NUTTY APPLE-FILLED MUFFINS
The inspiration for these muffins came from a favorite coffee cake. I wanted to put it in a form our four girls could munch while playing. For variety, I'll sometimes substitute prepared blueberry or lemon pie filling for the delectable from-scratch apple filling. -Hollie Gregory, Mt. Vision, New York

Yield 1 dozen jumbo muffins or 2 dozen regular muffins.

Steps:
- In a saucepan, melt butter. Stir in brown sugar, flour, cinnamon and nutmeg until smooth. Add apples; cook over medium-low heat for 10 minutes or until tender, stirring frequently. Remove from heat; stir in nuts. Cool. , In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Beat in vanilla. Combine dry ingredients; add to creamed mixture alternately with sour cream., Spoon 1/4 cupfuls of batter into greased jumbo muffin cups. Spoon apple mixture into the center of each (do not spread). Top with remaining batter. Sprinkle with cinnamon-sugar. Bake at 350° for 25-27 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.

My family loves any dessert that tastes like apple pie, and this one's so easy, the children can help make it. My four grandchildren love helping MawMaw in the kitchen to make treats like this.

- Unroll crescent dough into an ungreased 13-in. x 9-in. baking pan; seal seams and perforations. Bake at 375° for 10 minutes., Combine the walnuts, sugar, cinnamon and nutmeg; sprinkle over crust. Spread with pie filling. , In a small bowl, combine flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Stir in coconut and walnuts. Sprinkle over filling. , Bake at 375° for 18-22 minutes or until golden brown. Cool on a wire rack.

NUTTY APPLE MUFFINS

- In a large bowl, combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Stir into dry ingredients just until moistened. , Fill 18 greased muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack.

VANILLA CRESCENTS
These were my Grandmother's special cookies. Her mother was originally from Iceland, so I believe this is the origin for this particular recipe. We made these at home every Christmas as part of our holiday baking. They melt in your mouth like a shortbread, and have a lovely almond flavour. The dough is easier to work with if chilled as per the instructions. They freeze very well. Don't forget to put on a CD with your favourite Christmas music while making these little beauties.

Steps:
- Combine the cake flour, almonds, and sugar. Mix well.
- Add vanilla, and cut in butter until the mixture resembles coarse oatmeal. Using hands form into a dough.
- Chill covered in the fridge for at least 1/2 hour.
- Remove from fridge and cut off pieces the size of a pecan and roll between palms to the width of a little finger. Don't let the ends taper. Bend into a crescent moon shape and place on baking sheet.
- Bake at 350 for 12 - 15 minutes. Remove from baking sheet onto wire rack.
- While still warm, roll in icing sugar. Chill for 24 hours.

- Combine 3 rolls together and flatten into a 10-inch circle. Repeat 3 more times with other rolls. In a small bowl combine sugar and cinnamon. Sprinkle sugar mixture over each circle and top with nuts and apple. With a sharp knife or pizza cutter, cut each circle into 8 wedges. Roll each wedge up from wide edge and place, pointed side down, on a sprayed baking sheet. Cover with sprayed plastic wrap and let rise 30-45 minutes. Remove wrap and bake at 350°F 10-15 minutes or until lightly browned. Remove from oven and immediately place on cooling rack. For icing combine sugar, milk and extract until smooth. Drizzle over twists and top with finely chopped pecans.

- Separate the crescent roll dough into 8 triangles.
