PEPPER-HONEY CEDAR PLANK SALMON

I live in Alaska and have 3 sons that love to fish. I have had to come up with some pretty creative ways to prepare salmon, this is by far my family and friends favorite way to eat fresh salmon. I soak an untreated cedar plank in water and bourbon while they are out fishing for the day and fix the barbeque sauce so that's it is ready to get grilling.....

2 untreated cedar planks
¼ cup pineapple juice
⅓ cup soy sauce
2 tablespoons white vinegar
2 tablespoons lemon juice
1 tablespoon olive oil
¾ cup honey
¼ cup packed brown sugar
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon paprika
¼ teaspoon garlic powder
6 (6 ounce) skinless, boneless salmon fillets
1 pinch salt and pepper to taste

Steps:

  • Soak the cedar planks in warm water for 1 to 2 hours. Add a splash of bourbon to the water if desired.
  • Bring the pineapple juice, soy sauce, vinegar, lemon juice, olive oil, and honey to a simmer in a saucepan over medium-high heat. Reduce the heat to medium-low, and stir in the sugar, 1 teaspoon black pepper, cayenne pepper, paprika, and garlic powder. Simmer, stirring occasionally, until the sauce has reduced to a syrupy consistency, about 15 minutes. Set the sauce aside.
  • Preheat an outdoor grill for medium heat. Place the planks on the grate. They are ready to cook on when they start to smoke and crackle just a little.
  • Season the salmon with a light sprinkling of salt and pepper. Place the fillets onto the smoking cedar planks, close the lid of the grill, and cook for 10 minutes. Spoon a small amount of the sauce over the salmon fillets, and continue cooking until the fish turns opaque in the center, about 5 minutes more. Serve with the remaining sauce.

Smoked salmon is great for the road because it holds up really well and can be prepared ahead of time. It can be served hot, cold or room-temperature. When you smoke something, it will cook it through without making it dry. The pine nut relish is also great at room temperature and adds flavor, acidity and richness to the dish. The celery salad adds freshness and carries acidity, especially with the addition of the Meyer lemon juice.

1 1/2 pounds wild salmon, cut into 6 portions
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh parsley
Zest of 1 Meyer lemon
1 1/2 cups apple cider vinegar
3/4 cup dried currants
2 tablespoons honey
1 tablespoon minced shallots
1 tablespoon mustard seeds
1/4 cup pine nuts, toasted
Kosher salt
4 stalks celery with leaves, peeled and sliced thinly on a bias
1/4 cup fresh cilantro leaves
2 tablespoons olive oil
Juice of 1/2 Meyer lemon
Flaked sea salt and freshly ground black pepper

Steps:

  • For the salmon: Preheat a smoker for cooking to 225 degrees F and preheat your oven to 425 degrees F.
  • Remove the cedar planks from the water and pat the surfaces dry. Put the cedar planks on a baking sheet. Place the salmon portions skin-side down on the cedar planks. Drizzle with the olive oil and sprinkle with salt and pepper. Evenly top the salmon with the parsley and lemon zest. Place the baking sheet in the smoker and allow the salmon to smoke just until it has been slightly infused with smoke flavor, about 15 minutes. Remove from the smoker and immediately transfer to the oven to finish cooking, about 15 minutes. Remove from the oven and let sit until room temperature, or refrigerate and serve the next day.
  • For the currant and pine nut relish: Combine the vinegar, currants, honey, shallots and mustard seeds in a small pot. Heat the pot over medium-high heat until bubbles begin to form, then lower the heat to maintain a slow simmer. Continue to cook until the currants have plumped and the liquid has reduced and become slightly viscous, 10 to 15 minutes. Remove from the heat and fold in the pine nuts. Season the relish with salt.
  • For the salad: Dress the celery, celery leaves and cilantro in a medium bowl with the olive oil, Meyer lemon juice, flaked salt and pepper. Top the salmon with the celery salad and a spoonful of the currant and pine nut relish and serve.

4 cedar 12 by 12-inch cedar planks, soaked in water for 3 hours
4 salmon fillets (6 ounces each)
2 tablespoons olive oil
Salt and freshly ground pepper
2 yellow peppers, charred on the grill, seeded and coarsely chopped
1/3 cup rice wine vinegar
6 cloves garlic, coarsely chopped
Pinch of saffron threads
1 tablespoon honey
1 teaspoon Dijon mustard
3/4 cup pure olive oil
Salt and freshly ground pepper

Steps:

  • Preheat grill. Remove the planks from the water and place on the grill until hot. Have ready 4 sheets of aluminum foil cut into 16 by 16-inch sheets. Remove the planks with tongs and place 1 plank in the center of each piece of foil. Brush the salmon on both sides with olive oil and season with salt and pepper to taste. Wrap the aluminum around the salmon, return to the grill and cook for approximately 10 minutes or to medium well doneness. Remove each fillet from the plank and drizzle with the sauce.
  • In a blender or food processor, combine the peppers, vinegar, garlic, saffron, honey, and mustard and blend 30 seconds. With the motor running, slowly add the oil until it emulsifies. Season to taste with salt and pepper.

This is my favorite grilled salmon. It is grilled on a cedar plank (make sure you soak the plank for at least 8 hours). The ingredients are the perfect blend. The original recipe has it baked in an oven at 400 degrees for 15 to 20 minutes. We cook it at the same temp and time on the grill. You could use 4 - 6 ounce portion fillets (skin on) on 2 cedar planks. We prefer half a side of salmon with the skin on. The recipe is by Michael Chiarello. I like to serve this with wild rice and a tossed green salad.

1 lb salmon fillet
1 tablespoon sea salt
1/2 teaspoon ground pepper
1/4 teaspoon dry mustard
1/2 cup honey
1/4 cup balsamic vinegar
1 tablespoon butter, melted
1 cedar plank (soaked in water for at least 8 hours)
1 tablespoon olive oil

Steps:

  • Presoak cedar plank for 8 hours.
  • Preheat grill to 400 degrees.
  • Cut a few slits in the side of the salmon, but don't go all the way through, halfway. Do the same if using portions. The slits allow the glaze to absorb into the fillet.
  • In a bowl mix salt, pepper and dry mustard.
  • In a glass bowl, microwave the honey for about 30 seconds to liquefy. Remove bowl and blend in balsamic vinegar.
  • With a basting brush, baste the salmon with butter. Apply dry seasoning mix (salt, pepper and dry mustard) on flesh side of salmon and lightly rub it into the salmon(don't tear flesh). I just pat the dry seasoning on.
  • With the basting brush baste the salmon with the honey balsamic mixture. Reserve liquid for later.
  • Heat the planks on the grill over medium heat for 3-5 minutes to brown them. Watch so they don't catch on fire. Remove from grill and rub olive oil on the browned side of plank. Lay salmon on the oiled side of the plank with skin side down and baste with remaining reserved liquid.
  • Cook for 15 to 20 minutes or until done. A thicker cut may take a little longer. If cooking in an oven use a cookie sheet to prevent a mess.
  • Note: prep time doesn't include cedar plank soak time of 8 hours.

2 lbs salmon fillets
2 cedar planks (14-inch x 6-inch)
6 tablespoons honey dijon mustard (Jack Daniels)
1 cup brown sugar
1 dash fresh ground pepper
1 dash salt
1/4 cup Jack Daniels Whiskey
1/4 cup soy sauce
2 teaspoons Tabasco sauce
1 teaspoon onion powder
6 tablespoons brown sugar
2 tablespoons red wine vinegar
1/4 cup water
4 beef bouillon cubes
1 tablespoon shallot, minced
2 tablespoons Worcestershire sauce

Steps:

  • Soak cedar planks in salted water for at least 2 hours. Set grill for indirect grilling and heat to medium-high (400-450 degrees). Remove skin from salmon fillets. Remove any remaining bones. Rinse the salmon under cold running water and pat dry with paper towels. Generously season the salmon with salt and pepper on both sides. Lay the salmon (on what was skin-side down) on the cedar plank and carefully spread the mustard over the top and sides. Place the brown sugar in a bowl and crumble between your fingers, then sprinkle over the mustard.
  • Place the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook until cooked through, around 20 to 30 minutes. The internal temperature should read 135°F Transfer the salmon and plank to a platter and serve right off the plank, or transfer filets to a serving plate.
  • SAUCE: Blend all remaining ingredients in a medium sauce pan and bring to a boil. Simmer on low heat for 10-15 minutes. Be careful that you don't let it get too think, otherwise it will caramelize as it cools due to the brown sugar.
  • Serve salmon over a bed of wilted spinach, then drizzle the sauce over the top of it.
  • ALTERNATE COOKING METHOD: A direct method to grill the salmon may also be used. If this is preferred, spread the mustard and brown sugar on the salmon but do not place the fish on the plank. Set up the grill for direct grilling on medium-high. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes. Turn the plank over and place the fish on top. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135°F Check the plank occasionally. If the edges start to catch fire, mist with water, or move the plank to a cooler part of the grill.
