Skipping wheat flour doesn't have to mean forgoing decadent baked goods. These rich, nutty brownies are irresistible -- and easy to make. Don't worry about specialty ingredients; these brownies use ordinary pantry items.

6 tablespoons unsalted butter, cut into pieces, plus more for pan
1/3 cup cornstarch (spooned and leveled)
1/4 cup unsweetened cocoa powder
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
12 ounces semisweet chocolate chips
3/4 cup sugar
1 teaspoon pure vanilla extract
3 large eggs
1 cup chopped toasted pecans

Steps:

  • Preheat oven to 350 degrees. Lightly butter an 8-inch square baking pan and line with parchment paper, leaving a 2-inch overhang on all sides. Whisk together cornstarch, cocoa, cinnamon, and salt. In a large microwave-safe bowl, microwave butter and chocolate in 30-second increments, stirring each time, until melted and smooth, about 2 minutes.
  • Stir in sugar and vanilla. Stir in eggs, one at a time, until combined. Add cornstarch mixture and stir vigorously until mixture is smooth and begins to pull away from side of bowl, about 2 minutes. Stir in pecans.
  • Pour batter into pan and smooth top. Bake until a toothpick inserted in center comes out with a few moist crumbs attached, about 35 minutes, rotating pan halfway through. Let cool completely in pan on a wire rack. Using paper overhang, lift cake out of pan and cut into 16 squares.

1/2 cup (1 stick) unsalted butter, plus more for pan
1 cup all-purpose flour, (spooned and leveled)
1/4 teaspoon baking powder
1/8 teaspoon salt
2 ounces unsweetened chocolate, coarsely chopped
1 ounce semisweet chocolate, coarsely chopped
1 cup packed dark-brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup pecans, coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides. Butter paper; set pan aside. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  • Place butter and chocolates in a large heatproof bowl set over (not in) a saucepan of simmering water. Heat until smooth, 2 to 3 minutes, stirring occasionally. Remove from heat, and stir in sugars, eggs, vanilla, flour mixture, and half of pecans. Transfer batter to prepared pan; smooth top. Sprinkle with remaining pecans.
  • Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes. Set pan on a wire rack; let cool completely. Using paper overhang, lift brownie onto a cutting board; cut into 16 squares.

Steps:

  • Heat oven to 350 degrees F. Grease a 13 by 9-inch pan. In medium saucepan over low heat, melt margarine. Add sugar, vanilla and eggs; blend well. Lightly spoon flour into measuring cup; level off. Stir in flour, cocoa and salt; mix well. Add chocolate and pecans. Pour into prepared pan. Bake for 30 to 40 minutes or until set. Cool. 1 tbsp unsalted butter
1 cup pecan halves
½ tsp sea salt
4 ounce unsweetened chocolate, chopped
1 ¼ cup unsalted butter, cut into pieces
1 cup granulated sugar
¾ cup packed light brown sugar
3 large eggs, room temperature
2 tsp vanilla extract
1 cup all-purpose flour
¼ cup Dutch process cocoa powder

Steps:

  • Preheat the oven to 350ºF (180ºC) and grease a 12-square brownie pan or 8-inch square pan.
  • For the salt roasted pecans, melt the butter in a sauté pan over medium heat and add the pecans and salt. Stir and toast the pecans for about 8 minutes, until the pecans have a pleasant nutty aroma (the salt will not dissolve, but adds a nice crunch). Remove the pan from the heat and cool while preparing the brownies.
  • Melt the chocolate and butter in a medium saucepot over medium-low heat, stirring until melted. Remove the pan from the heat and whisk in the sugar and brown sugar right into the pot. Whisk in the eggs one at a time, then whisk in the vanilla. Stir in the flour and cocoa powder until evenly combined.
  • Count out 12 pecan halves and set aside. Roughly chop the remaining pecans and stir them into the brownie batter. Divide the batter into the bar pan, or spread into the 8-inch pan and arrange the reserved pecan halves on top. Bake for about 20 minutes, until the tops of the brownies lose their shine. If baking in an 8- inch pan, bake an additional 5 minutes. Cool the brownies for an hour before removing from the tin (and slicing, if baking in a larger pan).
  • The brownies will keep in an airtight container for up to 5 days, and the brownies actually improve after a day.

Place chocolate in small resealable food-storage plastic bag; cut off small corner of bag. Squeeze to drizzle diagonally over brownies. Refrigerate 10 to 15 minutes or until chocolate is set. To make 24 triangles, cut into 4 rows by 3 rows, then cut each in half diagonally.

  • Preheat the oven to 190C/ Gas 5. Butter a 24cm x 34cm baking tin, 6cm deep, and line with greaseproof paper, extending the paper above the rim.
  • Melt the butter and chocolate in a heatproof bowl set over a pan of barely simmering water. Stir until smooth, then remove the bowl from the pan and set aside to cool slightly.
  • Using an electric mixer, beat the eggs for two minutes, then add the brown sugar and beat until the mixture reaches a ribbon consistency, about 6 minutes. Using a spatula, incorporate into the melted chocolate, but do not overwork. Add the flour and nuts in a steady stream, folding them in with the spatula until evenly mixed; stop mixing at this point.
  • Pour the mixture into the prepared tin and immediately place in the oven.
  • Cook for 20-25 minutes, lowering the oven setting to 180C/ Gas 4 after ten minutes. To test, insert a skewer or knife tip into the centre; it should come out clean and shiny. Set aside to cool in the tin. Once cooled, lift out the brownie, using the lining paper. Cut into squares or smaller pieces.

FUDGE FROSTING:
1-1/2 ounces unsweetened chocolate
2/3 cup sweetened condensed milk
1/4 cup butter
1 large egg yolk, beaten

Steps:

  • Combine flour, brown sugar and nuts in a large bowl; cut in butter until mixture resembles coarse meal. Mix in milk and vanilla with a fork just until blended. Pat onto bottom and up the sides of an 11-in. tart pan; set aside. , For filling, melt chocolate and chips in the top of a double boiler over hot water. Remove from heat and stir in butter.
