2 cups instant coffee creamer
1/2 cup imitation bacon bits
1/2 cup cheddar cheese powder
1 tablespoon dried parsley flakes
1 tablespoon chicken bouillon granule
1 teaspoon dried onion flakes
1/2 teaspoon pepper
2 cups instant potato flakes

Steps:

Mix all ingredients in a plastic container.
For single serving - Add 1/2 cup of mix to 1 cup of boiling water, mix and enjoy!
For big pot - Whole container of soup mix with 5 cups of boiling water. If its too thick for you and water at 1/2 cup at a time.

1 lb boneless, skinless chicken breast
1 small jar sun-dried tomatoes, drained from oil
1 Tablespoon oil
1 medium onion, chopped
1 Tablespoon minced garlic
1 red bell pepper, sliced
1 teaspoon cumin powder
1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon paprika
1 1/2 cups chicken broth
1 cup cream
1/2 cup cream cheese
1 cup shredded cheddar cheese
Salt and fresh cracked pepper, to taste
Fresh Cilantro leaves, for garnish

Steps:

Turn your Instant Pot on SAUTE mode. Add oil and heat. Add the chopped onion and garlic and stir for a couple of minutes.
Add chicken, sun-dried tomatoes, bell pepper, oregano, cumin, paprika, chili powder, and chicken stock.
Place the lid on the Instant Pot and lock into place. Turn knob to sealing. Press the MANUAL or PRESSURE COOK button. Set the cook time for 20 minutes on high pressure.
When cook time is complete, carefully perform a quick release of the pressure.
Remove chicken from the Instant Pot. Shred cooked chicken and return back into the pot.
Stir in cream, cream cheese, and cheddar. Turn the Instant Pot to SAUTE mode to heat up the soup while stirring until cream and cheese are melted and the soup is smooth.
Adjust seasoning with salt and pepper and ladle the soup into bowls and garnish with fresh cilantro. Enjoy!

Ingredients

4 cups red potatoes, peeled and diced (I keep mine with the peel)
1/3 cup diced celery
1/3 cup onion, finely chopped
1 cup chopped carrot
2 cups cooked ham, rough chopped (leftover ham works great!)
4 cups chicken broth
1 teaspoon pepper
5 tablespoons butter
5 tablespoons flour
2 cups milk
2 cups sharp cheddar cheese, shredded
2 tablespoons minced garlic
1 teaspoon dried thyme

Steps:

Combine potatoes, celery, onion, ham, garlic and thyme and broth in Instant Pot.
Shut and lock lid and set to pressure for 10 minutes.
When the timer goes off, quick release steam.
While the IP is doing its magic, in separate saucepan, melt butter over medium-low heat. Whisk in flour and cook stirring constantly until thick.
Slowly stir in milk as not to allow lumps to form and all milk is added. Turn up to medium heat. Continue to stir until thick (4-5 minutes).
Add in cheese and stir until melted.
Stir the cheese mixture into the Instant Pot after you performed step 3. Set to saute on high and cook until heated through about 3 minutes. (I also will break up some of the potatoes for thickness. It gets thicker as it cools and next day).
