Arroz Con Pollo Peruano: Peruvian Rice With Chicken image

Crispy, fried chicken pieces lie on a mountain of rice speckled with carrot cubes, peas and red bell pepper, seasoned with cilantro.

½ cup olive oil
4 chicken legs
½ red onion (chopped finely)
1 tablespoon garlic paste
¼ teaspoon cumin
1 tablespoon ají amarillo chili pepper paste
1 cup cilantro leaves (freshly processed )
1 tablespoon ají panca chili pepper paste
2 cups white (long-grain rice)
1 cup malt beer (optional)
½ cup green peas (cooked )
½ cup carrots (cooked & diced)
2 ½ cups chicken stock or water
1 cup salsa criolla
1 red bell pepper (julienned)
Salt and pepper to taste
1 onion (julienned)
1 small limo chili pepper (finely chopped)
1 teaspoon parsley (finely chopped)
1 tablespoon olive oil
1 teaspoon lime juice
Salt and pepper to taste

Steps:

  • Season the chicken with salt and pepper, and fry in a frying pan over a medium heat until sealed all over (not cooked inside). Remove the chicken and set aside.
  • Heat a tablespoon of oil in a pot, lightly fry the onion, garlic paste and ají amarillo paste, ají panca paste and cumin for two minutes over a medium heat.
  • Blend the cilantro
  • Add the cilantro paste, mix well and let the ingredients cook for another five minutes, or until the onion is soft.
  • Add the chicken thighs (or chicken legs) to this mixture of seasoning and cook for 20 minutes or until the chicken is completely cooked inside. Remove the chicken pieces and set aside.
  • Add the rice to the same pot where you cooked the chicken, which still has more seasoning, and add the 2½ cups of chicken stock or water. Mix the ingredients well so the rice is covered with seasoning (otherwise it won't take on its characteristically green tinge). Bring to a boil over a high heat without a lid. As soon as it starts to boil, cover the pot and let the rice cook over a low heat for 15 minutes approximately. (In case you're using beer, which we omitted, replace half a cup of water or chicken stock for beer and add it in this step.)
  • Allow chicken to cook
  • Prepare the salsa criolla by mixing the julienned red onion, finely chopped limo chili pepper, parsley, olive oil, lime juice and salt. Add the cooked carrots and peas. Place a generous portion of rice on each plate, top with a piece of chicken and serve with salsa criolla.

This iconic regional dish incorporates soy sauce, evidence of the strong influence of the Japanese and Chinese communities in Peru. The intensely flavored marinade, bright with lime juice and zesty with garlic, deeply seasons the meat, and the grill gives it a beautiful sear. We've provided a range for the portion size, because while some home cooks may be content with a quarter chicken per person, many Peruvian restaurants and takeout places serve each customer a half chicken (even here in the States, where chickens tend to be on the large side).

1 whole chicken (about 3 1/2 pounds), quartered

Steps:

  • Marinate chicken:
  • Blend soy sauce, lime juice, garlic, cumin, paprika, oregano, 1/2 teaspoon pepper, and oil in a blender.
  • Put chicken in a large sealable bag and add marinade. Seal bag and marinate, chilled, 8 to 24 hours.
  • Grill chicken:
  • If using a charcoal grill, open vents on bottom and lid of grill. Light a large chimney starter full of charcoal (preferably hardwood). When coals are lit, dump them out along opposite sides of bottom rack, leaving a space free of coals (the size of the quartered chicken) in middle. When you can hold your hand 5 inches above the grill rack directly over coals for 3 to 4 seconds, coals will be medium-hot.
  • If using a gas grill, preheat all burners on high, then reduce heat to medium-high.
  • Discard marinade, then pat chicken dry. Oil grill rack, then grill chicken over area with no coals (or over a turned-off burner), skin side down first, covered, turning over once, until cooked through, 30 to 35 minutes (add charcoal to maintain heat).

3 skinless, boneless chicken breasts, cut in half
salt and ground black pepper to taste
½ cup vegetable oil, divided, or as needed
½ red onion, diced
3 cloves garlic, minced
1 ½ bunches cilantro leaves, lightly chopped
1 tablespoon aji amarillo chile paste
½ cup chicken broth
1 red bell pepper, diced
2 ½ cups water, or more as needed
2 cups uncooked white rice
1 (10 ounce) package frozen peas and carrots

Steps:

  • Season chicken with salt and pepper.
  • Heat a large saucepan over medium-high heat with enough oil to coat the bottom. Brown chicken in the hot oil on all sides, 5 to 7 minutes total. Remove chicken onto a plate.
  • Pour more oil into the pan and add onion; saute until translucent, about 5 minutes. Add garlic and saute, 1 to 2 minutes. Stir in cilantro, chile paste, salt, and pepper and saute until cilantro turns dark green, 3 to 5 minutes. Pour in chicken broth and deglaze, scraping the browned bits off the bottom of the pan with a wooden spoon. Bring to a light simmer; let simmer for 3 to 5 minutes.
  • Transfer mixture carefully to an electric blender and puree.
  • Heat more oil in the same pan over medium-high heat; saute bell pepper until soft, about 5 minutes. Return cilantro mixture to the pan and add chicken. Cover, reduce heat to low, and cook until chicken is no longer pink in the center and juices run clear, 20 to 30 minutes.
  • Remove chicken from the pan. Add water and rice, adding more water if it doesn't look like enough. Bring to a boil; place a lid on the pan, reduce heat to low, and cook until all liquid is absorbed and rice is tender, 20 to 40 minutes. Stir in peas and carrots and chicken and warm through, 5 to 10 minutes.

2 tablespoons fresh lime juice
1 tablespoon ground cumin
1 tablespoon extra virgin olive oil
1 teaspoon dried oregano
1 teaspoon chili powder
4 boneless skinless chicken breast halves (6-8 oz each)
1 tablespoon extra virgin olive oil
1 cup diced onion
1 1/4 cups water
1 tablespoon minced garlic
2/3 cup dry medium grain rice
1/2 teaspoon kosher salt
1 cup seeded diced tomato
1/2 cup fresh breadcrumb
1/4 cup milk
1 tablespoon extra virgin olive oil
1/2 cup diced onion
1 tablespoon minced garlic
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon ground annatto seed or 1/2 teaspoon paprika
1/2 cup low sodium chicken broth
2 tablespoons fresh lime juice

Steps:

  • Preheat grill to high heat; brush grill rack with oil. Combine soy sauce, 2 tablespoon lime juice, 1 tablespoon cumin, 1 tablespoon oil, oregano and chili powder in large bowl or large resealable plastic bag. Add chicken; marinate in refrigerator while you prepare rice and sauce. Heat 1 tablespoon oil in saucepan over medium-high heat. Add 1 cup onion; sauté 3 minutes.
