Steps:
- Filet Mignon is often considered the greatest steak cut of them all. It's unmatched in tenderness. Has a somewhat mild flavor, compared to other cuts, and when cooked right, it nearly guaranteed to please. I'll frequently cook my filet in the oven, but once it gets warm enough, it's time to bring the Filets out to the Grill. Some of the best filet mignon I've ever had, has been seared quickly on super-hot grill over direct flames, slathered with a little compound butter, and served up hot. When grilled, filet picks up some added flavor from the smoke of the grill, and you can't beat the charred outside crust that open flames give you. But, to cook the perfect grilled Filet Mignon, there are a few tips and tricks that you need to know to make sure your steak doesn't come out overcooked and dry. There aren't many, and they aren't hard to learn, but put them to practice, If you want your steak to have: A dark golden brown crust on the outside that packs a ton of salty flavor and a great texture A center that is perfectly cooked to your preference - I like medium rare! A very tender, and very juicy, texture when you bite into it Follow the tips below, and I'm sure yours will hit on every point! How to Grill a Perfect Filet Mignon Buying the right filet mignon is important. Ideally find a prime grade, although choice cuts can still work very well. Get a steak that is 2 inches thick (or more), with as much internal fat (marbling) as possible Filet Mignon is expensive (often nearly $20/lb), but it's so rich, you may be fully satisfied with just an 8 ounce cut Take the filet out of the fridge about 45 minutes before you're ready to cook it, and allow it to come to room temperature Turn on your gas grill, or light your coals, to allow your grill to heat up. You want to start cooking with a very hot grill (over 500 degrees). About 15 minutes before your grill is ready, lightly oil the filet mignon and liberally season the steaks with salt and pepper. If you'd like to use other rubs or spices, that's fine; just note that some rubs may tend to burn a bit on the grill, so you may want to use slightly lower temperature Once the grill is ready, lay the steaks down on the grates (lay them down diagonally to get the cool looking grill marks), close the grill lid, and leave them alone for at least 3 minutes After 3 minutes, open the grill, and turn the filet mignon over; the cooked side should be nicely browned, with grill marks from the grate Once turned over, allow the filets' second side to sear for another 3 minutes to sear At this point, a 2 inch filet, should be rare, and you have to figure out when to stop cooking the steak...right then, or continue to cook through to medium or well done The best way to tell when to remove the filet is with an instant read meat thermometer. You'd want about 130 for rare...and you'd go all the way up to 160 for well done. The time it takes to get there, will depend on the heat of your grill and the thickness of the steak. My general rule of thumb, is at this stage, about 3 minutes will move the filet up 10 - 15 degrees. As the filet mignon continue to cook, you'll want to move them to a cooler part of the grill with the lid on; because the outside is already seared you don't want to burn them. Once cooked to your liking, remove the filets, and allow them to rest for at least 5 minutes While they rest, it would be a great time to make a quick sauce or slather them with some butter. Once rested, the filet mignon are ready to serve, along with your favorite steak sides! Enjoy!

Steps:
- Seasoning. You paid a lot for this filet, give it some credit that it is going to hold it's own in the taste department. The only seasoning I recommend to help this steak out is some fresh ground black pepper. Save the course salt for the end, some say it draws out juices. I doubt it does, but why take the chance?
- Leave it alone! In order to reduce grilling time and ensure consistent cooking throughout the steak, we must bring the filet to room temperature. This is your easiest step, once it's seasoned just leave it on the kitchen counter. Your patience will be rewarded, trust me...just let it get into the "zone" by itself and move onto these next steps. Let it sit for at least 45 minutes. Go on, leave it alone, move on to the next step!
- Fire it up!We are going to use direct heat to grill this delicious steak, so fire up your grill and set it and leave it at the highest temperature setting. You will know she is ready when you can't hold your hand 2 inches above the grates for more than 5 seconds (don't try and be tough, you know it hurts...). If you are a charcoal griller, follow this guide for lighting a charcoal grill and set up your grill for hot, direct grilling by creating a pile 2 coals high.
- Sear in those juices!Ok, the moment of truth, your steak has been getting itself ready on the counter and now it's game time! Using TONGS (remember, don't EVER puncture that beautiful steak's flesh!) place your steaks on the grill and do NOTHING for at least 2 minutes. The only exception to this rule is if you have to play firefighter and splash a little water on a pesky flame. A little flare up is fine, but if a flame burns for more than 30 seconds, splash a tiny bit of water on it to put it out.
- Grill marks! All we are doing here is creating those cool looking grill marks. After about 2 minutes (for medium-rare, a little more for Medium), lift, turn your steak 90 degrees and then set it back down for another 3 minutes (again, for medium-rare, a little more if you have to have it more done).
- Flip once! After a total of about 5 minutes, it's time to flip that steak for the one and only time. Gently lift, flip and set it back down in the same spot and leave it alone again for about 2 more minutes.
- Rotate againThis is getting easy, you know what is next. Repeat Step 5 on this side now!
- Check itNow it is time to check your steak for the perfect doneness. The very best way to ensure proper doneness is by using an instant-read meat thermometer. The Thermapen is by far the best meat thermometer on the market. A favorite of TV and restaurant chefs, it is highly accurate, instant, automatically turns on and off (no buttons to mess with) and never needs calibration. Highly recommended if you cook a lot, get it here. Insert the thermometer into the side of the steak to measure the very center and then check out our grilling tips for a temperature chart to determine your preferred doneness. Better yet for you iPhone owners, download our FREE MeatTemps iPhone app for an easy to use meat doneness reference.
- Remove and rest. Take it off the grill now, you are done with the heat section! Remove it and set it on a plate or platter and leave it alone.
- Your beautiful filet has been through a traumatic experience. It went from refrigerated to room temperature to a HOT grill. This plays havoc on the juices inside so we need to give it some time to collect itself. Now that it is on the platter, let it rest again for 2 - 3 minutes (which will now seem like 2 hours!). This allows the juices to re-distribute, so they don't all run out when you slice into that beautiful hunk of beef.
- Enjoy! Go ahead, enjoy it!

Steps:
- Heat grill. Grill filets mignons for 3 to 5 minutes per side, which will cook them to medium or medium-rare doneness. Add salt and pepper to taste. Serve.
- NOTE: One key point to remember when cooking filet mignon, whether you broil, roast, grill or pan fry it, is to use high heat in the process. A second key point is not to cook it too long; filet mignon is particularly susceptible to drying out as it cooks. Connoisseurs will tell you that filets mignons can only be properly appreciated medium-rare or even rare. But if you really can't stand the thought of eating steak that pink, feel free to cook longer. Again, start with high heat so as to minimize the time needed to reach your preferred state of doneness.
- By the way, a red wine such as cabernet sauvignon or burgundy makes a great accompaniment to filet mignon.

THE PERFECT FILET MIGNON
A luxe cut of meat like filet mignon needs little embellishment to shine. It's all about technique-and plenty of butter! Searing the steaks creates a beautiful crust and basting them with melted butter infused with garlic and thyme helps keep them tender. A quick pan sauce that comes together while the meat rests is the perfect finishing touch.

Steps:
- Pat the steaks dry, then sprinkle with 2 teaspoons salt and 1 teaspoon pepper. Firmly press the seasoning into the meat.
- Heat the oil in a medium stainless steel skillet over medium-high heat until shimmering but not smoking, about 2 minutes. Add the steaks and cook until a golden crust forms, about 2 minutes. Flip with tongs and cook until golden on the second side, about 2 minutes (see Cook's Note). Flip again and cook for 2 minutes. Flip once more and add 4 tablespoons of the butter and the thyme and garlic. Let cook, undisturbed, until the butter stops foaming, 1 to 2 minutes. Tilt the pan slightly so the butter pools and spoon it over the steaks. Continue to cook the steaks, basting constantly, until they are medium rare and an instant-read thermometer inserted in the center registers 118 degrees F, 3 to 4 minutes.
- Transfer the steaks to a plate to rest. Discard the garlic, thyme and fat from the skillet, but do not wipe out the browned bits.
- Place the same skillet over medium heat and add the shallots and 1 tablespoon butter. Cook, scraping up the browned bits with a wooden spoon, until softened, about 2 minutes. Remove the skillet from the heat and add the brandy. Return the skillet to the heat and continue to cook over medium until the skillet is dry, being careful as it may ignite, about 2 minutes. Add the wine and cook until the liquid reduces by half, about 3 minutes. Add the beef stock and bring to a boil. Whisk in the remaining 3 tablespoons butter, 1 tablespoon at a time. Add salt and pepper to taste.
- To serve, slice the steak, spoon the sauce over the top and sprinkle with the chives.

Steps:
- Pour salad dressing into a zip lock bag. Place steaks inside with bacon, seal and marinate in refrigerator for 3-4 hours.
- Wrap bacon around each steak, securing with toothpick or butcher's twine.
- Grill steaks over hot coals about 8 minutes per side (5 minutes for rare. Baste with mixture of steak sauce and water. For perfect steaks, turn only once.
- I live in a loft -- no charcoal grill. I seared filets on my Wolfgang Puck counter top grill, lines and all. Then I placed filets in a heavy duty nonstick skillet in a 400 degree oven for 10 minutes. Voila! Perfectly cooked medium steaks. I would think 8 minutes for medium rare and 6 for rare.
