CHILI CHEESE DIP

Steps:

• Cook the beef, stirring, in a dry medium skillet over medium-high heat until golden and starting to caramelize, about 5 minutes. Remove with a slotted spoon and pour off any excess liquid. Add the olive oil to the pan.
• Reduce the heat to medium and cook the onions, stirring occasionally, until browned, 5 to 6 minutes. Add the cumin, chili powder and garlic and cook, stirring, until fragrant, about 1 minute. Sprinkle in the flour and cook, stirring, until the flour smells toasty, 1 minute. Pour in the beer and canned tomatoes and chiles, bring to a boil and cook 2 minutes. Gradually add the milk, whisking, and bring to a gentle boil until thickened, about 2 minutes. Add the cheeses and reduce the heat to low. Cook, stirring frequently, until the cheese fully melts, about 3 minutes. Stir in the reserved beef.
• Transfer to a serving dish, garnish with cilantro and serve warm with chips.

CHILI-CHEESE DOG DIP

Steps:

• Place unwrapped block of cream cheese on microwaveable plate; top with remaining ingredients.
• Microwave on HIGH 45 sec. to 1 min. or until cheddar is melted and chili is heated through.

CHILI CHEESE DOG RING DIP

Steps:

• Heat oven to 375°F.
• Unroll, then separate breadsticks. Cut each wiener crosswise into 3 pieces. Place 1 wiener piece at one short end of each breadstick; roll up.
• Stand wrapped wieners around edge of large cast-iron skillet.
• Bake 16 to 18 min. or until bread is golden brown.
• Meanwhile, brown meat with onions in large nonstick skillet on medium heat. Add dry seasonings, flour, water and tomato sauce; mix well. Cook 3 to 5 min. or until slightly thickened. Remove from heat.
• Spoon meat mixture into center of cast-iron skillet; top with cheese. Bake 5 min. or until cheese is melted.

CHILI CHEESE DOG QUESADILLAS

Steps:

• Heat 1 tsp olive oil over medium heat.
• Slice hot dogs into 1/2 inch slivers. Add to skillet and brown on both sides. Remove and set aside.
• Add remaining olive oil to skillet.
• While oil is heating, assemble quesadillas: Place 1-2 tbsp chilli onto one half of each quesadilla. Top with hot dog slivers, tsp ketchup, and 1/3 cup of cheese, and fold.
• Transfer quesadillas to skillet, one at a time. Brown on both sides until cheese is melted.

CHILI DOG DIP (MICROWAVE)

Steps:

• Heat hot dogs in the microwave for 30 seconds. Chop into bite-sized pieces.
• In a 9x9 glass baking dish, spread the package of cream cheese.
• Pour the can of chili over the cream cheese.
• Place hot dog pieces on top of chili.
• Place chopped onions on top of hot dog pieces.
• Sprinkle cheese over top of everything.
• Heat in microwave on high for 5 minutes, or until cheese is melted and dip is heated through.
• Serve with Fritos, tortilla chips, or any other of your favorite dippers!

SUE'S CHILI CHEESE DOG CASSEROLE

Steps:

• Needed:.
• 2 quart shallow casserole dish, sprayed with cooking spray.
• Warm tortillas, and roll hot dogs, burrito style.
• Pour 1 cup of the chili in bottom of casserole, and add the hot dog burritos.
• Pour the rest of the chili over all.
• Top with shredded cheese, and then the crushed Fritos.
• Bake in preheated 400°F oven, for 25-30 minutes.
