This Pesto Tortilla Pinwheels recipe is an easy party food that can be put together in no time! Perfect for any fun event - including holiday parties, baby showers, and more!

8 ounces cream cheese (softened)
1/2 cup pesto
2/3 cup shredded Parmesan cheese
3 large flour tortillas (12″)
1 pound thinly sliced turkey or ham deli meat

Steps:

  • In a bowl, beat together the cream cheese, pesto, and Parmesan cheese until smooth. Spread 1/3 of the mixture on top of one of the tortillas. Top cream cheese/pesto mixture with turkey or ham. Roll up tortilla tightly and wrap with plastic wrap. Refrigerate for 2-4 hours.
  • Remove from refrigerator and unwrap. Slice into rounds and display on serving plate or tray.

Like many families, Tea Time Snacking was a daily evening staple in my household growing up. And usually we reached for standard fare like chips and some pre-packaged snacks but whenever mom made sandwiches, it was more like "an evening party time". I always enjoyed those sandwiches and often make for my family but with some of my own flavor ideas. Today's recipe is my creative spin on Tea Time Cream Sandwich - Pesto Cream Cheese Sandwiches. It has two layers; one of nutty basil pesto and another of cream cheese, sandwiched between 3 slices of lite white bread. Nutty pesto and cream cheese are great complement to each other. This recipe is perfect for evening snacking, for breakfast and you can also pack some pesto sandwiches for kids to school.

6 White Bread, 6 slices of White Or Wheat Bread
4 tbsp Basil Pesto
2 tbsp Cream Cheese
1/8 tsp Salt and Black Pepper

Steps:

  • Slice - Remove the sides of all bread slices.
  • Spread - Spread basil pesto on two slices of bread . Spread cream cheese on other two slices and a pinch of salt and black pepper. Leave the remaining two slices plain.
  • Sandwich - Place pesto spread bread at the bottom with pesto side up, top it with cream cheese spread bread with cream cheese facing up. Top it with plain slice of bread.
  • Serve - Slice the sandwich into triangles or quarters and serve with cup of hot tea or coffee.

1 (8 ounce) package cream cheese, softened
1/8 teaspoon garlic powder
1/3 cup parmesan cheese, grated
3 tablespoons butter, softened
1/2 cup pesto sauce
3 tablespoons olive oil
assorted cracker
raw vegetables

Steps:

  • Line a 5-3/4x3" loaf pan with plastic wrap.
  • In a small bowl, combine cream cheese and garlic powder until well blended; set aside.
  • In a bowl, combine Parmesan cheese, butter and pesto sauce until blended.
  • Gradually stir in olive oil.
  • Spread about 1/4 cup cream cheese mixture into prepared pan.
  • Carefully spread with 1/3 pesto mixture.
  • Repeat layers twice.
  • Top with remaining cream cheese mixture.
  • Cover and refrigerate at least 5 hours.
  • Un-mold; serve with crackers and veggies.
  • NOTE: to get nice layers refrigerate first cream cheese layer until firm then top with even layer of pesto mix. Refrigerate after each layer.

I first had this sandwich at a small restaurant and immediately went home to duplicate the recipe. I've been making my grilled cheese sandwiches this way ever since!

2 slices Italian bread
1 tablespoon softened butter, divided
1 tablespoon prepared pesto sauce, divided
1 slice provolone cheese
2 slices tomato
1 slice American cheese

Steps:

  • Spread one side of a slice of bread with butter, and place it, buttered side down, into a nonstick skillet over medium heat.
  • Spread the top of the bread slice in the skillet with half the pesto sauce, and place a slice of provolone cheese, the tomato slices, and the slice of American cheese onto the pesto.
  • Spread remaining pesto sauce on one side of the second slice of bread, and place the bread slice, pesto side down, onto the sandwich. Butter the top side of the sandwich.
  • Gently fry the sandwich, flipping once, until both sides of the bread are golden brown and the cheese has melted, about 5 minutes per side.

Grilled chicken sandwiches with tomato, mozzarella and pesto.

2 large boneless skinless chicken breasts (about 12 ounces each)
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon fennel seed, lightly crushed with a knife
2 tablespoons olive oil
Kosher salt
4 soft hoagie rolls, split
Four 1/4-inch-thick slices mozzarella
1 large tomato, sliced
1/2 cup prepared pesto

Steps:

  • Prepare a grill for medium-high heat.
  • Halve the chicken breasts crosswise and pound each piece between two sheets of plastic wrap to an even thickness of about 3/4 inch. Toss the chicken pieces with the crushed red pepper, fennel seed, 1 tablespoon of the oil and 3/4 teaspoon salt in a medium bowl. Brush the insides of the rolls with the remaining 1 tablespoon oil.
  • Grill the chicken, turning once, until just cooked through, 8 to 9 minutes per side. During the last few minutes of cooking time, top each piece of chicken with a slice of mozzarella. Grill the rolls, oiled side down, until warmed and lightly charred, about 1 minute.
  • Spread some pesto on the bottom halves of the rolls. Top with a slice of tomato, a piece of chicken, the remaining pesto and the top halves of the rolls.

This is my favourite of all sandwiches. It makes a wonderfully fresh and healthy lunch when accompanied by a berry-and-yoghurt smoothie.

1 whole wheat ciabatta (20 cm long) or 1 piece whole wheat baguette (20 cm long)
2 tablespoons cream cheese (Philadelphia for example)
2 lettuce leaves
1/2 tomatoes, slices
1/4 cucumber, unpeeled, sliced
1/2 cup shredded carrot
4 -5 basil leaves
2 tablespoons basil pesto
salt
black pepper

Steps:

  • Slice bread horizontally in half.
  • Spread cream cheese on one half. Sprinkle with some salt and pepper.
  • Layer lettuce leaves and tomato, sprinkle with salt.
  • Then layer cucumber and carrots, sprinkle with pepper. End with the basil leaves.
  • Spread pesto on other half of the bread and lay it on top of the basil leaves to make a sandwich.
  • Enjoy!

1 package (8 ounces) cream cheese, softened
1/8 teaspoon garlic powder
1/3 cup grated Parmesan cheese

1/2 cup minced fresh parsley
1 garlic clove, minced
1 teaspoon dried basil
1/2 teaspoon dried marjoram
1/4 cup finely chopped walnuts
3 tablespoons olive oil

Steps:

  • Line a 5-3/4x3x2-in. loaf pan with plastic wrap. In a small bowl, combine cream cheese and garlic powder until blended; set aside. In another small bowl, combine the Parmesan cheese, butter, parsley, garlic, basil and marjoram until blended. Stir in walnuts. Gradually stir in oil., Spread about 1/4 cup cream cheese mixture in prepared pan. Carefully spread with a third of the Parmesan mixture. Repeat layers twice. Top with remaining cream cheese mixture.
