½ cup melted butter
1 cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with the olive oil.
  • Brush potato wedges with butter, and roll in bread crumbs. Place wedges on prepared baking sheet.
  • Bake in preheated oven for 20 minutes. Remove from oven and turn wedges; cook for 10 to 15 minutes, or until tender.

2 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1/2 teaspoon salt, optional
1/4 teaspoon pepper

Steps:

  • Cut potatoes lengthwise into wedges; place in a greased 13-in. x 9-in. baking pan. Drizzle with oil. Sprinkle with onion, garlic, rosemary, salt if desired and pepper; stir to coat. Bake, uncovered, at 400° for 45-50 minutes or until tender, turning once.

I was scrambling to make something to go with an "interestingly" spiced roast that my mum made, and came up with this combination of spices for potatoes You don't really need to cut the potatoes into wedges or any particlar shape, I never do. just make sure the lumps are around the same size

5 medium sized potatoes, peeled
2 tablespoons extra virgin olive oil
1 teaspoon ground black pepper
1 teaspoon seasoning salt
1 tablespoon Mrs. Dash garlic and herb seasoning
3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees F.
  • Dice, cube or chop the peeled potatoes into whatever shape you feel like making them.
  • Rinse then thoroughly in cold water, drain well and transfer to a large bowl.
  • Add oil and toss the potatoes around so they are evenly coated.
  • Add all of the spices and the cheese and toss so they are evenly coated.
  • Place on a baking pan in one layer (preferably lined) and bake for around 30-40 minutes, depending on person preference of potato texture.
  • Suggestions! It's really really handy to line the pan before you bake them, or else you will have a sticky baked on mess on your pans that takes an awful lot of elbow grease to get rid of. You could add lemon juice to the potatoes to give them an extra fresh taste.

2 large russet potatoes
4 tablespoons (1/2 stick) butter
1 teaspoon chopped fresh parsley
1 clove garlic, finely minced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper (or use a nonstick baking sheet).
  • Cut the potatoes into 8 wedges each and arrange on the prepared baking sheet. Melt the butter over low heat, add the parsley and garlic and give the mixture a quick whisk. Brush the butter mixture over all sides of the potato wedges. Reserve the remaining butter mixture. Season all sides of the potato wedges with salt and pepper.
  • Bake until the potatoes are golden brown and easily pricked with a fork, 40 to 50 minutes. About halfway through the cooking time, be sure to flip the potatoes over.
  • Drizzle the remaining butter mixture over the cooked potatoes and serve.

- small red potatoes (not new baby ones)
1/8 cup(s) sugar
- butter spray
- montreal or quebec chicken seasoning
- california style garlic salt / parsley
- coarse black pepper

Steps:

  • AT LEAST 1 1/2 HOURS BEFORE COOKING DO THIS: WASH POTATOES & LEAVE SKINS ON. QUARTER THEM LENGTHWISE. PLACE IN COLD WATER & POUR ABOUT 1/8 CUP SUGAR ON TOP OF THEM IN THE WATER, DO NOT DISTURB FOR 1-1 1/2 HOURS.
  • DRAIN THE POTATOES & ALLOW TO DRY A FEW MINUTES WHILE YOU DO STEPS #3 & #4.
  • PREHEAT OVEN TO 400°. I DO THIS IN MY COUNTERTOP OVEN.
  • SPRAY THE FLAT PAN YOU ARE GOING TO USE WITH BUTTER SPRAY.
  • LAY POTATOES ON PAN, SKIN SIDE DOWN ON PAN. SPRAY THE WHITE PART OF POTATOES & SPRINKLE WITH THE 3 SEASONINGS ABOVE. SPRAY AGAIN.
  • NOW TURN WHITE SIDE DOWN TO PAN. SPRAY THE SKIN SIDE OF POTATO & PLACE IN THE MIDDLE OF THE OVEN & BAKE FOR 20 MINUTES.
  • AFTER 20 MINUTES, TURN THE OTHER WHITE SIDE DOWN ON PAN & BAKE FOR 10 MORE MINUTES. BOTH WHITE SIDES SHOULD BE BROWNED & POTATOES DONE.
