BANANA BARS WITH CREAM CHEESE FROSTING
When life gives you overripe bananas, make these BOMB diggity best ever Banana Bars with Cream Cheese Frosting! These bars are delightful, delicious, and even a little nutritious. A great treat to make with the kids, too.

Steps:
- Preheat oven to 350 degrees and grease a 15x10x1 inch pan.
- In a large bowl cream together butter and sugar until light and fluffy. Add eggs and vanilla and mix well. Next add mashed bananas and mix well.
- In a medium bowl whisk together flour, baking soda, and salt. Add to wet ingredients and mix until incorporated.
- Pour mixture into prepared pan.
- Bake for 25 minutes or until an inserted toothpick comes out clean. Allow to cool.
- To make the frosting, melt butter in a medium sauce pan. Once melted continue to boil until butter turns from a light yellow to a dark golden yellow. (This works best in a light-colored sauce pan so you can gauge the color of the butter)
- In a large bowl cream together the browned butter and cream cheese until smooth. Stir in vanilla and salt. Gradually mix in powdered sugar until completely incorporated and frosting is smooth.
- Spread frosting over cooled bars. Cut and serve OR cover and store at room temperature up to three days.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10 x 15 inch jellyroll pan.
- In a large bowl, cream together the butter and sugar until smooth.
- Beat in the eggs, one at a time, then stir in the sour cream and vanilla.
- Combine the flour, baking soda and salt; stir into the batter.
- Mix in the mashed banana. Spread evenly into the prepared pan.
- Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
- Allow bars to cool completely before frosting with the cream cheese frosting
- In a small bowl beat whipping cream until stiff peaks form; set aside.
- In a large bowl combine cream cheese, sugar, salt and vanilla.
- Beat until smooth, and then fold in whipped cream.
- Frost the cooled bars and serve immediately or store them in an air tight container in refrigerator.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. - Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
- Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
- Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.
