

Steps:

  • Heat oven to 200c/fan 180c/gas 6. Unroll the pastry onto a flat baking sheet and, using a sharp knife, score a rectangle two finger-widths from the edge. Fork the pastry all over the inside of the marked edge. Scatter the cheese, olives and tomatoes over the centre of the tart, then season to taste.
  • Bake for 20-25 mins until pastry is crisp and risen, tomatoes are soft and the cheese is golden. Drizzle over the pesto and cut the tart into slices to serve. Great with a green salad.

1 sheet frozen puff pastry (half of a 17 oz. package)
2 (10 ounce) packages frozen chopped spinach
2 medium boiling potatoes, peeled and sliced 1/4 inch thick
2 large eggs
2 scallions, sliced
1 cup swiss cheese, grated
1/4 teaspoon salt
black pepper
1/2 cup pesto sauce

Steps:

  • Pre-heat oven to 375°F.
  • Grease a large baking sheet.
  • Thaw puff pastry.
  • Thaw and drain spinach.
  • Cook and drain potatoes- do not overcook- should retain their shape.
  • In a medium bowl beat eggs and remove 2 tablespoons to be used later as a wash.
  • Mix spinach, scallions, cheese, salt and pepper into beaten eggs.
  • Flour a work surface and with a rolling pin roll pastry out to 12" X 14" and place onto greased baking sheet.
  • Spread pesto onto pastry leaving a 1 1/2" border.
  • Cover pesto with potatoes.
  • Cover potatoes with spinach mixture.
  • Fold the 1 1/2" border over filling forming a frame around the tart.
  • Brush egg wash onto pastry border.
  • Can chill up to 4 hours or cook immediately.
  • Bake 25 minutes or till pastry is golden brown.

150g green bean
300g new potato
300g short dried pasta like fusilli or a long pasta like linguine
large bunch basil
50g pine nuts
50g parmesan (or vegetarian alternative), grated, plus extra to serve (optional)
2 garlic cloves
100ml olive oil

Steps:

  • KIDS: the writing in bold is for you. GROWN-UPS: the rest is for you. Pick the basil for the pesto. Get your child to pick the basil leaves off the stalks. Ask them to look at and smell the leaves as you tell them the name of the herb until they remember it - try to do this with all herbs when you can.
  • Make the pesto. Toast the pine nuts in a pan over a low heat. A child of seven years plus can stir the nuts in the pan. Tip into a mini chopper (or use a pestle and mortar) with the basil, parmesan, garlic and olive oil. Blitz or pound into a green sauce, then set aside.
  • Chop up the beans. Using a child-friendly knife, get children from the age of five to chop the green beans into shorter lengths, and quarter the potatoes. Younger children can snap the beans into short lengths while you prepare the potatoes.
  • Cook the vegetables and pasta. Bring a large pan of water to the boil, add the potatoes and boil for 3 mins. Remove from the heat and ask the child to tip in the pasta and give it a stir. Put the pan back on the heat, boil the pasta for 5 mins, add the beans and cook for a final 3 mins.
  • Mix everything together. Drain everything well and tip into a bowl. Spoon most of the pesto into the pasta and stir everything together to coat. Bring the large bowl of pasta to the table and serve with extra parmesan, more basil and remaining pesto, if you like.
