2 boneless strip steaks, (about 3/4 pound each)
Cracked black pepper
1 baguette
Olive oil
1 clove garlic
Salt
1/4 pound Roquefort cheese

Steps:

  • Trim excess fat from steaks. Dry them well, coat all sides with cracked pepper, and refrigerate until needed.
  • Split baguette in half lengthwise. Toast in the oven until golden brown. Drizzle with olive oil, and rub lightly with garlic clove.
  • Heat a cast-iron skillet over high heat, and sear the steaks on both sides. Turn heat down to medium, and cook to desired doneness, about 3 to 4 minutes per side for medium rare. Sprinkle with salt, and let steaks sit for 5 minutes.
  • Cut toasted baguette into 4 equal pieces. Make 4 sandwiches, placing thinly sliced steak atop slices of Roquefort, then sprinkling with caramelized onions and rosemary. Serve immediately.

1 cup Peppadew peppers, drained
1/4 cup mayonnaise
1/4 cup crumbled blue cheese
2 tablespoons sour cream
Freshly ground pepper
Vegetable oil, for brushing
1 1/2 pounds skirt steak, cut into 4 pieces
Kosher salt
4 ciabatta or other rustic rolls, split open

Steps:

  • Put the Peppadew peppers and mayonnaise in a food processor and pulse until roughly chopped. Transfer to a bowl; clean out the food processor. Add the blue cheese, sour cream and 1/2 teaspoon pepper to the processor and pulse until combined. (The spreads can be made 1 day ahead; cover and refrigerate.)
  • Preheat a grill to medium high and brush with vegetable oil. Sprinkle the steaks with 1 teaspoon salt and 1/4 teaspoon pepper. Grill until a thermometer inserted into the meat registers 135 degrees F for medium rare, about 4 minutes per side. Transfer the steaks to a cutting board and season with salt; let rest 10 minutes. Meanwhile, brush the insides of the rolls with vegetable oil and grill cut-side down until marked, about 1 minute.
  • Spread 3 tablespoons of the Peppadew mayonnaise on the bottom half of each roll, then spread 1 tablespoon blue cheese mixture on the top half. Slice the steak against the grain and divide among the rolls.

2 large yellow skinned onions, sliced very thin
Coarse salt and pepper or steak seasoning blend
2 teaspoons extra-virgin olive oil, 2 drizzles
1 1/2 pounds lean beef tenderloin or sirloin, ask butcher to slice the meat very thin
1 teaspoon garlic salt
Freshly ground black pepper
8 slices provolone cheese, from the deli counter
4 soft Italian sandwich hogie rolls, split 6 to 8 inches long each, split lengthwise

Steps:

  • Heat a medium saucepan over medium high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan. Add onions and season with salt and pepper or steak seasoning blend. Cook onions, stirring occasionally, 10 minutes or until onions are soft and caramel in color.
  • Heat a heavy griddle pan over medium high to high heat. Wipe griddle with a drizzle of oil using a paper towel. Sear and cook thin sliced steaks until brown but not crisp, about 2 minutes on each side. Cook steaks in single layers in 2 batches and tenderize by cutting into meat with the side of your spatula while they cook. When the steaks are browned, just before you remove them from heat, sprinkle them with garlic salt and pepper. When all of the steaks are cooked, line each of your split rolls with 2 slices of provolone cheese. Pile 1/4 of your meat and onions on to the griddle and mix together with your spatula. Pile the meat and onions into rolls on top of the cheese. The heat from the meat and onions will melt the cheese. Repeat for remaining servings and serve.

2 tablespoons olive oil
8 Kansas City/New York strip steaks, fat cut off
2 tablespoons lemon pepper
1 teaspoon kosher salt

8 deli rolls, split
2 tablespoons butter
8 large eggs
Pinch kosher salt
Pinch freshly ground black pepper
1/2 cup mayonnaise
2 teaspoons ancho chile powder

Steps:

  • For the strip steak sandwiches: Heat 2 grill pans over high heat.
  • Brush the onion slices on one side with oil and place them oiled-side down on the grill pans. Cook until grill marked, 3 to 4 minutes, then brush the tops with more oil, flip the slices and cook until grill marked on the other side, another 3 to 4 minutes. Set aside.
  • Season the strip steaks on both sides with the lemon pepper, salt and black pepper. Grill for 2 minutes, flip and grill an additional 2 minutes for rare.
  • Grill the rolls cut-side down until toasted, about 2 minutes.
  • For the eggs: Heat a large nonstick skillet over medium heat and add the butter. Add all the eggs (or cook in batches if needed), sprinkle with salt and pepper and fry for 2 minutes. Flip the eggs and cook for 45 seconds.
  • For the ancho mayo: Mix together the mayonnaise and chile powder in a small bowl
  • Slather both sides of the rolls with some ancho mayo and top with a steak, some onions and an egg.

2 tablespoons butter
¼ medium onion, sliced
4 large fresh mushrooms, sliced
¼ green bell pepper, sliced into long strips
1 (1/2 pound) well-marbled beef steak of any type, sliced as thinly as possible
3 tablespoons chopped pickled hot peppers
1 teaspoon hot pepper sauce
2 slices sharp Cheddar cheese
salt and pepper to taste
⅓ French baguette, cut in half lengthwise

Steps:

  • Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion; cook and stir until tender. Push onion to the side of the pan, and add the mushrooms. Cook and stir until softened, then add the bell pepper and cook just until tender, about 3 minutes. Remove from the pan with a slotted spoon, and set aside.
  • Add the remaining butter to the skillet. No need to clean the pan, just let it heat up a little bit. Place the steak in the skillet along with the pickled peppers. Season with salt and pepper. The steak cooks really fast, just a couple of minutes. Once the steak is mostly browned, return the onion and pepper to the pan. Cook until heated through.
  • Turn off the heat, and place the slices of cheese over the top of the pile so they can melt. Scoop the whole pile into the awaiting bread, making sure to pour some of the juices onto that wonderful sandwich.

  • Preheat the broiler or toaster oven.

10 slices provolone cheese
1 loaf French bread
1 (14 ounce) can beef broth
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
2 tablespoons Worcestershire sauce
⅛ teaspoon red pepper flakes
¼ cup Pinot Noir or other dry red wine
½ cup prepared horseradish
½ cup brown mustard

Steps:

  • Heat the oil in a large skillet over medium heat. Add the beef, and cook until browned. Add the mushrooms, bell pepper and onion; cook and stir until starting to become tender, about 5 minutes.
  • In a slow cooker, combine the beef broth, salt, pepper, Worcestershire sauce, red pepper flakes and red wine. Transfer the beef and vegetables to the slow cooker, and stir to blend. Cover, and cook on High for 3 to 4 hours, until beef is extremely tender.
  • Preheat the oven to 425 degrees F (220 degrees C). Drain the liquid from the slow cooker, and save for dipping. Slice the French bread loaf lengthwise like a submarine sandwich. Mix together the horseradish and mustard; spread onto the inside of the loaf. Place slices of provolone cheese on both sides of the loaf, then fill with the beef and vegetables. Close the loaf, and wrap the entire sandwich with aluminum foil.
  • Bake for 10 to 15 minutes in the preheated oven. For crunchier bread, you can bake it without the aluminum foil. Slice into servings, and serve with the juices from the slow cooker for dipping.

1 lb sirloin steak, about 1 inch thick
1 small red pepper
1 small orange bell pepper
1 small yellow pepper
2 green onions or 1 shallot, chopped
1 clove garlic, minced
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
1 tablespoon olive oil
1 pinch salt and pepper
4 crusty rolls
1 tablespoon Dijon mustard
1 teaspoon oregano
1 clove minced garlic
1/2 teaspoon fresh ground pepper

Steps:

  • Combine Mustard Herb mix.
  • Trim fat from steak and spread mustard mix on each side.
  • Place peppers, onion, garlic and basil on a large piece of aluminum foil and toss together.
  • Sprinkle with oil, salt and pepper and fold up foil to form a package.
  • Place steak and and foil package on greased grill over high heat.
  • Cook steak, turning once, to medium rare, about 10 minutes.
  • Cook vegetables until the package is puffed.
  • Remove steak from heat and let stand, tented with foil, for 5 minutes.
  • Cut rolls in half without cutting completely through.
  • Slice steak and stack onto rolls; top with pepper mixture.

1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
1/2 cup mayonnaise, divided
3/4 pound thinly sliced deli roast beef
1/4 cup Italian salad dressing
5 sandwich rolls, split
3/4 cup shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, saute the onion and peppers in 2 tablespoons of mayonnaise until crisp-tender. Remove vegetables and keep warm. , In the same skillet, add the roast beef, Italian dressing and remaining mayonnaise. Cook and stir for 4-5 minutes or until heated through. Place beef and vegetables on rolls; sprinkle with mozzarella cheese.

1 tablespoon olive oil
1 medium onion, halved and sliced into 1/4-inch-thick wedges
1 red bell pepper (ribs and seeds removed), thinly sliced lengthwise
1 green bell pepper (ribs and seeds removed), thinly sliced lengthwise
Coarse salt and ground pepper
2 tablespoons red-wine vinegar
Reserved Chili-Rubbed Skirt Steak, very thinly sliced, or or 1 1/2 pounds cooked skirt steak
4 crusty Italian hero rolls (about 3 ounces each), split in half horizontally, insides torn out to form a hollow
6 ounces thinly sliced (about 10 slices) pepper Jack cheese

Steps:

  • Preheat broiler with rack 6 inches from heat. In a large skillet, heat oil over medium-high. Add onion and peppers; cook, stirring often, until softened and beginning to char, 10 minutes. Season with salt and pepper. Remove from heat; stir in vinegar and steak.
  • Place bottom halves of rolls on a large rimmed baking sheet; dividing evenly, top each with meat mixture, then cheese slices. Broil until cheese has melted, about 2 minutes. Remove from oven; transfer to a cutting board.
