1 and 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder, sifted
1 and 1/2 teaspoons baking powder
1//4 teaspoon salt
1 stick (4 ounces) unsalted butter, at room temperature
1 cup granulated sugar
2 large eggs, at room temperature
1/2 cup pecans, chopped
1/2 cup mini chocolate chips
1 large egg
1 teaspoon water
1/2 teaspoon granulated sugar
10 ounces semi-sweet chocolate, roughly chopped
1/3 cup pecans, finely chopped

Steps:

  • Preheat oven to 350 degrees (F). Line a large baking sheet with parchment paper; set aside.
  • In a large bowl add the flour, cocoa powder, baking powder, and salt; whisk well to combine and set aside. In a the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the butter and sugar on medium speed until combined; about 1 minute. Add in the eggs, one at a time, beating well after each addition. Reduce the mixer speed to low and gradually add in the flour mixture, mixing until just combined. Add pecans and mini chocolate chips and mix until combined. Be sure not to over mix here!
  • Lightly flour a clean work surface. Scrape the dough out onto the prepared work space (it will be very sticky!) and gather it into a ball. Press the ball into a round, flat disk, then divide the dough in half. Shape each half into a 12-inch log, adding a little bit more flour if needed. Place the logs, 4 inches apart, on prepared baking sheet. Using the palm of your hand, gently press down on the logs and flatten them until they're about 2 inches wide. Brush the top of each log with a little egg wash and sprinkle with sugar. Place the baking sheet in the preheated oven and bake for 25 to 30 minutes, or until the top is firm, shiny, and springs back when lightly touched. Place the baking sheet on a wire rack and cool for 25 minutes. In the meantime, reduce the oven temperature to 250 degrees (F).
  • Once the 25 minutes are up, gently slide a metal spatula under each log to help loosen it from the parchment paper. Transfer the logs to a large cutting board. Using a serrated knife, slice the logs into diagonal 3/4 inch slices. Arrange the slices back on the parchment paper lined baking sheet, placing them cut side down and 1 inch apart. Bake for 25 minutes, or until dry and firm. Transfer the biscotti to a wire rack. Cool completely before dipping in chocolate.
  • In a small bowl combine the egg and water; beat well. Follow instructions above.
  • Place the chopped chocolate in a medium-sized microwave safe bowl. Melt the chocolate in the microwave, on low power, in 15 second increments, stirring after each increment, until completely melted; whisk smooth. If you do not own a microwave, you may do the previous step on the stove top using a double boiler. Once cooled, carefully dip one side of a biscotti into the melted chocolate, allowing excess chocolate to drip back into the bowl before immediately sprinkling it with pecan bits and placing it back on the parchment paper lined baking sheet. Repeat with all biscotti cookies. Once all cookies have been dipped, place the baking sheet in the fridge for 30 to 45 minutes, or until the chocolate has set.

4 1/4 ounces (1 cup, spoon and level) Bob's Red Mill Organic Unbleached All Purpose White Flour
4 1/4 ounces (1 cup, spoon and level) Bob's Red Mill Organic Whole Wheat Flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 ounces (1/4 cup) salted butter, softened
1 7/8 ounces (1/4 cup packed) brown sugar
1 3/4 ounces (1/4 cup) granulated sugar
2 eggs
1 1/2 teaspoons vanilla extract
4 ounces (1 cup) pecans, preferably candied
3 1/2 ounces (1/2 cup) granulated sugar
4 1/8 ounces (1/2 cup) heavy cream
sea salt, for sprinkling

Steps:

  • Preheat oven to 350ºF. Line a 12" x 5 1/2" biscotti pan with parchment (or line a baking sheet with parchment paper).
  • In a bowl, whisk together the all purpose flour, whole wheat flour, baking powder, and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment (or using a bowl and handheld electric mixer), cream together the butter, brown sugar, and granulated sugar until light, wiping down the bowl and beater as needed. Beat in the eggs one at a time until smoothly incorporated, again scraping down bowl/beater as needed. Beat in the vanilla extract.
  • Add the dry ingredients to the wet and mix in on lowest speed until mostly incorporated. Finish folding in by hand just until evenly combined.
  • Transfer batter to the prepared biscotti pan and flatten out to fill pan all the way to corners and edges in an even layer. (It helps to use a wide, flat spatula greased with nonstick spray to do this.) If using a baking tray, flatten dough out into a 12" x 5 1/2" rectangle, making the edges as neat as possible. Scatter chopped pecans over dough and press into top.
  • Bake biscotti in preheated oven for 30 minutes. Remove and let cool for 5 minutes. Slice into 1" wide biscotti with a serrated knife. Transfer to a parchment-lined baking sheet (or spread out on current baking sheet if already using), laying on one of cut sides. Reduce oven temperature to 325ºF and bake another 30 minutes, flipping biscotti to opposite sides halfway through baking time. Biscotti should feel firm in the center but not hard when done; they will continue to get crunchier as they cool. Allow to cool completely before adding caramel drizzle.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 egg
24 pecan halves, toasted
1 bag (10 oz) caramels, unwrapped
2 tablespoons whipping cream
2/3 cup semisweet chocolate chips (4 oz)
1/2 teaspoon coarse sea salt

Steps:

  • Heat oven to 375°F. In food processor, place 2/3 cup pecans. Cover; process until finely ground. In large bowl, beat ground pecans, cookie mix, butter and egg with electric mixer on medium speed until soft dough forms.
  • Shape dough into 24 (1-inch) balls. Place on ungreased cookie sheet. Place 1 pecan half on top of each ball.
  • Bake 10 minutes or until golden. Remove from cookie sheet to cooling rack; cool completely.
  • In medium microwavable bowl, microwave caramels and whipping cream uncovered on High 1 to 2 minutes, stirring every 30 seconds, until caramels are melted and mixture is smooth. In small microwavable bowl, microwave chocolate chips uncovered on High 1 minute, stirring once, until softened and chips can be stirred smooth. Drizzle caramel mixture and melted chocolate over cookies. Sprinkle with salt.

2 cups unbleached all-purpose flour
1 1/2 cups pecan meal (or grind up pecans to a fine meal)
3/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
6 tablespoons butter, soft
2 large eggs (use 1 whole egg and 1 yolk for the dough and save the remaining white for the glaze)
1 tablespoon water
1/2 cup caramel-flavored bits (or butterscotch chips)

Steps:

  • Preheat oven to 350*F.
  • In a medium-sized mixing bowl, whisk together the flour, pecan meal, sugar, baking powder, salt and cinnamon.
  • Add the butter and mix until evenly crumbly. Beat in the egg, egg yolk and water. Add the chips and stir just until they're evenly distributed.
  • Lightly flour a clean work surface. Divide the dough into three portions. Working with one piece at a time, roll the dough into a log about 1 1/4 inches in diameter. Repeat with the remaining dough. Place the logs on a lightly greased or parchment-lined baking sheet and flatten slightly, leaving 2 inches between them.
  • Lightly beat the egg white with 2 teaspoons of water. Brush this glaze over the tops of the logs.
  • Bake for 30 minutes, until they're lightly browned. Remove from the oven, and allow them to cool for 5 minutes. Slice them into 3/4-inch thick slices on the diagonal, place them cut-side down on the baking sheet, and return them back to the oven to bake for 10-15 more minutes, until they're crisp and lightly browned.
  • Allow to cool, then dip an end in melted chocolate, if desired.
  • Yield: about 5 dozen.

1 cup sugar
1 cup light corn syrup
2 cups heavy whipping cream, divided
1 can (14 ounces) sweetened condensed milk
2 cups chopped pecans
1 teaspoon vanilla extract

  • Line a 13-in. x 9-in. pan with foil; grease the foil with butter. Set aside. , In a large heavy saucepan, combine the sugar, corn syrup and 1 cup cream. Bring to a boil over medium heat. Cook and stir until smooth and blended, about 10 minutes. Stir in milk and remaining cream. Bring to a boil over medium-low heat, stirring constantly. I enjoy baking biscotti when the weather starts cooling down because it goes perfect with that afternoon coffee that we all wait for when we start feeling tired by mid day. I used silan (date syrup) to reduce to amount of sugar but keep the sweetness to this delicate afternoon treat. Combined with pecans and orange, you obtain the perfect biscotti!

3 1/2 cups flour
2 teaspoons baking powder
zest from one orange plus 1 tbsp orange juice
3/4 cup sugar
2 tablespoons , silan

Steps:

  • In the bowl of a mixer, combine the eggs with the sugar. Mix on high speed. Add the orange zest, orange juice, silan, oil. Incorporate the flour, baking powder and chopped pecans.
  • Store covered in the fridge for about 30min.
  • Preheat the oven to 325. Form two long logs and bake for 30min. Remove from the oven and let it cool down. Slice the logs thinly and place them face up. Bake for an other 15 to 20min.
