3 cups uncooked penne pasta (9 ounces)
1 pound uncooked Italian sausage links
1/2 cup Progresso™ beef flavored broth (from 32-ounce carton)
1 medium yellow summer squash, cut lengthwise in half, then cut crosswise into 1/4-inch slices
2 cups grape or cherry tomatoes, cut lengthwise in half
1/4 cup chopped fresh or 1 tablespoon dried basil leaves
6 green onions, cut into 1/2-inch pieces (1/2 cup)
2 tablespoons olive or vegetable oil

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, cut sausage crosswise into 1/4-inch slices. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add sausage; stir-fry 4 to 6 minutes or until brown. Stir in broth. Cover and cook over medium heat 5 minutes.
  • Stir in squash, tomatoes and 2 tablespoons of the basil. Heat to boiling; reduce heat. Cover and simmer 5 minutes, stirring occasionally. Stir in onions. Simmer uncovered 1 minute.
  • Toss pasta, oil and remaining 2 tablespoons basil. Divide pasta among bowls. Top with sausage mixture.

1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

2 garlic cloves, minced
1 1/2 pounds thin asparagus, trimmed and cut into 1-inch pieces

1 cup shelled fresh peas
1/2 cup low-sodium chicken stock
1 cup grated Parmesan
2 tablespoons chopped fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.
  • In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes.   • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add sausage meat and cook, stirring to break up large chunks, until meat is browned and just cooked through, 5 to 7 minutes. Transfer meat to a bowl using a slotted spoon and add bell pepper and garlic to fat in skillet. Reduce heat to moderate and cook, stirring occasionally, until pepper is just tender and garlic is golden, 5 to 6 minutes.

Italian Sausage Pasta with Cherry Tomatoes (30 Minute Dinner!) image

This 30 minute weeknight meal comes together so easy! Italian Sausage Pasta with Cherry tomatoes is perfect for using up those summer vegetables coming from your garden! Swap the veggies for whatever you have on hand. It's absolutely delicious; who can say no to sausage and pasta?

water and 1/2 tablespoon salt (for pasta)
3 cups pasta (about 9 ounces, any kind (I used cavatappi))
2 tablespoons olive oil
1 pound Italian sausage links
1-2 teaspoons oil
1 cup good quality beef broth
2 medium yellow summer squash
2 cup cherry tomatoes
1/2 teaspoon salt
1/4 cup fresh basil (chopped and divided)
1/2 cup green onions (chopped)
more fresh basil (to garnish)

Steps:

  • Bring a medium pot of water to boil. Add 1/2 tablespoon salt (it should taste like the ocean). When it boils, add the pasta and stir occasionally until al dente (check the pasta package instructions).
  • When the pasta is al dente, drain and return to the pot. Add 2 tablespoons olive oil, stir, and set aside (keep warm by covering with lid).
  • Meanwhile, prepare the sausage by slicing is crosswise into large coin shapes.* This is kind of a pain because the sausage kind of wants to spill out of the casing and mush about. But I really like the crispy edges that form when you use the slicing method. I've found that slicing in one confident motion with a sharp non-serrated chef's knife works best for me.
  • Heat a large 12 inch skillet over medium high heat. When the pan is hot, add 1 or 2 teaspoons oil, just enough to coat the bottom of the pan. Add the sausage coins one at a time, placing them in the pan with space in between each one. This will make sure that each one gets seared and brown, instead of steaming (which is what would happen if you dumped it all in together.)
  • Sear the sausage for 3-4 minutes, until the bottoms are nice and brown, then use tongs to flip each one.
  • Sear the other sides for 2-3 minutes until brown.
  • Add 1 cup beef broth (or 1 cup water + 1 teaspoon Better Than Beef Base), stir it all together, and cover. Turn the heat to medium and set a timer for 5 minutes.
  • Chop up the veggies. Slice the yellow squash lengthwise (the long way) and then dice into half rounds. Slice half of the cherry tomatoes in half, or all of them (I prefer to leave some whole). Chop 1/4 cup of basil. Add half of the basil to the pasta that you set aside earlier.
  • Stir the squash, tomatoes, and remaining basil into the pan with the sausage. Turn the heat to high and bring to a boil. Once it boils, cover and reduce the heat to medium. Set a timer for 5 minutes.
  • Remove the lid and add 1/2 cup chopped green onions. Turn off the heat.
  • Serve in shallow pasta bowls, spooned over the top of the pasta with plenty of broth.
  • Garnish with more fresh basil. This is also great with fresh Parmesan on top, but it's not necessary.

2 1/2 cups chicken stock
Generous pinch saffron threads
Kosher salt
1 head cauliflower, cored
1 tablespoon EVOO
1 pound bulk Italian sweet sausage
3 to 4 cloves garlic, finely chopped
1 yellow onion, finely chopped
1/2 cup dry white wine
1 bay leaf
1 thin cinnamon stick (2 to 3 inches long)
One 28-to-32 ounce can whole San Marzano tomatoes (look for the DOP label)
Freshly ground pepper
1 pound penne rigate
1 cup heavy cream
8 ounces mild provolone, caciocavallo or young Asiago cheese, shredded
1/2 cup grated Parmigiano-Reggiano
1/2 cup grated pecorino
Chopped fresh flat-leaf parsley, for serving

Steps:

  • Preheat the oven to 400 degrees F. Heat the stock with the saffron in a small saucepan over medium heat.
  • Meanwhile, bring 1 1/2 cups water to a boil in a pot and season with salt. Add the cauliflower, cover and steam until tender, about 12 minutes. Drain and break into florets.
  • Heat the EVOO in a Dutch oven over medium-high heat. Add the sausage and crumble it into very small pieces with a potato masher or wooden spoon. Add the garlic and onions and cook for 5 minutes. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Add the bay leaf, cinnamon stick, tomatoes and saffron stock and stir to break up the tomatoes. Simmer until thickened, about 30 minutes. Discard the bay leaf and cinnamon stick and season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook to just shy of al dente, about 7 minutes. Reserve a ladle of the starchy cooking liquid and drain the pasta.
  • Return the pasta to the pot. Add the heavy cream, cauliflower, sausage sauce and
  • a little of the reserved cooking liquid and stir to combine. Transfer the mixture to a casserole dish and top with the cheeses and parsley. Bake until the top is browned, 35 to 40 minutes. Divide among plates.

This is an easy recipe with tons of flavor, rigatoni pasta can be used in place of penne. If you are using spicy sausages then omit the chili flakes. Try to use only high-quality canned tomato products, it will really make a huge difference in your sauce, no no-name brands for this! With this sauce (and any tomato-based sauce) it needs some time to cook, the longer you cook the sauce uncovered the thicker and richer it will be, you can even start it in the morning turn it off then continue cooking later, cook for even 2 hours!

  • In a large skillet heat oil over medium heat.
  • Add in the sausage meat; cook breaking up with a spoon until the meat is lightly browned (about 12 minutes) using a slotted spoon remove to a bowl and leave some fat in the skillet.
  • Add in the onion, chili flakes, basil and oregano; saute for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
  • Add in tomato paste and stir 1 minute.
  • Add in the wine and simmer for 6-8 minutes over medium-low heat, or until it almost evaporates.
  • Add in the cooked sausage meat along with the crushed and chopped drained tomatoes.
  • Add in 1 tablespoon salt.

1 tablespoon olive oil
1 medium onion, chopped
4 Italian hot sausages, casings removed
1/4 teaspoon dried red pepper flakes
1/3 cup dry red wine
1 28-ounce can crushed tomatoes with added puree
2 teaspoons dried marjoram, crumbled
8 ounces penne pasta
Salt and freshly ground pepper
Freshly grated Parmesan or Romano cheese

Steps:

  • Heat oil in heavy large saucepan over medium heat. Add onion and cook until tender, about 8 minutes. Add sausage and cook until no longer pink, breaking up with fork, about 6 minutes. Stir in pepper flakes. Add wine and boil until absorbed. Mix in crushed tomatoes. Bring to boil, reduce heat and simmer 25 minutes. Stir 2 tablespoons marjoram into sauce.
  • Cook penne in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return penne to pot. Add half of sauce and stir to coat. Season with salt and pepper. Transfer to large bowl. Serve, passing Parmesan separately. (Freeze remaining sauce up to 2 months in covered container.)

3/4 cup drained oil-packed sun-dried tomatoes, sliced (2 to 4 tablespoons of oil reserved)
1 lb sweet Italian chicken sausage, casings removed
2 package s (8 oz. each) frozen artichoke hearts, thawed
2 large garlic cloves, chopped
1 3/4 cups reduced-sodium chicken broth
1/2 cup dry white wine
Salt
12 ounces penne pasta
1/2 cup freshly shredded parmesan cheese, plus more for serving
1/3 cup copped fresh basil
1/4 cup chopped fresh flat-leaf parsley
8 oz fresh mozzarella, drained and cubed
Freshly ground black pepper

Steps:

  • Heat the oil reserved from the tomatoes in a large, heavy frying pan or skillet over medium-high heat. Add sausage and cook until brown, breaking the meat into bite-size pieces. Transfer sausage to a large bowl.
  • Add the artichokes and garlic to the same skillet and saute over medium heat until the garlic is tender, about 2 minutes. Add the broth, wine and sun-dried tomatoes. Boil over medium-high heat, stirring occasionally, until the sauce reduces slightly, about 8 minutes.
  • Meanwhile, bring a large pot of salted water to boil. Add the penne to cook. Drain pasta. Add pasta to the large bowl with the sausage. Add 1/2 cup of the parmesan cheese, basil and parsley to the artichoke mixture in the skillet, stir for about 2 minutes. Pour artichoke mixture into large bowl; toss until the sauce is almost absorbed by the pasta. Stir in the mozzarella. Season to taste with salt and pepper.
