FRENCH PEPPER STEAK (STEAK AU POIVRE) RECIPE BY TASTY

Here's what you need: new york strip steak, kosher salt, coarsely ground black pepper, vegetable oil, butter, cream, brandy or cognac, dijon mustard

14 oz new york strip steak, or other steak of good quality
2 teaspoons kosher salt
2 tablespoons coarsely ground black pepper
1 tablespoon vegetable oil
2 tablespoons butter, divided
1 cup cream
⅓ cup brandy or cognac
1 tablespoon dijon mustard

Steps:

  • Liberally season steak with salt and pepper, being sure to coat the entire surface of the meat. Using your hands, press the seasoning into the meat to create an even coating.
  • Heat the vegetable oil and 1 tablespoon of butter in a large skillet over medium-high heat until just smoking. Add the steak to the pan and sear for 4 minutes. Turn and sear the other side for another 4 minutes, for medium-rare. If steak has a fat-cap on its side, be sure to sear it as well for 30 seconds to 1 minute. Once cooked to desired doneness, transfer the steak to a cutting board to rest.
  • Reduce the heat to medium and add the brandy to the skillet. Allow the brandy to cook down for about 1 minute while using a whisk to scrape off any browned bits in the bottom of the pan. Once the brandy has reduced by half, add the cream and continue to whisk until combined. Add the Dijon mustard and remaining tablespoon of butter and continue to cook until mixture begins to reduce and thicken, 5-7 minutes. The final pan sauce should have a rich consistency and coat the back of a spoon. Reduce the heat to low.
  • Slice the steak into ½-inch (1.5cm) pieces. Pour cream sauce over the top and serve.

4 tenderloin steaks, 6 to 8 ounces each and no more than 1 1/2 inches thick
Kosher salt
2 tablespoons whole peppercorns
1 tablespoon unsalted butter
1 teaspoon olive oil
1/3 cup Cognac, plus 1 teaspoon
1 cup heavy cream

Steps:

  • Remove the steaks from the refrigerator for at least 30 minutes and up to 1 hour prior to cooking. Sprinkle all sides with salt.
  • Coarsely crush the peppercorns with a mortar and pestle, the bottom of a cast iron skillet, or using a mallet and pie pan. Spread the peppercorns evenly onto a plate. Press the fillets, on both sides, into the pepper until it coats the surface. Set aside.
  • In a medium skillet over medium heat, melt the butter and olive oil. As soon as the butter and oil begin to turn golden and smoke, gently place the steaks in the pan. For medium-rare, cook for 4 minutes on each side. Once done, remove the steaks to a plate, tent with foil and set aside. Pour off the excess fat but do not wipe or scrape the pan clean.
  • Off of the heat, add 1/3 cup Cognac to the pan and carefully ignite the alcohol with a long match or firestick. Gently shake pan until the flames die. Return the pan to medium heat and add the cream. Bring the mixture to a boil and whisk until the sauce coats the back of a spoon, approximately 5 to 6 minutes. Add the teaspoon of Cognac and season, to taste, with salt. Add the steaks back to the pan, spoon the sauce over, and serve.

3 lbs rib eye steaks, cut into 6 equal portions, about 1 1/2 inch thick
3 tablespoons butter
2 tablespoons olive oil

1/2 cup brandy
1/4 cup heavy cream
fresh parsley, for garnish

Steps:

  • Press pepper into both sides of steaks. Heat butter and oil in a large skillet over high heat; add steak and sear on both sides. Reduce heat to medium high and cook an additional 6 to 7 minutes on each side, more for well done.
  • Remove steak to serving platter and keep warm. Season lightly with salt to taste.
  • Add brandy to pan with drippings and heat until bubbly; add a small amount of cream. Pour sauce over steaks; garnish with parsley.

This is one that I would probably grill the steaks, as I love the added flavor they get from the grill, and then make the recipe for the sauce on the stove top or side burner. Note: You can use coarsely ground peppercorns in place of the black pepper stated for the recipe.

4 slices steaks, 1-inch thick
2 teaspoons kosher salt, to taste
1/2 teaspoon black pepper, to taste
1 tablespoon light olive oil
1/3 cup shallot, chopped
1/4 cup butter, cut into 2 pieces
1/2 cup cognac
3/4 cup heavy cream

Steps:

  • Season both sides of each steak with the salt and pepper.
  • Heat the oil in a large heavy skillet over high heat, and then sauté the steaks, 2 at a time, for 3-4 minutes on each side.
  • Transfer the steaks to a heatproof dish and keep them warm in a 175-degree oven.
  • Pour any leftover liquid from the skillet and lower the heat to medium.
  • Add the shallots and 1 piece of butter; sauté for 5 minutes, until cooked.
  • Carefully add Cognac (it may flame) and bring to a boil for 2-3 minutes until the sauce thickens.
  • Stir in cream and other piece of butter; heat through, stirring constantly.
  • Serve over steaks immediately.

1 teaspoon salt
4 teaspoons fresh coarsely ground black pepper
4 (6-ounce, 3/4-inch thick) tenderloin steaks
1 tablespoon butter
5 tablespoons Cognac
3 teaspoons Dijon mustard
2/3 cup half-and-half or light cream
3 tablespoons brined green peppercorns (drained)

Steps:

  • Rub salt and ground black pepper over both sides of the steak.
  • Heat a dry saute pan over high heat. When pan becomes very hot add butter, let melt, then add steaks. Turn steaks only once, and cook to desired degree of doneness (approximately 3 minutes per side for medium-rare, depending on exact thickness.)
  • Add the Cognac to the pan, let sit for 5 seconds, and then light a match to it. Flame should burn out after approximately 10 seconds. (If flame continues to burn, put it out by placing a lid on the pan).
  • Remove steak from pan, leaving the drippings in the pan, and reserve on a warm plate and cover with aluminum foil.
  • Reduce heat to low and slowly stir Dijon and half-and-half into the drippings. Add peppercorns. Stir and simmer for a couple of minutes until sauce becomes thick. Place steaks on warmed serving plates. Pour sauce over steak.

This is my #1 favorite recipe in my whole collection. It is the first meal I made for my husband. Be sure to use green peppercorns (available packed in brine in a can or bottle). Adapted from a recipe in Jr. League of San Francisco's "San Francisco a la Carte".

6 tenderloin (I use filet Mignon) or 6 steak fillets (I use filet Mignon)
2 cups heavy cream
1 -2 tablespoon oil
2 beef bouillon cubes
1 tablespoon fresh lemon juice
1/2 teaspoon salt
3 tablespoons dry sherry
1/2 cup brandy
4 tablespoons green peppercorns, rinsed and drained

Steps:

  • In a heavy saucepan over medium-heat cook cream, stirring fairly frequently until reduced to approximately 1 cup.
  • (Be sure to use a large enough pan as this bubbles up and will overflow pan if you are not careful).
  • The cream should be thick.
  • When it is, set in refrigerator.
  • In skillet large enough to hold the filets in a single layer, heat oil until it is hot.
  • Cook steaks for 3 to 4 minutes per side and then set aside and keep warm (I put them in oven at low temperature).
  • Pour off excess fat from the skillet and deglaze with brandy; set aside.
  • To the cream, add bouillon cubes, lemon juice, salt and sherry.
  • Stirring constantly, bring to a boil.
  • Remove from heat and add deglazing liquid along with the peppercorns.
  • Reheat and pour a small amount over each steak.
  • Serve remaining sauce in a gravy boat.

4 beef loin steaks, cut 1-inch thick
1 tablespoon kosher salt
2 tablespoons whole black peppercorns
1 tablespoon vegetable oil
1/3 cup shallot, finely chopped
1/4 cup butter, cut into 4 pieces (1/2 stick)
1/2 cup cognac or 1/2 cup other brandy
3/4 cup heavy cream

Steps:

  • Preheat oven to 200º.
  • Pat steaks dry and season both sides with kosher salt.
  • Coarsely crush peppercorns in a sealed plastic bag with a meat pounder or bottom of a heavy skillet, then press pepper evenly onto both sides of steaks.
  • Heat a 12-inch heavy skillet (preferably cast-iron) over medium high heat until hot, about 3 min, then add oil. Swirl skillet to lightly coat the entire skillet.
  • Saute steaks in batches (2 at a time). DO NOT TOUCH - this lets them brown nicely and makes all the difference. Cook for 6 min and flip and cook for another 6 minute for medium rare steaks. Repeat with remaining 2 steaks.
  • Transfer cooked steaks to a heatprook platter and keep warm in the oven.
  • After all 4 steaks are cooked pour off fat from skillet if any, then add shallots and half of the butter. Cook over medium low heat, stirring and scraping up any brown bits from bottom of the pan until the shallots are well browned all over, 3-5 minute.
  • Remove skillet from heat and add Cognac. (If you add while on the burner it may ignite.) Boil, stirring until liquid is reduced to a glaze, 2-3 minute.
  • Add cream and any meat juices that have accumulated on the platter in the oven. Boil sauce, stirring occasionally, until reduced by half, 3-5 minute
  • Add the other half of the butter and cook over low heat swirling the skillet to melt and incorporate the butter.
  • Serve sauce with steaks.

1 teaspoon beef bouillon
1/2 tablespoon lemon juice
1 tablespoon marsala wine or 1 tablespoon madeira wine
1/4 teaspoon salt (or to taste)
1/4 cup cognac

2 tablespoons butter
4 (8 ounce) sirloin steaks, each 1-inch thick (room temperature)
2 tablespoons peppercorns, crushed (To crush, place the peppercorns in a plastic bag and flatten them with flat side of meat mallet)

1/2 loaf French bread, cut into 1-inch thick rounds & toasted on both sides

Steps:

  • In a saucepan, heat the cream until it reduces by half (20-30 minutes).
  • In a saute pan, heat the oil and butter.
  • Spread crushed peppercorns on a work surface.
  • Pat the steaks dry and coat both sides with an even layer of peppercorns, pressing in with heel of hand to make adhere; season to taste with garlic salt.
  • Lay the steaks in the pan.
  • Sear steaks over high heat to desired doneness (the steaks are medium-rare when they feel slightly resistant to touch and you can see a faint pearling of red juice on the surface).
  • Add bouillon, lemon juice, wine, and salt to the sauce, and stir.
  • When the steaks have cooked, remove them from the pan; pour in the brandy.
  • Ignite the brandy and, once the flames die down, stir to deglaze the pan; then add the brandy to the cream sauce.
  • Place each steak on a toasted slice of bread and top with sauce.
