Steps:

  • Preheat the oven to 250 degrees F. Lightly oil a rimmed baking sheet.
  • Whisk the egg white, sugar and Cajun seasoning in a medium bowl until thoroughly blended and slightly foamy. Add the pecans and toss to coat evenly. Spread on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes, until the nuts are fragrant and slightly darker but still a bit moist. They will continue to crisp as they cool.
  • Cool completely on the pan. Nuts will keep in an airtight container for up to 5 days.

cajun dry mix to taste (about 2-4 T)

Steps:

  • Peel and butterfly shrimp. Set out 3 bowls. First bowl - whisk 2 eggs and 1 oz water. Second bowl - flour. Third bowl - crushed pecans and cajun dry mix. Dip shrimp in egg then flour. Return to egg and then coat generously with pecan mixture. Arrange on baking sheet with tails up. Bake at 375 for 25-30 minutes or until golden brown. Serve hot with garlic mayonnaise.

Steps:

  • For the shrimp: Add the lemon juice, olive oil, Cajun spice and 1/2 teaspoon of salt to a medium bowl and whisk to combine. Add the shrimp and toss to coat them in the spice mixture. Allow the shrimp to marinate while you make the remoulade. Do not marinate shrimp longer than 20 minutes.
  • For the remoulade: Add the mayonnaise, sour cream, Cajun spice, ketchup, mustard, parsley, lemon zest and 1/4 teaspoon salt to a bowl and whisk to combine. Refrigerate until ready to serve.
  • Preheat a grill pan over medium-high heat. When the pan is hot, add the shrimp in an even layer. Allow the shrimp to cook for 2 minutes, then flip them and cook until they are just opaque and the tails are pink, about another minute. Remove the shrimp to a serving platter, garnish with parsley and lemon wedges and serve with remoulade.

Steps:

  • Season with half of the Cajun seasoning and then stir in the rice. Cook for about 1 to 2 minutes, stirring often. Add the chicken stock and bring to a simmer.
  • Cover with a lid, place in the oven and cook until the stock has absorbed and the rice is tender, about 18 to 20 minutes. Carefully remove from the oven and remove the lid.
  • Place the shrimp on top along with the remaining Cajun seasoning, and replace the lid. Return to the oven and cook for another 5 to 8 minutes or until the shrimp is fully cooked. 1 teaspoon kosher salt
fresh ground black pepper, to taste
6 jumbo shrimp, peeled and deveined
2 cups ground pecans
lemon juice or lime juice, to pass at the table if desired

Steps:

  • Preheat oven to 350°.
  • Combine egg whites, honey, salt and pepper in a small bowl.
  • Split shrimp down the center, cutting almost but not quite completely through, opening the two halves to resemble a butterfly(thus the term butterflying).

1 medium green pepper, chopped
1 medium red pepper, chopped
3 stalks celery
1 large red onion, chopped

1/2 cup red wine
1/2 cup water
1 1/2 tablespoons Old Bay Seasoning
1/4 teaspoon cayenne pepper
1/2 teaspoon salt

1 1/2 lbs medium shrimp, peeled,deveined and rinsed
chopped green onion (to garnish)

Steps:

  • In a large pot heat olive oil.

500g extra-large raw king prawns (the biggest raw king prawns in the supermarket are often in the frozen section), defrost thoroughly, peel if needed, then pat dry with kitchen paper - if buying from a fishmonger, ask them to peel and de-vein them for you
1 tbsp hot & herby Cajun spice mix (see below)
284ml tub buttermilk
100g polenta
100g cornflour
1 tsp mustard powder
4 tbsp mayonnaise
1 tbsp hot sauce
2 tbsp paprika
4 tsp garlic powder
4 tsp cayenne pepper
2 tsp ground black pepper
2 tsp onion powder
1 tsp dried thyme
1 tsp dried oregano

Steps:

  • Stir all the ingredients for the mayo together, adding lime juice to taste. Set aside.
  • Coat the prawns in ½ tbsp Cajun spice mix. Decant the buttermilk into a bowl and give it a good stir to loosen slightly. In another bowl, mix the polenta, cornflour, mustard powder and remaining Cajun spice mix together.
  • Fill a deep frying pan 2 inches full with oil. Heat to 180C on a cooking thermometer, or until a piece of bread browns in 20 seconds when it is dropped in the oil. Dip each seasoned prawn briefly in the buttermilk then coat in the flour mixture. Fry the prawns for 1-2 mins on each side until golden brown and curled. Drain on kitchen paper, then serve with the mayo and lime wedges for squeezing over.

I have not tried this recipe, but am posting here for safe keeping and in the hopes someone on Zaar will try it and enjoy it. This was in a recent issue of Woman's Day magazine. My plan is to use red bell pepper and maybe add some red pepper flakes for some kick. I listed the chicken parts separately, but ideally the chicken should just equal 1 1/4 lb.   • Lightly coar a large geavy skilled with nonstick cooking spray and set over medium heat. Add oil and flour and stir consistantly until roux turns deep mahogany brown, about 5 minutes. Add onions, green pepper, celery and bacon; saute until vegetables are soft, about 5 minutes longer.
  • Stir in tomatoes in puree, broth, rice and Old Bay seasoning; bring to a boil over high heat. Reduce heat to medium-low, cover and simmer until most of liquid is absorbed and rice is almost tender, about 20 minutes.
  • Fold in shrimp and cook just until shrimp are pink and firm, about 5 minutes.
