This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

Steps:
- Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
- Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
- Add salt and pepper sometime during frying time, to taste.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, drain and crumble; leave grease in pan.
- Heat bacon grease over medium heat and stir in butter. Add onion and potatoes. Cover pan and cook, stirring occasionally, until potatoes are golden brown.
- Crack eggs on top of potatoes and stir gently to combine. Sprinkle with salt, pepper, cheese and bacon. Continue cooking until eggs are firm and cheese is melted.

CHEESY OVEN FRIED POTATOES
Cooking these potatoes at this temp gave them a slight crunch. The seasoning in the oil and the Parmesan sprinkled on top made for a really tasty potato. Adding the cheese sauce only made these fries better! This would make a great side with most any entree.

- 1. Preheat oven to 375 degrees F. Cut potatoes lengthwise into wedges. Place into 2 dishes 13x9".
- 2. Combine oil, salt, garlic, paprika, and pepper. Brush/apply oil mixture to potatoes stirring frequently to prevent settling. Sprinkle with Parmesan cheese.
- 3. Bake 30 minutes, then turn potatoes. Bake another 30 minutes.
- 4. Mix cheddar cheese sauce with 1/2 c milk. Stir well then heat for 1 minute in microwave. Pour over baked potatoes.

- 1. Prep the potatoes, then add to a pot and cover with water. Bring to a boil and cook until the potatoes are not quite fork tender, we are going to fry them soon. Drain potatoes.
- 2. Heat 1-2 tablespoons of bacon fat and the butter in a large non stick pan, when hot, add the onion and drained potatoes.
- 3. Cover and cook, turning occasionally, season with salt and pepper as desired, until tender and starting to brown.
- 4. Crack in the eggs and sprinkle on the cheese, mix together, cover.

- Peel potatoes, and cut into about 1" pieces. (If using red potatoes, it is optional to peel the potatoes. Just make sure you scrub and rinse them well with water).
- Add potatoes to a large pot. Add just enough water to cover the potatoes. Add 1 tsp salt. Bring the water to a boil, and cook the potatoes on medium-high heat for 8-10 minutes until a fork goes easily into the center of each potato.
- Drain the potatoes and add back to the pot. Roughly smash the potatoes (and butter, if using) with a potato masher.
- Add remaining ingredients (reserving 1 cup of cheese), and mix into potatoes. Taste the potatoes for seasoning, and add salt and pepper to taste.
- Add potato mixture to a casserole dish, and bake at 350 degrees for 45 minutes to 1 hour until everything is warmed through, and the sides are bubbly. Add remaining 1 cup of cheese, and continue baking for 10-15 minutes until cheese is melted.

FRIED POTATOES WITH CHEESE AND HERBS
I make this for myself on quiet mornings as a treat. It's very simple and very good. Use whatever kind of cheese and herbs you like best.

- Soak the sliced potato in cold water for anywhere up to an hour. Drain and dry well.
- Melt butter in medium saute pan over medium heat. Place potato slices in pan in a single layer as soon as contact with the butter creates a sizzle.
- Cover pan and let potatoes sizzle for about 20 minutes. Check potatoes at this time to make sure they are browning. If they are looking golden and crispy, turn the slices over, cover and sizzle for another 20 to 30 minutes.
- At this point, you should be hearing a sound that is somewhere between a sizzle and a balloon with a leak. This is the water cooking out of the potatoes. It is a good thing. Remove the cover. Turn heat down a bit if it looks like the taters are likely to burn.
- It will take about 15 minutes for the potatoes to get rid of their water content.
- Remove from heat and sprinkle cheese over crispy slices. Turn taters and cheese so they mix up together.
- Turn all out onto a plate, sprinkle with herbs and pepper.
- Serve.

- PREPARE AND PRE-COOK POTATOES: Pierce each potato once or twice with a sharp knife. Cook in microwave on High for 6-8 minutes until tender and a knife can easily slide into potato. If potatoes are large, this might take an extra few minutes. Transfer to cutting board and cut potatoes into 1 inch (2.5cm) cubes.
- PAN FRY POTATOES: Heat oil in large skillet to medium-high heat. Add diced potatoes and fry undisturbed for 4 minutes. Sprinkle with half of salt and pepper. - Cook potatoes in boiling water 5 min.
- Meanwhile, cook and stir bacon in large nonstick skillet on medium-high heat until crisp. Remove from skillet; drain on paper towels. Carefully wipe skillet with additional paper towel.

CHEESY POTATO BALLS

- Add the potatoes to a large pot and cover with cold water. Add a generous pinch of salt to the pot. Bring to a boil and cook potatoes on medium high, uncovered, until the potatoes are fork tender, about 20 minutes. Drain well and mash. Stir in the cream and salt to taste. Set aside to cool.
- When the potatoes are cool (you can make them the day before then take them out of the fridge to come to room temperature for 1-3 hours) use a ice cream scoop or measuring scoop to scoop out 2 tablespoons of potato. Shape into a ball and then flatten slightly and place a cube of cheese in the middle. Bring the mashed potato up around the cube of cheese, enclosing it. Roll gently into a ball shape. Repeat as needed.
- Set up a breading station with three shallow dishes. One with flour, one with lightly beaten egg, and one with panko. Working gently, with one ball at a time, dip the ball into flour, shaking off excess, then coat in egg wash. Roll in panko to coat completely. Set aside on a plate or tray and continue to coat all of the balls in panko.
- In a deep sided, heavy bottomed pot, heat up 2 inches of oil over medium heat until it reaches 375°F. Gently place the potato cheese balls in the hot oil, being careful not to overcrowd, turning occasionally and maintaining oil temperature of 350°F, until the breading is golden brown and crisp, 2-3 minutes. Use a slotted spoon to transfer to paper towels to drain. Let cool slightly and enjoy hot while the cheese is still stretchy.
