PERKEDEL JAGUNG (INDONESIAN CORN FRITTERS)
After much searching...I found a yummy Indonesian recipe that is not already posted here at Zaar. It looks very uncomplicated, not TOO exotic & delicious. If you make this before me (next week), please let me know what you think. This particular version was on somebody's blog...most of the other versions I found hadn't been translated!

Steps:
- Combine the coriander seeds, black peppercorns, shallots, garlic, rock salt and sugar in a mortar and pound until a smooth paste is formed. Set aside.
- In a bowl, lightly pound corn, then add in spice paste mixing until well combined. Add in Chinese leeks, then add in the rice flour and toss to coat evenly. Add in beaten egg and stir until well blended.
- Drop by the spoonful into hot oil and fry until golden brown, about 2-3 minutes. Remove and drain well.

Steps:
- Cut the corn kernels from the cobs with a sharp knife, mix with the chopped onion, fresh parsley, ground coriander garlic, celery leaves, shrimp and salt to taste. You can also add red pepper flakes if desired.
- Stir in the two beaten eggs.
- Place canola oil in skillet and heat.
- Gently drop tablespoons of the fritter mixture into the oil, fry over medium heat until golden, turn over and brown on other side.
- Drain on paper towels and keep warm until all frying is done.
- Serve warm or room temperature.
- There is no flour in this recipe, but if desired can add 1 tablespoon. Servings are estimated as each fritter can either be large or small.

- In a medium mixing bowl, beat the egg with a fork until the white and yolk are combined, add chopped shallots, chopped garlic, chopped green onion, chopped carrots, salt, and pepper. Mix well until well combined, then add corn kernels, flour into the mixture, stir to combine everything thoroughly.
- Drop fritter batter by spoonfuls into the hot oil. Flatten them lightly with the back of the spoon, try to make them roughly the same size. Continue frying, and don’t forget to flip them as to cook them to a nice brown on both sides. Depending on the thickness, you may need to cook the fritters about 2-4 minutes on each side.
