PENNE WITH ROASTED PEPPER MARINARA SAUCE

Penne With Roasted Pepper Marinara Sauce image

This is a nice recipe for when you are in the mood for marinara, yet want something a little different. This does make a lot of sauce - we like that, but if you don't you might want to add more pasta. When I made this I used whole wheat rontini instead of penne, and I increased the red pepper flakes. I serve this sauce tossed with Penne Pasta, because you won't want to miss a drop. The penne's tubular shape and groves grabs the sauce to give you more with each bite. This freezes so well, make a "gourmet" meal anytime!

Reduce to a bubbling simmer over low heat, stirring occasionally, for 30 minutes. Stir to mix the oil that rises to the top, then discard the basil sprigs and garlic.
