1 pound rotini pasta
1/2 pint grape tomatoes (halved)
2 cups fresh spinach (roughly chopped)
1 cup shredded mozzarella or parmesan cheese
1 medium sized shallot (sliced)
7 ounce jar sun-dried tomatoes in oil
2 cloves garlic (peeled)
1-2 teaspoons dried red pepper flakes
1/2-1 teaspoon salt
1/4 teaspoon pepper
1/4 cup olive oil

Steps:

  • Cook the pasta according to package directions. Drain well and rinse with cold water. Let cool.
  • Add the pasta, tomatoes, spinach, mozzarella, and shallot to a serving bowl.
  • Make the dressing: add the sun-dried tomatoes (with their oil) to a food processor or blender. Add the garlic, 1 teaspoon red pepper flakes and 1/2 teaspoon salt. Pulse until sundered tomatoes are finely chopped, then run the food processor or blender while adding the olive oil. Run until a thick sauce forms. Taste, then add more pepper flakes and/or salt to taste.
  • Toss pasta with sauce.
  • Store in refrigerator for up to 3 days.

8 ounces uncooked penne
10.6 ounces hot Italian sausages (crumbled (see note))
3 cloves garlic (minced)
1/2 cup chicken broth or white wine
1/2 tablespoon flour
1 (14 fluid ounce) can diced tomatoes (with juices)
1/2 cup heavy/whipping cream
Salt & pepper (to taste)
6 large leaves basil (sliced/torn into small pieces)
Freshly grated parmesan cheese (to taste)

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta al dente according to package directions.
  • Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it for about 5 minutes, stirring occasionally, over medium-high heat until browned.
  • Once the sausage is browned, take it out of the pan and set it aside. Drain the fat.
  • Add the garlic, followed by the chicken broth to the skillet. Sprinkle the flour in. Whisk it until the flour has dissolved, and scrape any browned bits from the bottom of the pan. Cook this mixture until it's significantly reduced (should only take a minute or two in total).
  • Add in the tomatoes, cream, and the sausage meat. Cook the sauce for a few more minutes until it's thickened to your liking. Season with salt & pepper as needed.
  • Just prior to serving, add in the torn basil leaves and then toss with the drained pasta. Serve with freshly grated parmesan cheese.

8 ounces rigatoni (or short pasta of choice)
2 tablespoons olive oil
1 pound bulk spicy Italian sausage (see Recipe Notes)
1 bell pepper (yellow, orange or red), diced
1 yellow onion, diced
3 cloves garlic, minced
1 teaspoon crushed red pepper flake
1/4 cup tomato paste
1/2 cup white wine (can sub chicken broth or vegetable broth)
1 14-ounce can crushed tomatoes
1/2 cup grated parmesan
Kosher salt
for serving, as desired: grated parmesan, crushed red pepper flakes, thinly sliced fresh basil, etc.

Steps:

  • Bring a large pot of salted water to a boil. Add the rigatoni, or pasta of choice, and cook to al dente according to package directions. Reserve 1 cup of starchy pasta water, then drain the pasta & set aside.
  • Add the olive oil to a large skillet over medium-high heat. Once hot, add in the sausage, bell pepper & onion, seasoning with 1 teaspoon Kosher salt. Use a wooden spoon to break the sausage into fine bite-sized crumbles as it cooks. The sausage should render & brown nicely & the peppers & onions should soften. If anything starts to brown too quickly, reduce the heat to medium or medium-low. Add in the garlic & crushed red pepper flake, cooking until just fragrant, about 30 seconds to 1 minute.
  • Stir the tomato paste into the skillet. As it heats, stir to coat the sausage & veggies. Cook for 1-2 minutes, until deeply red, then deglaze the skillet with the white wine. Increase the heat to medium-high. Once the wine simmers, add in the crused tomatoes & parmesan. Stir to combine, then reduce the heat to medium-low. Let the sauce simmer for 5 minutes to thicken slightly & build flavor.
  • Once the sausage & peppers have simmered in the sauce, add the pasta to the skillet. Toss to coat, adding some of the reserved pasta water as needed to loosen up the sauce so it coats the pasta nicely. Let the pasta simmer in the sauce for 1-2 minutes, just to bring everything together, then remove from the heat.
  • immediately, topped with extra grated parm, crushed red pepper & a sprinkling of thinly sliced basil, as desired. Enjoy!

3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
1 cup chopped fresh basil, plus 4 large fresh basil sprigs
1 pound dried rigatoni
1 pound spicy Italian sausage, casings removed
1 1/2 cups shredded mozzarella
1 1/2 cups shredded provolone
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
  • While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.
  • Add the tomato sauce and half each of the mozzarella, provolone and Parmesan cheeses to the bowl and stir well to combine. Transfer the pasta-sausage mixture to a 3- to 4-quart baking dish and top with the remaining mozzarella, provolone and Parmesan cheeses. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest about 10 minutes before serving.

8 ounces uncooked DeLallo Casarecce Pasta
10.6 ounces Italian sausages (crumbled (see note))
1/2 medium onion (chopped)
7 ounces cremini mushrooms (sliced)
2 cloves garlic (minced)
1 cup little tomatoes (grape, cherry, etc.) (cut into halves)
1/2 red bell pepper (chopped fairly small)
1/2 cup chicken broth
1/4 cup DeLallo Simply Pesto
Salt & pepper (to taste)
For garnish: freshly grated parmesan cheese & chopped parsley (optional)

Steps:

  • Boil a large, salted pot of water for the casarecce pasta. Cook it al dente (8 minutes).
  • Meanwhile, prep your vegetables. You can do some prep while the sausages are cooking to save time, but feel free to prep everything prior to starting the sauce if that's easier for you.
  • Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it over medium-high heat, stirring occasionally, until it's browned (about 5-7 minutes). Transfer to a plate.
  • Leave the sausage grease in the pan and then add the mushrooms and onions (if there is very little grease then add about a teaspoon of olive oil). Sauté, stirring occasionally, until the mushrooms release their water and they get a nice sear and the onions brown (about 5-6 minutes).
  • Stir in the garlic and cook for 30 seconds.
  • Add the tomatoes, peppers, chicken broth, and sausage to the skillet. Reduce the heat to medium and cook for around 5 minutes or until the tomatoes have started to lose their shape and the chicken broth has reduced a bit.
  • Add in the pesto (stir the jar first), then take the pan off the heat and ensure it's stirred in well. Add a splash of pasta water to the sauce (a couple tablespoons) prior to draining it, and then toss the drained pasta with the sauce. Season with salt & pepper as needed. Serve immediately with parmesan cheese and parsley if desired.

  • heat oil in large skillet; add sausage cook on med high.
  • while sausage is cooking, start pasta water
  • chop onions and peppers into 1/4 inch slices set aside.

Prep time does not include the time taken to *cook the Pasta which usually takes about 10 minutes in the microwave. I add plenty of salt and a good dollop of Olive Oil to the water. (I find the Olive Oil flavours the Pasta) 'BEER STICKS' are about the size of Frankfurters, but the meat is like that of pepperoni OR salami. They are called Beer Sticks in N.Z. but there may well be another name used for them elsewhere.
