A simple Southern classic! Okra is dredged in seasoned cornmeal, then fried until golden.

Steps:
- In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.
- Heat oil in a large skillet over medium-high heat. Dredge okra in the cornmeal mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on paper towels.

OVEN FRIED OKRA
A delicious Faux Fried favorite with all age groups.

Steps:
- Preheat an oven to 375 degrees F (190 degrees C). Place a baking rack on top of a baking sheet or sheet pan.
- Cook the frozen okra in the microwave using your microwave's frozen vegetable setting, or on high for 8 minutes. Drain and cool on paper towels, about 5 to 10 minutes. Spray generously with butter flavored cooking spray. Add the cornmeal, panko bread crumbs, garlic salt, and pepper to a plastic food storage bag. Place the okra into the bag and shake to coat the okra with the cornmeal mixture.
- Remove the okra from the bag and spread it on the prepared baking rack. Bake in the preheated oven until golden brown and crispy, about 15 to 20 minutes.

- Cut okra into 1/4-inch-thick slices; place in shallow dish. Sprinkle lightly with water.
- Combine all remaining ingredients except oil in shallow dish. Add okra, in small batches; toss until evenly coated with crumb mixture.
- Heat 1-1/2 inches of oil to 375ºF in large deep skillet on medium heat. Add okra, in batches; cook 3 to 4 min. or until golden brown, turning after 2 min. Remove from oil with slotted spoon; drain on paper towels. Serve warm.

FRIED OKRA WITH CRISPY PARMESAN COATING
This fried okra is very crispy. The Parmesan coating adds a nice flavor to the okra. Since there is no flour or cornmeal used in the recipe, it's perfect for a low carb diet .like Somersizing.

Steps:
- Clean and slice okra, and sprinkle with salt and pepper.
- Beat egg in a shallow bowl.
- Place grated Parmesan cheese in a shallow bowl.
- Pour okra into the beaten egg.
- Stir until every okra slice is wet from the egg.
- Remove with a slotted spoon, and place into the bowl with the Parmesan cheese.
- Stir until every okra slice is covered with cheese.
- Place oil in heavy pan to at least 2" in depth.
- (I use a deep fryer.) Heat until a single slice of coated okra dropped into the oil starts sizzling.
- Add the okra to the hot oil.
- Depending on the size of the pan, you may have to do this in two batches.
- Remove when the okra slices are golden brown and crispy.
- Drain on paper towels, and serve immediately.
SIMPLE FRIED OKRA
With only a few ingredients and about 10 minutes, you can enjoy light, crispy okra anytime. I prefer okra with a light flour coating versus corn meal. I want to taste the okra -- not the breading! Fried okra, a country staple, is best served hot alongside thick-sliced summer tomatoes.

Steps:
- Slightly beat egg with fork in medium-sized bowl.
- Pour okra into bowl and mix until coated well with egg.
- Add flour and mix well.
- Preheat skillet on medium-high until hot then add enough oil to coat bottom of pan.
- Shake off excess flour from okra then carefully add to skillet. Flip over okra every few minutes, watching carefully so it does not burn on the bottom.
- When golden brown, drain okra on paper towels. Immediately sprinkle with salt and freshly-ground pepper.
- Enjoy!
CORNMEAL FRIED OKRA
My grandma used to make us fried okra a lot when I was a child and I loved it. This version comes from the "Soul and Spice" cookbook. My family likes to eat the fried okra with ranch dressing or ketchup but it is equally good on its own.

- Combine cornmeal, paprika, salt, and pepper.
- Coat orka rings in the cornmeal mixture.
- Heat oil in a large skillet over meduim high heat.
- Fry coated okra rings 5-7 minutes until golden brown and tender. Be sure to turn the orka during cooking to ensure even doneness.
- Drain on paper towels and serve warm.

FRIED OKRA
I am posting this in tribute to the hours I spent as a child picking okra in my grandparent's garden. I never knew fried okra was a vegetable growing up, I thought it was a special treat only available in the summertime. Frozen okra was thrown into gumbo, but when it was fresh, we usually fried it. (Unless Daddy requested "stewed" okra.....his favorite, not ours!) I can't believe this version isn't on food.com, but I couldn't find it. Here's to a wonderful childhood!

Steps:
- Heat the oil in a large, heavy-bottomed skillet (may use sauce pan, but you'll have to cook in more batches) to 350 degrees F.
- In a plastic bag, combine cornmeal, flour, salt, black pepper, garlic powder, and cayenne pepper. Shake it up to mix it up thoroughly.
- Place cut up okra in a bowl, and pour the buttermilk over it. Toss it so that each piece is coated with buttermilk.
- Add the okra to the bag with the cornmeal mixture in it, and shake it well to coat.
- Carefully add the okra to the hot oil, and cook until golden brown. You may need to cook it in batches, depending on the size of your skillet or pan.
- Remove from oil, and drain on paper towels. Test a piece to check and see if you need to add more salt. Do so if needed. Serve immediately and enjoy!
