PEANUT BUTTER AND PEPPERONI PIZZA
Yes, you read that right! Peanut butter is the ingredient you didn't know you needed on pepperoni pizza. Inspired by a pie from Zorbaz on the Lake, one of my family's favorite spots in Minnesota, my version gets baked in a cast-iron skillet and topped with fresh jalapenos and "hot" (chile-spiked) honey.

- For the pizza: Preheat the oven to 450 degrees F.
- Grease a 12-inch cast-iron skillet with the oil. Place the pizza dough in the center and spread evenly to cover the bottom and 1 inch up the sides. Spread the peanut butter evenly over the dough followed by the marinara sauce. Sprinkle with the mozzarella followed by the pepperoni and then the jalapeno.
- Bake until the cheese melts and browns and the edges are crisp, about 20 minutes. (This is a good time to start the salad.) Remove from the oven and let sit for 5 minutes, then drizzle with hot honey before serving.
- For the salad: Whisk together the vinegar, garlic, mustard, honey, 1/2 teaspoon salt, pinch of black pepper and the oil in a medium bowl until combined. Set aside and let the garlic infuse the dressing, about 5 minutes. Remove the garlic and add the lettuce, radicchio if using, tomatoes, pepperoncini and onion; lightly toss to coat in the dressing. Serve with the pizza.
EASY HAMBURGER PIZZA PIE
I found this recipe about 55 years ago on a Pillsbury Crescent Roll tube. I embellished it a bit and this is what I came up with. The picture to the left is extra thick because I used a smaller baking dish.

- 1. Preheat oven at 375. Unroll pizza dough. Spray a 9x13 glass dish. Line dish with pizza dough in bottom and up sides. Place filled pan in oven for 5 minutes.
- 2. Brown hamburger and onions together in skillet. Drain. Then add drained mushrooms and two cans of tomato paste. Mix well and heat through until hot.
- 3. Spoon half of hamburger mixture in pizza dough. Cover with pepperoni then 1/2 mozzarella cheese. Repeat.
- 4. Place in oven and bake for 10 to 15 minutes until golden brown. Cut into 4 or 6 pieces and enjoy.
- 5. You can substitute whatever you like in a pizza for the mushrooms, pepperoni, etc. My husband loves this recipe.
HAMBURGER-PEPPERONI PIE

- Heat oven to 400°. Mix beef, bread crumbs, oregano, salt and egg. Press mixture evenly against bottom and side of ungreased pie plate, 9x1 1/4 inches.
- Sprinkle mushrooms, bell pepper, pepperoni and olives into beef-lined plate. Pour spaghetti sauce over toppings.
- Bake uncovered about 25 minutes or until beef is no longer pink in center and juice is clear; carefully drain. Sprinkle with cheese. Bake about 5 minutes longer or until cheese is light brown. Let stand 5 minutes before cutting.

- Mix ground beef with salt and pepper; pat mixture out in a 9 inch pie pan.
- Spread tomatoes over hamburger and sprinkle with remaining ingredients.
- Bake in 375 degree oven for 15 to 20 minutes or until ground beef is no longer pink.
- Cut in wedges to serve.
- Note: you can get very creative with this recipe and add other "pizza" toppings such as green peppers, mushrooms, etc. Have fun with it!

PEPPERONI PIZZA BURGER BOMBA

- For the sauce: To a small saucepan over low heat add the oil and garlic and cook until fragrant. Add the tomato paste and seasoning, and mash with the back of a wooden spoon. Stir in the crushed tomatoes and bring to a simmer. Simmer for 15 minutes, then remove from the heat.
- For the burger: Preheat grill to medium-high heat. Preheat oven to 550 degrees F with pizza stone on the middle rack of the oven.
- Form the meat into four 4-ounce patties and sprinkle both sides with salt and pepper. Grill until medium, then remove from the heat and place on a paper-towel-lined plate.
- Divide the pizza dough into four 4-ounce balls. Press out each ball on a floured pizza peel to about a 5-inch round. Top each with a slice of scamorza, a couple slices of pepperoni, then 1 burger patty and 1 tablespoon of pizza sauce. Fold the dough over the burger as if making a large dumpling. Brush with olive oil. Bake on the pizza stone in the oven until golden brown, 8 to 10 minutes. Serve with extra tomato sauce on the side to dip.
BASIC PEPPERONI PIZZA AND FOUR CHEESE PIZZA
Steps:
- For the pizza dough: Sprinkle the active dry yeast over 1 1/2 cups of warm--not lukewarm--water.
- In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Pour in the yeast mixture and mix until combined.
- Coat a separate mixing bowl with a light drizzle of olive oil and tip the dough in. Form a ball and toss to coat the dough ball in the olive oil. Cover tightly with plastic wrap and allow to rise for at least 1 hour, or up to 3 or 4 days refrigerated.
- Preheat the oven to 500 degrees F.
- To prepare the dough for the pizza assembly: Divide the dough into two equal parts. Roll out one part as thinly as possible and place on a baking sheet. Repeat with the second piece of dough.
- For the basic pepperoni pizza: Spread the sauce over the pizza base. Top with the sliced mozzarella and pepperoni.
- For the four cheese pizza: Drizzle on the olive oil and sprinkle on some salt and pepper. Pour the jar of pesto onto the dough and spread evenly. Add the mozzarella, fontina, goat cheese and Pecorino Romano.
- Bake both pizzas until the crusts are golden and the cheese is bubbly, 12 to 15 minutes.
- For the tomato basil salad: While the pizzas are baking, heat the olive oil over medium-high heat in a small skillet. Add the garlic and stir, lightly frying for about a minute and removing it from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed. Set aside.
- Top the four cheese pizza with the tomato basil salad. Cut the pizzas into slices and serve.
- Add a tablespoon or so of olive oil into a hot pan over medium-high heat. Throw in the garlic and chopped onions and give them a stir. Cook until the onions are soft, 4 to 5 minutes. Add the chicken broth, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Add the dried oregano and basil. Reduce the heat to low and simmer for 30 minutes.
PEPPERONI PIZZA PIE

- Heat oven to 220C/200C fan/gas 7. Make up the pizza base following pack instructions. Knead on a lightly floured surface and divide into 2 balls, 1 slightly bigger than the other. Roll out the bigger ball to about 32cm diameter. Place on a floured baking sheet or pizza tray.
- Top the pizza base with the pasta sauce, pepperoni, onion, pepper, mozzarella, oregano, 1 tbsp of the Parmesan and a little black pepper.
- Roll the smaller piece of dough to about 28cm diameter and place on top of the pizza filling. Fold the edge of the base over the top, pressing the edges together to seal - use a little water to help stick if you need to. Sprinkle over the remaining Parmesan and bake for 15 mins until puffed and golden.

GROUND BEEF PIZZA
This is my kind of favorite pizza. I have not try this one but this is almost the same as the one I did without any recipe. This is from the issue of November 2005, Coup de Pouce. ETA : I made it on July 24, 2011. I used 1 lb of lean ground beef. And also a store-bought dough already made. I made this pizza sauce : recipe#460241 I added chopped red bell pepper. DH said 10 stars and he didn't know it was my recipe.

- In a skillet, cook ground beef, onion, garlic, oregano, salt and pepper at medium-high heat, stirring from time to time, 3 to 5 minutes or until beef is no longer pink. Drain any fat. Set aside.
- On a lightly floured surface, lower the dough in a circle of 12 inches of diameter. Put on a greased pizza plate. Spread sauce on the pizza dough. - Put one of the crusts on the pizza stone in the oven for 4 minutes then remove.
