3 large cloves garlic, chopped
1/4 cup extra-virgin olive oil, plus more for drizzling
1 pound refrigerated pizza dough
All-purpose flour, for kneading
Cornmeal, for dusting
Kosher salt
1/2 cup thinly sliced mozzarella cheese (4 ounces)
2 6.5-ounce cans chopped clams, juice drained and reserved
1/4 teaspoon dried oregano
2 tablespoons grated parmesan cheese
2 cups baby arugula
Juice of 1 lemon
Red pepper flakes, for garnish (optional)

Steps:

  • Preheat the oven to 500 degrees. Place a pizza stone or inverted rimmed baking sheet on the bottom rack.
  • Mix the garlic and 1/4 cup olive oil in a small bowl. Knead the dough about 6 times on a lightly floured surface. Roll and stretch into a 12-inch round. Place the dough on a pizza peel, or another inverted baking sheet, dusted with cornmeal.
  • Brush half of the garlic-oil over the dough; season with salt. Scatter the mozzarella and clams over the crust; drizzle with 2 tablespoons of the reserved clam juice and the remaining garlic-oil. Sprinkle with the oregano, parmesan, and salt to taste. Slip the pizza onto the preheated pizza stone or baking sheet (the cornmeal will help it slide off). Bake until the crust is light brown, 13 to 15 minutes.
  • Just before the pizza is done, drizzle the arugula with olive oil and lemon juice. Slice the pizza; top each piece with arugula and season with red pepper flakes, if desired.

1 package yeast
1 teaspoon sugar
1 cup tepid water (110 degrees)
2 1/4 to 2 1/2 cups white flour
1/2 cup whole-wheat flour
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon coarse-ground black pepper
Cornmeal
White clam topping (see recipe)

Steps:

  • Combine the yeast and the sugar with one-quarter cup of the water.
  • Combine the remaining water with two and one-quarter cups of white flour and the whole-wheat flour, oil, salt and pepper. When the yeast mixture is foamy, add it to the flour mixture. Mix vigorously until it holds together as rough dough. Turn the dough out onto a floured board and let it rest while you clean, dry and then oil the bowl.
  • Knead the dough a full 12 minutes, adding white flour as necessary to create a silky-smooth dough. Return it to the bowl and cover it with a double layer of plastic wrap. Let the dough rise in a warm place for at least two hours (up to all day, if desired).
  • Preheat the oven and two pizza stones dusted with cornmeal to 450 degrees.
  • Punch the dough down and flatten it on a lightly floured board. Divide it in half. Pounding with the heel of your hand, methodically work one piece into a circle about 11 inches in diameter.
  • Place the dough on a baker's peel that has been dusted with cornmeal, adding topping, and slide it onto a hot pizza stone. Repeat the process with the second half of the dough.
  • Bake each pizza about 15 minutes, or until the crust is light brown.

One 6.5-ounce can clams, drained with 3 tablespoons juice reserved
2 tablespoons olive oil, plus more for brushing
1 teaspoon chopped fresh oregano, plus more for garnish
1 teaspoon crushed red pepper flakes, plus more for garnish
3 cloves garlic, pressed
Kosher salt and freshly ground black pepper
1 pound pizza dough
1/2 cup grated low-moisture mozzarella
1/2 cup grated Pecorino Romano

Steps:

  • Preheat the oven to 425 degrees F.
  • In a small bowl, combine the clams, the reserved clam juice, olive oil, oregano, crushed red pepper flakes, garlic, a pinch of salt and a pinch of pepper. Set aside.
  • Spread the pizza dough into a large oval on a baking sheet. Brush with olive oil, then sprinkle with salt and pepper. Sprinkle with the mozzarella and half of the Pecorino Romano. Scatter over the clam mixture, leaving a 1/2-inch border around the edge of the dough.
  • Bake until the crust is golden and crisp, about 15 minutes.
  • Transfer to a cutting board and sprinkle over the remaining Pecorino Romano, some fresh oregano leaves and more red pepper flakes. Slice and serve.

2 dozen large hard-shell clams, such as cherrystone or chowder clams
1/2 teaspoon salt
2 bay leaves
1 teaspoon freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
1 medium onion, chopped
1 red bell pepper, cored, seeded, and chopped
2 garlic cloves, chopped
2 medium vine-ripe tomatoes, seeded and chopped
2 fresh oregano sprigs, leaves striped from the stem
1 (15-ounce) container ricotta cheese
1/2 pound bacon strips, sliced
1/2 cup freshly grated pecorino
1 handful fresh flat-leaf parsley, chopped
1 package active dry yeast
1 teaspoon sugar
1 cup warm water
1 tablespoon kosher salt
Extra-virgin olive oil
3 cups 00 flour, plus more for dusting

Steps:

  • Make the pizza dough as directed in the master recipe. Stick a pizza stone in the oven and preheat them to 500 degrees F.
  • Wash and scrub clams well to remove the exterior sand. Fill a steamer or pot with 1-inch of water, add 1/2 teaspoon of salt, and toss in the bay leaves. Heat until the water is simmering and then add the clams. Cover and steam for 5 to 10 minutes until the clams open - discard any that do not. Remove the clams from the shells, coarsely chop them up, and put in a bowl. Add the lemon juice, a drizzle of olive oil, and season with salt and pepper; set aside.
  • Coat a saute pan with 2 tablespoons of the olive oil and place over medium heat. When the oil gets hazy, add the onion, bell pepper, garlic, tomatoes, and oregano. Cook and stir until the vegetables have cooked down and are really soft, about 10 minutes; season with salt and pepper. Remove from the heat.
  • Spread the ricotta evenly on the crust with a back of a spoon. Scatter the chopped clams all around and top with the sauteed red pepper mixture. Distribute the pieces of bacon on top. Slide the pizza onto the hot stone in the oven and bake for 12 to 15 minutes, until the crust is golden and crisp, and the cheese is bubbly.
  • Before cutting the pizza into slices, drizzle with olive oil, grate pecorino on top, and shower with chopped parsley.
  • In the bowl of a standing electric mixer fitted with a dough hook, combine the yeast, sugar, and warm water; stir gently to dissolve. Let the mixture stand until the yeast comes alive and starts to foam, about 5 to 10 minutes.
  • Turn the mixer on low and add the salt and 2 tablespoons of olive oil. Add the flour, a little at a time, mixing at the lowest speed until all the flour has been incorporated. When the dough starts to come together, increase the speed to medium; stop the machine periodically to scrape the dough off the hook. Get a feel for the dough by squeezing a small amount together: if it's crumbly, add more water; if it's sticky, add more flour - 1 tablespoon at a time. Mix until the dough gathers into a ball, this should take about 5 minutes.
  • Turn the dough out onto a lightly floured surface and fold it over itself a few times; kneading until it's smooth and elastic. Form the dough into a round and place in a lightly oiled bowl, turn it over to coat. Cover with plastic wrap or a damp towel and let it rise in a warm spot (i.e. over a gas pilot light) until doubled in size, about 1 hour. This is a good time to stick a pizza stone in the oven and preheat them to 500 degrees F.
  • Once the dough is domed and spongy, turn it out onto a lightly floured counter. Roll and stretch the dough into a cylinder and divide into 3 equal pieces. Cover and let rest for 10 minutes so it will be easier to roll out.
  • Roll or pat out a piece of dough into a 12-inch circle, about 1/8-inch thick. Dust a pizza paddle with flour and slide it under the pizza dough. Brush the crust with a thin layer of olive oil, and top with your favorite flavors. Slide the pizza onto the hot stone in the oven and bake for 12 to 15 minutes, until the crust is golden and crisp. Repeat with the remaining dough.
  • Yield: 3 pizza crusts

SHRIMP AND CLAM PIZZA

1 pound refrigerated pizza dough, at room temperature
All-purpose flour, for dusting
1 shallot, thinly sliced
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1/3 cup dry white wine
3 cloves garlic, minced
12 littleneck clams, scrubbed
1/2 cup fresh parsley, plus chopped leaves for topping
1/2 teaspoon grated lemon zest
8 ounces medium shrimp, peeled, deveined and halved lengthwise

Steps:

  • Put a pizza stone or an inverted baking sheet on the middle oven rack and preheat to 450 degrees F. Press and stretch the pizza dough into a 10-by-14-inch rectangle on a floured piece of parchment; scatter the shallot on top. Drizzle with 1 tablespoon olive oil and rub into the dough, gently pressing in the shallot; season with salt and pepper. Transfer the dough (on the parchment) onto the hot stone. Bake until the crust is golden, 10 to 15 minutes.
  • Meanwhile, bring the wine, 1 tablespoon olive oil and the garlic to a simmer in a large skillet over medium heat. Add the clams, cover and cook until they open, about 6 minutes; transfer to a cutting board using a slotted spoon. (Discard any unopened clams.) Continue simmering the liquid until reduced by half, 2 to 3 minutes. Remove the clams from their shells and chop.
  • Pulse the parsley with the remaining 2 tablespoons olive oil and the lemon zest in a mini food processor until chopped. Add the clam cooking liquid (with the garlic) and pulse until thickened.
  • Spread the parsley sauce on the baked crust. Top with the clams and shrimp; lightly season with salt and pepper. Return to the oven until the shrimp is cooked through, 3 to 5 minutes. Top with more parsley.

1 tablespoon olive oil

½ cup chopped sun-dried tomatoes
⅓ cup pineapple tidbits, drained
1 tablespoon chopped fresh basil, or to taste

Steps:

  • Prepare sauce: Heat 1 tablespoon olive oil in a saucepan over medium heat. Add onion and saute for 2 minutes. Add garlic and saute until fragrant, about 1 minutes. Stir in tomato paste. Add crushed tomatoes and season with oregano, salt, and pepper. Simmer pizza sauce for about 20 minutes.
  • While the sauce is simmering, preheat the oven to 400 degrees F (200 degrees C).
  • Brush pizza crust with remaining 1 tablespoon olive oil and spread with a thin layer of hot pizza sauce. Sprinkle with 1/4 cup Parmesan cheese and 1/4 cup Italian cheese blend. Evenly sprinkle with clams, sun-dried tomatoes, pineapple, and basil. Sprinkle with remaining cheeses.
  • Bake in the preheated oven until cheese is melted, 10 to 12 minutes.

1 tablespoon fresh thyme leave

Steps:

  • Position a rack in the bottom of the oven and place an inverted baking sheet on top.
  • preheat oven to 500 degrees Fahrenheit.
  • IN a small bowl, combine the olive oil, garlic and 2 pinches salt.
  • Lightly flour a baking sheet, place one piece of pizza dough on top and stretch to fit the dimensions of the baking sheet.
  • Drizzle 2 1/2 tablespoons garlic oil on top.
  • Sprinkle half of the clams on top and season with 2 teaspoons Parmesan, 1 1/2 teaspoons thyme and salt and pepper.
  • Set the baking sheet on the hot baking sheet in the oven.
  • Bake until crisp and golden, about 20 minutes.
  • Repeat with the remaining ingredients to make another pizza.

1/4 cup herb oil (Herb Oil)
1 tablespoon fresh lemon juice
5 ounces clams
1 (10 ounce) neo-neapolitan pizza dough (Neo-Neapolitan Pizza Dough)
flour, for dusting the peel
1/2 cup shredded mozzarella cheese (full fat)
1/2 cup pecorino romano cheese or 1/2 cup asiago cheese
1/8 teaspoon salt, to taste
1/8 teaspoon fresh ground black pepper, to taste
2 tablespoons chopped fresh flat leaf parsley

Steps:

  • Place a baking stone on the middle shelf of the oven and preheat on the highest setting for at least 1 hour.
  • While oven is preheating, in a bowl, combine the Herb Oil and lemon juice; stir in the clam meat to coat; cover and marinated in the refrigerator for 1 hour.
  • Shape the dough ball to a diameter of about 12 inches; the dough should be very thin, about 1/8 inch thick, nearly translucent and slightly thicker toward the edge.
  • Transfer the dough to a pizza peel that has been dusted with flour.
  • In another bowl, stir the 2 cheeses together; distribute the cheeses over the dough; spread the clam and oil mixture evenly over the cheese.
  • Sprinkle the surface evenly with salt and pepper.
  • Carefully slide pizza from the peel onto the baking stone; bake about 10-12 minutes.
  • When done, the crust should be crisp and slightly charred on the edge and the cheese should be fully melted and just beginning to caramelize to a rich gold.
  • The underside of the crust should be brown and crisp, not white and soft.
  • Remove the finished pizza from the oven and immediately sprinkle the parsley over the top.
  • Let pizza cool for about 3 minutes before slicing and serving.
  • *You can make other seafood pizzas in the same way-use raw squid, shirmp, bay scallops (whole) or sea scallops (cut in half), or any combination.

This came originally from Bon Appetite in the late eighties. I've probably made it a hundred times since, and it's evolved a bit from the original recipe which I no longer have. I included my bread machine whole wheat crust recipe here, but I suspect it will work with any crust. The recipe as written makes two pizzas - You can half it to do only one, but it is so good leftover that you might as well make two. It's really good leftover - it seems to get better in the fridge. I eat it the next morning for breakfast - just microwave 1 slice uncovered on high for one minute. Yum!

4 cups all-purpose flour
1 cup whole wheat flour
2 cups water, minus 2 tablespoons
4 tablespoons olive oil
2 teaspoons salt
2 teaspoons sugar
4 teaspoons instant yeast
4 tablespoons parmesan cheese, grated
8 tablespoons olive oil
4 garlic cloves, minced
1/2 teaspoon cayenne pepper
2 cups mozzarella cheese, shredded
4 tablespoons parmesan cheese, grated
4 tablespoons parsley, dried
2 teaspoons thyme
10 medium plum tomatoes, thin sliced
2 (6 1/2 ounce) cans canned chopped clams, drained well

Steps:

  • Mix the water, flours, olive oil, salt, sugar, yeast, and Parmesan in a bread machine and start the dough cycle.
  • When the machine starts running, add a bit of water or flour as needed to get a nice texture to the dough. Not too dry or too wet.
  • Place pizza stone in oven and heat as high as it will go. The stone needs to get real hot and it will take half an hour or so to get it heated through.
  • Combine 8 Tablespoons olive oil, the garlic and red pepper in small bowl. Refrigerate.
  • Combine mozzarella, parsley, Parmesan and thyme in plastic bag. Shake it around to combine and set aside.
  • Thin slice the tomatoes and save in a plastic bag. Set aside.
  • When the bread machine announces that the dough is done, reduce the oven heat to 350 and leave the oven door open for a while to allow it to quickly cool down to 350.
  • Coat work surface and roller with flour, remove dough from machine, split in half and roll out a 14 inch diameter crust. Place the other half of the dough in a plastic bag and set aside.
  • Poke the crust all over with a fork and brush with olive oil. Place pizza on the hot stone and bake at 350 until top is set and bottom starts to brown - about 10 minutes.
  • Brush crust with half of the reserved oil/garlic mixture. Cover evenly with 1 can of drained clams, half of the tomato slices, and half of the reserved cheese mixture in that order.
  • Return to oven and bake until cheese is melted and crust is brown on the bottom - around 10 minutes.
  • Cut into eight slices and serve. Repeat from step 8 using the rest of the ingredients to make another pizza.

This pizza remains dairy-free until it hits the table, where you can decide to add Parmesan--or not. Not "fishy" tasting, plus the clams were delicious and not rubbery! My 9 year-old loves this pizza! For the sake of brevity, I'm not including a crust recipe--just use your favorite one. We enjoyed it with a New York Style crust. Adapted from a recipe in American Pie by Peter Reinhart.
