Want a roasted chicken that is juicy inside without the use of a baking bag or flour? Then this recipe is perfect. It is quick and easy to prepare. The picture shown does display a chicken that was cooked in a bag, but the chicken was also roasted with vegetables and needed the bag to immerse the vegetables in the chicken flavor. I still guarantee a juicy chicken without the use of a bag each and every time.

1 (4 pound) whole chicken
1 cup margarine, softened
1 tablespoon garlic salt
1 teaspoon coarsely ground black pepper
1 teaspoon dried thyme
1 teaspoon dried parsley
1 pinch dried rosemary

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse and pat chicken thoroughly dry with paper towels. Mix margarine, garlic salt, black pepper, thyme, parsley, and rosemary in a bowl and rub the outside of the chicken thoroughly with the margarine mixture. Place any remaining margarine mixture into the cavity of the chicken. Place chicken into a glass baking dish.
  • Bake chicken in the preheated oven until browned and the juices run clear, about 2 hours. An instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, should read at least 160 degrees F (70 degrees C).

1 six-pound roasting chicken
2 tablespoons unsalted butter
Salt and freshly ground black pepper
2 medium onions, peeled and sliced crosswise 1/2 inch thick
2 lemons
3 large cloves garlic, peeled
4 sprigs fresh thyme
1 cup Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat

Steps:

  • Let chicken and 1 tablespoon butter stand at room temperature for 30 minutes. Preheat oven to 425 degrees. Remove and discard the plastic pop-up timer from chicken if there is one. Remove the giblets and excess fat from the chicken cavity. Rinse chicken inside and out under cold running water. Dry chicken thoroughly with paper towels. Tuck the wing tips under the body. Sprinkle the cavity of the chicken liberally with salt and pepper, and set aside.
  • In the center of a heavy-duty roasting pan, place onion slices in two rows, touching. Place the palm of your hand on top of lemon and, pressing down, roll lemon back and forth several times. This softens the lemon and allows the juice to flow more freely. Pierce entire surface of lemon with a fork. Using the side of a large knife, gently press on garlic cloves to open slightly. Insert garlic cloves, thyme sprigs, and lemon into cavity. Place chicken in pan, on onion slices. Cut about 18 inches of kitchen twine, bring chicken legs forward, cross them, and tie together.
  • Spread the softened butter over entire surface of chicken, and sprinkle liberally with salt and pepper. Place in the oven, and roast until skin is deep golden brown and crisp and the juices run clear when pierced, about 1 1/2 hours. When chicken seems done, insert an instant-read thermometer into the breast, then the thigh. The breast temperature should read 180 degrees and the thigh 190 degrees.
  • Remove chicken from oven, and transfer to a cutting board with a well. Let chicken stand 10 to 15 minutes so the juices settle. Meanwhile, pour the pan drippings into a shallow bowl or fat separator, and leave onions in the pan. Leave any brown baked-on bits in the bottom of the roasting pan, and remove and discard any blackened bits. Using a large spoon or fat separator, skim off and discard as much fat as possible. Pour the remaining drippings and the juices that have collected under the resting chicken back into the roasting pan. Place on the stove over medium-high heat to cook, about 1 minute. Add chicken stock, raise heat to high, and, using a wooden spoon, stir up and combine the brown bits with the stock until the liquid is reduced by half, about 4 minutes. Strain the gravy into a small bowl, pressing on onions to extract any liquid. Discard onions, and stir in the remaining tablespoon of cold butter until melted and incorporated. Untie the legs, and remove and discard garlic, thyme, and lemon. Carve, and serve gravy on the side.

1 organic chicken (3 pounds)
Coarse salt and freshly ground white pepper
Vegetable oil, for cooking

Steps:

  • Preheat oven to 400 degrees.
  • Place chicken on work surface with the legs facing away from you. Using a boning knife, score the wings where they meet the body of the chicken. Hyperextend the wing bones to remove the wing but not the airline bones. Repeat this step on the other wing.
  • Lay the chicken on it back with it legs facing away from you. De-bone the chicken starting with an incision along one side of the breast bone separating the meat from the rib cage until you reach where the hip meets the back of the chicken. Bring the knife down to just above the hip bone and cut, taking care not to rip the back skin of the bird.
  • Remove the bones from the leg and thigh. Following the leg and thigh bone on either side, carefully scrape down the leg bone and then the thigh bone to remove meat from bones. Trim off any excess fat and discard. Repeat process with remaining half of chicken.
  • Heat an ovenproof skillet, large enough to fit both pieces of chicken without crowding, over high heat and drizzle with oil. Lay the chicken flat on work surface. Season both sides with salt and the flesh side only with white pepper. When the oil in the skillet just begins to smoke, add chicken, skin side down. Transfer to oven and cook until skin becomes golden brown, and flesh just begins to brown, 6 to 8 minutes. Serve immediately.

Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons butter, melted
1 Spanish onion, thickly sliced
1 cup chicken stock
2 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of the lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Scatter the onion slices around the chicken.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.
  • Remove all the fat from the bottom of the pan, reserving 2 tablespoons in a small cup. Add the chicken stock to the pan and cook on high heat for about 5 minutes, until reduced, scraping the bottom of the pan. Combine the 2 tablespoons of chicken fat with the flour and add to the pan. Boil for a few minutes to cook the flour. Strain the gravy into a small saucepan and season it to taste. Keep it warm over a very low flame while you carve the chicken.
  • Slice the chicken onto a platter and serve immediately with the warm gravy.

6 red potatoes, peeled, sliced 1/4-inch thick
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, softened
1 shallot, finely minced
2 cloves garlic, finely minced
3 cardamom pods, husks removed and seeds pulverized
1 orange, zested and juiced
1 orange, zested and juiced
1 teaspoon ground turmeric
1/4 teaspoon garam masala
2 bone-in chicken breasts with skin

Steps:

  • Preheat the oven to 500 degrees F.
  • In the bottom of a foil-lined broiler pan, toss the potato slices with a generous drizzle of olive oil and some salt and pepper, to taste.
  • In a small bowl, stir together the butter, shallots, garlic, cardamom, orange zest, orange juice, turmeric, garam masala and salt and pepper, to taste. Separate the skin from chicken flesh using your index finger, moving it back and forth. Do not remove the skin completely, just make a pocket. Spoon half of the butter mixture under skin of 1 breast, smoothing it out with your index finger. Repeat with other chicken breast.
  • Put a rack over the potatoes in the broiler pan and arrange the chicken on the rack. Roast until the chicken registers 160 degrees F on an instant-read thermometer, and the potatoes are tender. Remove from the oven and transfer the chicken and potatoes to a serving platter. Allow to rest for 5 minutes then serve.

2 Tbsps ghee, clarified butter, or grass-fed butter
1 head of fresh garlic, sliced in half
1 a fresh lemon, sliced in half
6 sprigs of fresh thyme or rosemary
1 cup white wine
Garnish:
pomegranate arils
fresh orange or lemon slices
fresh thyme or rosemary

Steps:

  • Preheat your oven to 400 degrees f.
  • Pat your chicken breast dry with a paper towel to remove all moisture.
  • Place the breasts into a large oven dish and season generously with sea salt and freshly ground black pepper.
  • Using your clean hands very gently separate the skin from the chicken meat.
  • Spread the ghee under the skin, and rub some over all the breasts too.
  • Add in the garlic cut sides down, the fresh lemon, and thyme or rosemary to your dish then pour in the wine.
  • Roast for 30-40 minutes (depending on their size), or until an instant-read thermometer inserted into the center of the breast reaches 165 degrees f.
  • Cover and rest for at least 10 minutes before slicing.
  • Carefully squeeze the lemon all over the chicken breasts.
  • Reserve the drippings for gravy if desired.
