ROASTED SAUSAGES, PEPPERS, AND ONIONS AND CHEESY BREAD WITH BLACK PEPPER

Roasted Sausages, Peppers, and Onions and Cheesy Bread with Black Pepper image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 37m

Yield 4 servings

Number Of Ingredients 12

2 1/2 pounds thin Italian sausage (the kind sold in swirl shapes, each swirl will weigh 1 1/4-pounds or so) hot and sweet varieties
Extra-virgin olive oil, for liberal drizzling plus 3 tablespoons, 3 turns of the pan
4 cloves garlic, 3 thinly sliced, 1 cracked from skin
1 red bell pepper, seeded and sliced 1/2-inch thick
1 green bell pepper, seeded and cut into 1/2-inch slices
1 large onion, 1/2-inch slices
1/4 cup tomato sauce, thinned out with water
Salt and pepper
1 loaf crusty semolina bread, split
1/2 cup grated Parmigiano-Reggiano
Coarse black pepper
2 tablespoons chopped flat-leaf parsley, a rounded palm full

Steps:

  • Preheat oven to 425 degrees F.
  • Place sausage rings on a baking sheet and liberally drizzle extra-virgin olive oil down over them. Place in hot oven and roast until casings are crisp and juices run clear, somewhere between 15 and 20 minutes. Remove from oven to rest sausages; switch on broiler.
  • While sausages roast, heat a skillet over medium heat with 3 tablespoons extra-virgin olive oil and sliced garlic. Simmer garlic in extra-virgin olive oil 2 to 3 minutes then add peppers and onions. Turn the heat up a notch, and cook until the vegetables are tender but the peppers still hold strong color, 5 to 6 minutes. Add thinned tomato sauce, salt, and pepper and reduce. Turn heat back to low and hold the veggies until the sausage comes out of the oven, a couple of minutes.
  • Toast the split bread, remove from oven, rub with cracked garlic, liberally drizzle with extra-virgin olive oil, and cover with cheese and lots of black pepper. Return to the broiler to brown cheese, 1 minute. Scatter parsley over the bread.
  • Cut bread into chunks and pile with peppers and onions then sausages. The bread will soak in the juices as you work through the sausage, peppers and onions.

OPEN FACED SAUSAGE, 3 PEPPER AND ONION SANDWICHES WITH PROVOLONE

Open Faced Sausage, 3 Pepper and Onion Sandwiches with Provolone image

Provided by Rachael Ray : Food Network

Time 45m

Yield 4 servings

Number Of Ingredients 37

1 large loaf ciabatta bread
2 tablespoons extra-virgin olive oil
4 portabella mushroom caps
1 onion, halved and sliced
2 cubanelle peppers, seeded and sliced
1 red chile pepper, thinly sliced
2 large cloves garlic, sliced
1/2 cup chicken stock or water
Salt and freshly ground black pepper
1 pound Italian hot or sweet or combination of both sausages in red sauce from make-ahead meal earlier in week (browned sausages simmered in tomato sauce with stock), recipe follows
12 ounces sharp provolone cheese, shredded
A small handful fresh flat-leaf parsley for garnish
1 (10-ounce) box chopped frozen organic spinach
Salt and freshly ground black pepper
Freshly grated nutmeg
2 hard-boiled eggs, peeled and finely chopped
2 tablespoons dried currants or chopped raisins
2 to 3 tablespoons toasted pine nuts
2 large cloves garlic, finely chopped
1/4 cup freshly shredded Parmigiano-Reggiano cheese
4 (8-ounce) pieces thin-cut top round veal or beef pounded very thin
1/4 cup extra-virgin olive oil
1 carrot, finely chopped
1 onion, finely chopped
4 cloves garlic, thinly sliced
1 large fresh bay leaf
A few sprigs fresh rosemary, leaves removed and finely chopped
A few sprigs fresh sage, thinly sliced
1/4 cup tomato paste
1 cup dry white wine
2 cups chicken stock-in-a-box
1(28-ounce) large can San Marzano tomatoes
2 pounds hot or sweet Italian sausage or combination of both
1 (8-ounce) package pappardelle pasta or 12 ounces egg tagliatelle
1 tablespoon butter
A generous handful fresh sweet basil leaves, torn or shredded
A small handful fresh flat-leaf parsley, finely chopped

Steps:

  • If you are cooking a make-ahead meal with bread that will not be used for a couple of days, place it in the freezer in an airtight bag or wrap well. Unwrap to defrost at room temperature and then crust in a warm oven.
  • Meanwhile, heat a couple of tablespoons extra-virgin olive oil in a skillet over medium-high heat. Add mushrooms and saute until soft, about 5 minutes. Add the onions, cubanelle peppers, chile pepper, and garlic to tender-crisp, 5 minutes more.
  • Cool and store the mushroom mixture. To reheat the mushroom mixture: Add a splash of stock or water over medium heat and season with salt and pepper.
  • To reheat the sausages: Add a splash of stock or water to the sausages to loosen the sauce. Add a ladle of sauce to the mushroom pan.
  • Preheat the oven to 375 degrees F. Split the bread horizontally then halve into 4 large pieces. Arrange the bread pieces on cooling racks set over baking sheets to allow the heat to circulate all around the bread. Halve the sausages lengthwise. Dot the bread with sauce, top with the sausages cut-side-down, dot with more sauce and top with peppers and cheese. Bake the bread 12 to 15 minutes, or until melted and brown at the edges. Garnish with parsley and serve.
  • For the braciole: Defrost, drain, and wring the frozen organic spinach dry in a clean kitchen towel and separate with your fingertips while adding to a mixing bowl. Season the spinach with salt, black pepper, and a little nutmeg. Add the chopped hard-boiled eggs, currants, pine nuts, finely chopped garlic, and cheese to the bowl and gently combine. Season the meat with salt and pepper and arrange each steak with one of the narrow ends near you. Divide the filling evenly among the meat slices. Scatter the filling over the meat leaving a 1/2-inch edge or border on the sides. Fold the edge over the filling and tuck in the edges as you roll each bundle to secure the filling. Wrap and roll the remaining bundles and secure with kitchen twine to cover the ends and middle, like wrapping a package.
  • Heat a large Dutch oven with 2 tablespoons extra-virgin olive oil a couple of turns of the pan over medium-high heat. Brown the meat bundles 6 to 8 minutes to evenly caramelize the meat all over.
  • For the sauce: Remove the bundles from the pan and add 1 tablespoon more olive oil, give a turn of the pan to coat. Add the chopped carrots, onions, sliced garlic, bay leaf and season with salt and pepper. Let the vegetables cook 5 minutes to soften, then stir in the chopped rosemary and sage for 1 minute. Add the tomato paste and stir to develop the fragrance, then add the white wine and scrape up the pan drippings. Stir in the chicken stock and tomatoes. Break up the tomatoes with a spoon or potato masher. Bring the sauce to a bubble, add the meat back to the pot and reduce the heat to a simmer, cover and cook 2 hours more, stirring occasionally.
  • After 2 hours, brown the sausages in a frying pan with a tablespoon of extra-virgin olive oil, a turn of the pan. Add the browned links to the sauce and gently submerge them, nestling them in with the meat bundles. Simmer the mixture 30 minutes more to cook the sausages through and combine their flavor into the sauce.
  • Bring a pot of water to a boil for pasta. Salt the water and cook the pasta to al dente. Reserve a cup of starchy cooking liquid just before draining.
  • Remove the meat bundles to a platter and cover with foil to keep warm. Remove the sausages to a separate plate to cool.
  • Drain the pasta and return to a hot pot. Add 1 tablespoon butter, cut into pieces, and half of the sauce, toss to combine, adding a little starchy cooking water to make it all come together for you.
  • Cut the string from the meat and serve the meat dotted with more sauce and sprinkled with fresh parsley on large dinner plates with hot pappardelle pasta topped with fresh basil and some shaved Parm alongside.

OLIVE BREAD (FOR THE BREAD MACHINE)

Olive Bread (For the Bread Machine) image

My local bakery occasionally makes an absolutely fabulous olive bread which I have attempted to clone. This is the closest I can come to it and it is a very nice version though not as great as the original. As usual, the best ingredients make the best bread so get the best olives you can find - it really makes the difference.

Time 3h10m

Yield 1 loaf, 6-8 serving(s)

Number Of Ingredients 12

4 cups white bread flour
1 1/3 cups water (Iukewarm)
1 teaspoon sugar
1 teaspoon salt (can add a bit more if you like)
7 -8 g dried yeast
1 1/2 tablespoons olive oil
2/3 cup kalamata olive (not the sliced ones)
2 slices onions (around 2 tbs)
1/2 teaspoon oregano
1 garlic clove (pressed)
1 teaspoon tomato paste
black pepper

Steps:

  • First prepare the onion. Sprinkle the slices with salt and allow to sit for 5 minutes. Then rinse and squeeze to drain. The onion will be softer and not as sharp tasting. Finely chop, you should have around 2 tablespoons.
  • Pit the olives with a sharp knife and roughly chop.
  • Add the olives, chopped onion, oregano, garlic and tomato paste together and grind in a little black pepper to taste.
  • Set the bread machine on the basic cycle which is around 3 hours.
  • Add the remaining ingredients into the bread machine in the order recommended by the manufacturer, (mine is liquid first then solid) and then add the olive mixture at the beep for extras.
  • Bake with a medium crust or dark if you like it that way.
  • This bread is wonderful with a Greek salad or spread with tarama or eggplant dip.

RED PEPPER & RED ONION BREAD (ABM / MACHINE)

Red Pepper & Red Onion Bread (Abm / Machine) image

There are lots of pepper /onion bread recipes. This uses fresh peppers and onion. It's very nice with cooked meats, cheese & tomato, tuna or salmon maybe with a bit of lettuce or salad. The smell whilst baking is out of this world! Oh, btw, it looks gorgeous too! (I suppose that you could replace half a tsp of the water for red food colouring, call it 'Red Bread'! and have it with sandwiches prepared for Halloween - :)

Categories     Yeast Breads

Time 3h50m

Yield 8 serving(s)

Number Of Ingredients 11

280 ml warm water (approx 38 celsius)
10 g powdered milk (approx 1 generous Tblsp)
400 g white bread flour (16 oz or 3 cups)
15 g granulated sugar (1 Tblsp)
10 g corn oil (1 Tblsp) or 10 g sunflower oil (1 Tblsp)
5 g salt (1 Tsp)
3 1/2 g bread machine yeast (1 Tsp, ever so slightly raised)
55 g red peppers, well chopped (about 2/3 of a rather small one)
20 g red onions, sliced & chopped (about 1/2 of a very small one)
1 dash fresh ground black pepper (to taste or optional)
1/3 teaspoon dried garlic granules (to taste or optional)

Steps:

  • Place bread machine pan on electronic scales and weigh in / add the ingredients. (280ml water weighs 280g).
  • Replace pan in bread machine and start on suitable cycle - I favour the wholemeal cycle with a dark crust as it has the longest rise time but still has a beep for adding ingredients plus I like my bread to be crusty. Machines vary but the raisin bread setting should also be fine.
  • Whilst the machine is kneading, chop and prepare the red pepper & red onion into a small bowl and season to taste with a little fresh ground black pepper, a very generous dash of dried (or fresh) garlic (possibly some basil/oregano if you fancy it herby, and paprika if you *really* love it spicy!).
  • Add the pepper & onion a bit at a time during the last five minutes of the final knead (my machine does its beep five minutes before the end of the final (second) knead) as there is a lot of liquid in these fresh ingredients and if you add them all at once it would make the dough rather too wet. Basically add about half of them at the beep and the other half a few minutes later.
  • Enjoy!
  • (Time listed includes total kneading, rising & baking time).
