SHISHITO PEPPER MARTINIS (PEPPINI)



Shishito Pepper Martinis (Peppini) image

Classic martini but garnished with blistered shishito peppers and lemon slices. I also like this in a dirty martini. Any roasted or blistered peppers can be used depending on how sweet or hot you may like it.

Yield 10

Number Of Ingredients 10

1 tablespoon olive oil
10 peppers shishito peppers
10 thin slices lemon
½ teaspoon sea salt
½ medium lemon, juiced
½ teaspoon flaky sea salt
1 teaspoon olive oil
30 fluid ounces vodka
10 fluid ounces dry vermouth
ice as needed

Steps:

  • Heat a heavy cast iron or steel pan over medium-high to high heat and add 1 tablespoon oil. Add the peppers and blister, letting them sit on one side and then tossing a few times until they at blistered all the way around, about 8 minutes total. Season with sea salt.
  • Lay the lemon slices in the pan so that they are flat to the bottom of the pan. Allow the lemons to color slightly and flip, about 2 minutes total. Remove to a bowl.
  • Squeeze lemon half over peppers. Sprinkle on flaky salt and drizzle with 1 teaspoon oil.
  • Shake or stir vodka, vermouth, and ice together in batches, adding 1 teaspoon or so of the juices from the bowl of peppers and lemons to each batch. Strain into martini glasses. Garnish each martini with a pepper and a slice of lemon.

  • muddle the pear, pear syrup and simple syrup in cocktail shaker.
  • Add other ingredients and shake with ice.
  • Strain into cocktail glass.
  • Thinly slice the pear, and hang on martini glass.

Sweet and spicy, peppery vodka martinis. Serve as a savory before-dinner cocktail, or as a light alternative to a bloody mary at brunch. Amounts given below yield two cocktails.

1 medium bell pepper, seeded and sliced into 2-inch pieces
1/4 medium jalapeño pepper, seeded (use more or less depending on how spicy you want the drink to be)
1 lime, juiced
1/2 garlic clove, peeled
3 ounces Stoli vodka
1 teaspoon agave nectar or simple syrup
1 dash hot sauce, preferably Cholula
Freshly ground black pepper
Coarse sea salt or kosher salt, optional

Steps:

  • First, line the rims with black pepper and salt if desired. Sprinkle a small plate with pepper and salt, run a lime wedge around the rims of two martini glasses, and dip the edges in the salt and pepper mixture.
  • In a cocktail shaker, muddle the bell pepper, jalapeno, lime juice and garlic. You're done when the peppers have no more crunch left in them.
  • Add the vodka, agave or simple syrup, hot sauce, a couple twists of freshly ground black pepper and a dash of salt. Fill the shaker with ice, top the shaker with its lid and shake it like crazy. Strain the mixture into the prepared glasses and serve immediately.

3 ounces vanilla vodka
1-ounce dark creme de cacao
2 ounces brewed espresso, room temperature or chilled (not hot)
Softly whipped cream, for garnish
Bittersweet chocolate, for garnish

Steps:

  • Put the liquors and espresso in a chilled cocktail shaker. Shake well until very cold, then strain into 2 chilled martini glasses. Float a layer of whipped cream over the top. Using a vegetable peeler, shave some dark chocolate on top of each glass.

2 cups Plymouth gin, divided
4 tablespoons dry Sherry (such as La Ina or Tio Pepe), divided
8 teaspoons pepper jelly, divided
4 teaspoons orange bitters (such as Regans' No. 6), divided
Ice cubes
8 Tomolives*
*Tiny pickled green tomatoes; available at specialty foods stores and online from oldsouth.com and igourmet

Steps:

  • Combine 1/2 cup gin, 1 tablespoon Sherry, 2 teaspoons pepper jelly, and 1 teaspoon orange bitters in cocktail shaker. Fill with ice cubes and shake vigorously. Strain into 2 Martini glasses. Repeat 3 times for 6 more drinks. Garnish each with 1 Tomolive and serve.

BLOODY MARY PEPPER PRAWNS

3 tbsp olive oil
1 shallot, finely chopped
1 fat garlic clove, thinly sliced
½ tsp celery seeds
14-16 large raw king prawns, heads removed but tail left on, deveined
2 tsp cornflour
¼ tsp cayenne pepper
¼ tsp black pepper
50ml vodka
100ml passata
3 tbsp tomato ketchup
few shakes of Tabasco sauce, depending on how hot you like it
celery sticks and good crusty bread, to serve

Steps:

  • Heat the oil in a large frying pan or wok. Add the shallot and fry for 1-2 mins until softened. Add the garlic and celery seeds, and sizzle for 1 min more, then turn the heat up to high. Toss the prawns with the cornflour, cayenne and black pepper. Add to the pan and stir-fry for 1 min until turning pink, then add the vodka (stand back as it may catch fire) and bubble until most of the liquid has evaporated.
  • Add the passata, ketchup, Tabasco and a good pinch of salt. Give everything a stir and cook for 1 min more, then transfer to a serving dish. Scatter with celery leaves and place in the centre of the table with celery sticks and chunks of bread for mopping up the sauce.
