AWESOME HERB ROAST LEG OF LAMB

Awesome Herb Roast Leg of Lamb image

An herb rub makes this leg of lamb so good! I always knew it was Easter when my mom made it, and the whole house smells awesome when it's cooking. It's the only recipe I specifically asked for when I moved out on my own.

Time 1h20m

HERB-ROASTED LAMB

Herb-Roasted Lamb image

Celebrate with Ina Garten's easy Herb-Roasted Lamb recipe from Barefoot Contessa on Food Network. Fresh rosemary gives it flavor, while potatoes make it a meal.

Provided by Ina Garten

Categories     main-dish

Time 2h20m

Yield 10 servings

Number Of Ingredients 8

12 large unpeeled garlic cloves, divided
1 tablespoon chopped fresh rosemary leaves
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter, melted
1 (6-pound) boneless leg of lamb, trimmed and tied
4 to 5 pounds small unpeeled potatoes (16 to 20 potatoes)
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 450 degrees F. Place the oven rack in the lower third of the oven so the lamb will sit in the middle of the oven.
  • Peel 6 of the cloves of garlic and place them in the bowl of a food processor fitted with the steel blade. Add the rosemary, 1 tablespoon salt, 1 teaspoon pepper, and butter. Process until the garlic and rosemary are finely minced. Thoroughly coat the top and sides of the lamb with the rosemary mixture. Allow to sit at room temperature for 30 minutes to 1 hour.
  • Toss the potatoes and remaining unpeeled garlic in a bowl with the olive oil and sprinkle with salt. Place in the bottom of a large roasting pan. Place the lamb on top of the potatoes. Roast for 20 minutes. Turn the heat down to 350 degrees F and roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees F for medium-rare. Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Slice and serve with the potatoes.

HERB CHEESE BONELESS LEG OF LAMB

Herb Cheese Boneless Leg of Lamb image

I have made this dish a few times and it is just wonderful. It is best prepared on a grill, and this is the way the instructions are given, but it can easily be prepared in the oven as well. The cut that I buy for this has the netting, but you can use butcher's twine if the netting is not available to keep the roast together while it cooks.

Provided by Morrison

Categories     Lamb/Sheep

Time 1h50m

Yield 8-10 serving(s)

Number Of Ingredients 5

4 -5 lbs boneless leg of lamb
1 cup herb cheese spread (pre-packaged, or one that you make from cream cheese and butter)
2 cups cabernet sauvignon wine
thyme
garlic, minced (to taste)

Steps:

  • Fillet the leg of lamb on a cutting board and pound it flat with a meat mallet or rolling pin.
  • Spread the cheese mixture on the inside of the meat (fat goes on the outside) with a rubber spatula or large spoon.
  • Roll roast back into pill shape, place back into netting or tie together with twine.
  • Place in a large serving dish, or gallon size zipper bag and pour in wine. Let marinate for 1-2 hours in refrigerator, turning at least once.
  • Remove roast from fridge and allow to come to room temperature, sprinkle with thyme and rub with minced garlic.
  • Heat grill to 325°F.
  • When grill is hot place the roast directly over the fire and sear for 4-5 minutes per side.
  • After searing, set the roast to the side of the fire (indirect heat) for the remainder of the cooking time.
  • Cook 25 min/lb for medium doneness at 300-325°F.
  • Remove from heat and allow to rest for 10 minutes before carving.

BONELESS LEG OF LAMB WITH MINT, PINE NUT & CURRANT STUFFING

Boneless Leg of Lamb With Mint, Pine Nut & Currant Stuffing image

In spring, lamb is one of my favorite foods. Mint always works well with lamb and this simple stuffing really brings out the flavour. The roast goes into the oven seam side up in order to encourage cruncy bits of stuffing to form along the seam as the lamb roast. The herb stuffing infuses the meat with flavour and helps keep it moist. Prep time does not reflect letting the currants marinate in the port overnight.

Provided by MarieRynr

Categories     Lamb/Sheep

Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 9

1/2 cup dried currant
1/2 cup tawny port (or as needed)
1 cup toasted coarse breadcrumbs
1/2 cup lightly packed coarsely chopped of fresh mint
1/2 cup lightly packed coarsely chopped fresh flat leaf parsley
3 tablespoons extra virgin olive oil
1/2 cup pine nuts, toasted to a light golden brown
2 large eggs, lightly beaten (the eggs won't be cooked hotter than 130*F, so if salmonella is a concern, use pasteurized eggs, or)
3 -4 lbs rolled and tied boneless leg of lamb

Steps:

  • In a small bowl, soak the currants in enough Port to cover for at least 2 hours and up to overnight.
  • When ready to roast the lamb, drain the currants; discard the Port.
  • Position a rack in the lower middle of the oven and heat the oven to 400*F.
  • In a large bowl, mic the bread crumbs, mint, parsley, olive oil, pine nuts, and currants. Season to taste with salt and pepper, add the beaten eggs and mix well.
  • Until the lamb and unroll it. Lay the meat flat and pat dry with paper towels. Trim off any excess fat and, if necessary, butterfly portions of the lamb to make it roughly rectangular and evenly thick. Sprinkle the inside of the lamb with salt and pepper and pat the stuffing evenly over the meat.
  • Roll the lamb tightly, from one short end to the other, and tie the roast snugly at 1 inch intervals with kitchen twine.
  • Sprinkle the outside of the lamb with more salt and pepper and then set it, seam side up on a rack in a small roasting pan. Gather any stuffing that has escaped and poke it back in at the ends of the lamb roll. Roast until an instant read thermometer inserted into a thick part of the roast reads 125*F to 130*F for medium rare (60 to 70 minuttes). Let rest for 15 minutes, then carve into medium thin slices.

HERB STUFFED LEG OF LAMB

Herb Stuffed Leg of Lamb image

Provided by Food Network

Categories     main-dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 5

1 (6 pound) boneless leg of lamb, with shank
Salt and freshly ground black pepper
3 tablespoons pureed garlic
1/2 cup assorted chopped fresh herbs, such as parsley, oregano, basil, thyme, chives, mint
2 tablespoons olive oil

Steps:

  • Ask a butcher to remove all bones, except shank, and to clean meat of all sinew and excess fat inside and out. Butterfly leg for stuffing.
  • Preheat oven to 375 degrees F. Lay lamb flat on counter. Using a sharp knife, make several slits, about 2 inches long by 1/4 inch deep, so seasonings can penetrate meat. Sprinkle generously with salt and pepper. Spread garlic evenly on top, then cover with herbs. Roll meat to enclose stuffing and tie with string at 1 inch intervals, keeping the diameter of the roll the same so that the roast cooks evenly. Shank bone will protrude at one end. Generously season outside with salt and pepper.
  • Heat oil in a large skillet over high heat. Brown lamb on all sides. Roast on rack in roasting pan 30 to 40 minutes for medium rare, 1 hour for well done. (A meat thermometer inserted in center should read 160 or 165 degrees F or a thinbladed knife inserted to the center for 20 seconds should feel lukewarm on your lips.) Let sit at room temperature about 10 minutes before carving, so juices can run to center. Remove strings and slice meat thinly across the roll. Serve with Roasted Eggplant and Myzithra Cheese Puree. To reheat carved lamb, place slices on a sheet pan, cover with a wet towel, and bake 5 minutes at 375 degrees F. Use leftover meat and puree for pita sandwiches.

  • Preheat oven to 220°C (425°F). Use the tip of a sharp knife to make 1/4-in. (5 mm) deep cuts every 1 in. (2.5 cm) or so, all over the fat layer on the lamb leg. This allows herbs and spices to penetrate into the meat.
  • In bowl, stir together the garlic, rosemary, oil, pepper and salt. Rub half the mixture over all sides of the lamb. Place on rack fitted into roasting pan. Add potatoes to leftover garlic mixture in bowl, turn to coat. Set potatoes around lamb. Pour rest of garlic mixture onto the lamb.
  • Roast lamb 15 min. at 220°C (425°F) then reduce heat to 190°C (375°F) and continue roasting 1 hr. Check internal temperature in thickest part of roast. Depending on preferred doneness, check for 54°C (130°F) for medium-rare, 60°C (140°F) for medium, 71°C (160°F) for medium-well. If greater doneness is desired, roast additional 15 to 20 min. between temperature checks. A 1.25 kg/2.5 lb roast will require approx. 1 hr. 20 min. to reach medium-rare. Tent lamb with foil 15 min. before slicing.
  • Meanwhile, make pesto by combining mint, parsley, cheese, pine nuts, zest, juice and salt in small food processor. Pulse to a coarse paste. Transfer to bowl, stir in olive oil. The pesto can also be made by hand by finely chopping herbs and mixing with the other ingredients. Makes 1/2 cup (125 mL). Lightly brush roast with pesto before slicing. Serve the remaining pesto as a condiment. Transfer roast and potatoes to platter. Garnish with herbs, fruits and veggies, as desired.

Butterfly the thicker portions of the lamb to make it evenly thick. Lightly pound the lamb with a meat tenderizer to even it out. If some parts of your lamb are smaller than others, carefully rearrange to make a rectangular shape. My leg of lamb was not d-boned very well, so I had to build the shape on my own. If yours is the same remember to start rolling with the deconstructed part.
