Steps:
- Bring a large pot of lightly salted water to a boil, add pasta and cook to package directions.
- Meanwhile, cook sausage in a large nonstick skillet over medium heat for 5 minutes, or until browned, breaking into small chunks. Remove to plate.
- Add oil, peppers and onion to the skillet. Cook, stirring occasionally for 5 minutes, or until lightly browned. Push vegetables aside, add garlic and saute 1 minute. Add sausage, tomatoes, salt and pepper; stir to combine. Bring to a boil, reduce heat, cover and simmer for 10 minutes.
- Drain pasta, transfer to a large serving bowl and add sauce. Toss to mix and coat.

Steps:
- Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Heat oil in a large skillet over medium heat, and cook and stir sausage, onion, green bell pepper, red bell pepper, orange bell pepper, and mushrooms until vegetables are tender, about 10 minutes.
- Stir diced tomatoes, tomato sauce, minced garlic, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes into vegetable mixture; bring to a simmer and cook, stirring occasionally, about 10 minutes.
- Drain pasta and spoon onto plates and top with sauce mixture.

Steps:
- Saute onion and peppers in oil.
- Add garlic, tomatoes, sugar, salt and pepper.
- Reduce heat and simmer.
- Add sausage and simmer covered about 20 minutes.
- While sausage and tomatoes are simmering, cook penne according to package directions.
- Add basil, parsley and penne to sausage mix and toss to combine.
SAUSAGE & PEPPERS PENNE ALFREDO
Penne pasta served with hot Italian sausage, bell peppers, and onions in a creamy Alfredo sauce. This is a recipe that I created on the fly. Ingredient measurements are "best guess" because I pretty much just threw everything in to taste. Feel free to adjust to your taste and enjoy!

Steps:
- Slice sausage into 3/4 inch slices.
- Cut onions and peppers in to thin strips (julienne slices).
- Mince 3 to 4 cloves of garlic or measure out 1 Tbsp of pre-minced garlic.
- Chop basil into small strips (about 1 inch in length).
- Prepare pasta based on packaged instructions.
- Fry sausage in oil over medium-high heat until all pieces have turned brown.
- Add peppers and onions, season with salt and pepper to taste, and fry with sausage for 2 minutes.
- Add garlic and fry for 1 more minute.
- Dust the mixture with 2 Tbsp of flour (this step is optional, and will create a thicker sauce) and stir for about 1 1/2 to 2 minutes.
- Add chicken broth and stir mixture for about 30 seconds.
- Turn heat down to medium-low and add cream. Stir to combine.
- Slowly bring cream to a boil and let simmer for 5 minutes over medium-low heat, stirring occasionally.
- Add Parmesan cheese and stir until cheese is melted into mixture.
- Garnish with fresh basil and serve over pasta.

- Sauté the onion, bell peppers, and fennel until the vegetables turn golden, 8-10 minutes.
- Add the garlic and sauté 1-2 minutes longer.

- Add the sausage; simmer covered, stirring occasionally, until the flavors are blended, about 20 minutes.

- Cook penne in large saucepan to desired doneness.
- Add basil; toss to coat. Cover to keep warm.
- Meanwhile, heat large nonstick skillet over medium heat until hot.
- If using sausage ring, cut into 2 inch pieces.
- Add sausage, bell peppers and onion to pan.

CREAMY SAUSAGE PENNE
This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

- Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
- After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
- In a large skillet, heat olive oil over medium-high heat.
- Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
- Cook until sausage meat is no longer pink (about 5 minutes or so).
- Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
- Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
- Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
- Taste; add more salt and/or pepper if you wish.
- Sprinkle chopped herbs over top and serve.
